4food Menu Descriptions Opening Menu Item Vg – Vegan – Spicy N – Contains Nuts GF – Gluten Free **FEATURE Patties All of our meat patties are produced using fresh, all natural and humanely raised animals and are fed a predominantly grass diet. All meat patties are ground using only whole mussels and no fillers. Fish patties are made using only wild, sustainably sourced fish caught in its season. Our egg patties are made using organic whole eggs. The vegetable patty is comprised of fresh cut vegetables, whole grains and herbs. None of our patties are ever frozen and all are produced in house on a daily basis. **Beef Patty Freshly ground beef from Northeast Family Farms cows is seasoned with kosher salt and freshly ground black pepper. We grind fresh chuck which is naturally approximately 25% fat. This produces a very beefy flavored patty due to the flavor profile of chuck which is slightly enhanced with the addition of salt and pepper. The fat content provides a moist and juicy texture while not appearing overly greasy. Lamb Patty Freshly ground lamb from Northeast Family Farms is seasoned with kosher salt, freshly ground black pepper, fresh garlic, toasted cumin, coriander seeds, cilantro leaves and spiced with a touch of harissa (a Moroccan chili paste). The lamb patty is not spicy-hot per se but has a “spiced” flavor profile reminiscent of North African or Middle Eastern cuisine. Pork Patty Freshly ground pork from Northeast Family Farms is seasoned with kosher salt, freshly ground black pepper, toasted fennel seeds, minced garlic and freshly chopped parsley, rosemary and sage. -

Polish Cuisine Vegetable salad ––– SaSaSałatkaSa łatka jarzynowa Ingredients: 5 boiled carrots 2 boiled parsley-roots 5 boiled potatoes (optional) 1 small boiled celery-root (about 15dag) 4 hard boiled eggs 5 pickled cucumbers 2 apples 1 little can of corn (optional) 1 can of green peas 1 mayonnaise (300 - 400g) 1 tablespoon of mustard salt, pepper, parsley, dill Preparation: Rinse vegetables and cook without peeling (each separately); cool and peel them. Hard boil eggs, cool and peel them. Peel apples and remove the core. Cut vegetables, pickles, apples, and eggs into small squares. Chop green onions and strain peas. Add salt, pepper, and stir in mayonnaise and mustard. Chop parsley and dill, and sprinkle over salad. Set aside for one hour. Decorate with mayonnaise, green peas, and carrots. The secret of good Polish vegetable salad is to have all the ingredients diced very fine, no larger than the size of a green pea. Polish Herring Salad ––– Sałatka Śledziowa Ingredients: 1 jar marinated herring (with onions) 2 apples, core removed, peeled and diced 2 onions, chopped 4 cucumbers in brine, chopped 1/2 cup mayonnaise 1/2 cup sour cream 2 tablespoons mustard Preparation: Take out marinated herrings from a jar and drain. Discard jar with onions and spices inside. Dice herrings and place in a salad bowl. Add apples, onions, and pickles. Toss gently and fold in the Creamy Mustard Sauce (fork-blend mayonnaise with sour cream and mustard). Chill for 2 hours before serving. Carp in aspic ––– Karp w galarecie Ingredients: a bunch soup vegetables (a carrot, parsley, celery, leek) 1kg carp 2 onions 5 tablespoons gelatin 1 glass white wine 4 grains allspice ½ lemon salt, sugar, pepper Preparation: Wash and peel vegetables. -

It is all about combining the well-proven old and the promising new. That is why our cuisine includes seasonal and regionalproducts that simply taste great. Should you have questions regarding allergens, we will be happy to help and prepare a dish according to your wishes. I grew up living in Hattersheim. After my education as a hotel specialist, I gained lots of gastronomic experience in many places all over the world. After having fallen in love with Apfelwein and all that comes along, I started looking for my own gastronomic business. TO PETER SOMMER TR AVELS Writing this in autumn 2020, it is hard to know quite where to begin. I usually review the season just gone, the new tours that we ran, the preparatory recces we made, the new tours we are unveiling for the next year, the feedback we have received and our exciting plans for the future. However, as you well know, this year has been unlike any other in our collective memory. Our exciting plans for 2020 were thrown into disarray, just like many of yours. We were so disappointed that so many of you were unable to travel with us in 2020. Our greatest pleasure is to share the destinations we have grown to love so deeply with you our wonderful guests. I had the pleasure and privilege of speaking with many of you personally during the 2020 season. I was warmed and touched by your support, your understanding, your patience, and your generosity. All of us here at PST are extremely grateful and heartened by your enthusiasm and eagerness to travel with us when it becomes possible. PST is a small, flexible, and dynamic company. We have weathered countless downturns during the many years we have been operating. Elin, my wife, and I have always reinvested in the business with long term goals and are very used to surviving all manner of curve balls, although COVID-19 is certainly the biggest we have yet faced.
