All meat patties are ground using only whole mussels and no fillers. Fish patties are made using only wild, sustainably sourced fish caught in its season. Our egg patties are made using organic whole eggs. The vegetable patty is comprised of fresh cut vegetables, whole grains and herbs. None of our patties are ever frozen and all are produced in house on a daily basis. **Beef Patty Freshly ground beef from Northeast Family Farms cows is seasoned with kosher salt and freshly ground black pepper. We grind fresh chuck which is naturally approximately 25% fat. This produces a very beefy flavored patty due to the flavor profile of chuck which is slightly enhanced with the addition of salt and pepper. The fat content provides a moist and juicy texture while not appearing overly greasy. Lamb Patty Freshly ground lamb from Northeast Family Farms is seasoned with kosher salt, freshly ground black pepper, fresh garlic, toasted cumin, coriander seeds, cilantro leaves and spiced with a touch of harissa (a Moroccan chili paste). Roasted Cauliflower with Sauce Vierge Serves 4 to 6 as a side dish Talk about a transformation. Starting point: pale, crumbly, bland raw cauliflower (my apologies to any grocery-store salad bar designers). Process: toss with olive oil and roast for 20 minutes. End result: golden, moist-chewy, sweet cauliflower that you never dreamed was possible. Roasting is the best method for this vegetable, and drizzling with a sprightly green sauce just makes things better. 2 heads cauliflower (1-1/4 lb/570 g each), cored and cut into 1-1/2-in/4-cm florets 1/3 cup/75 ml extra-virgin olive oil 1 tbsp chopped fresh thyme or lemon thyme Kosher salt and freshly ground black pepper 1/3 to 1/2 cup/75 to 120 ml Sauce Vierge (see below) Heat the oven to 425°F/220°C/gas 7. Don’t worry if when you cut the cauliflower into florets, you end up with a few smaller ones. They will create delicious crispy bits. In a large bowl, toss the cauliflower with the olive oil and thyme and season generously with salt and pepper. Spread the cauliflower on one or two large rimmed baking sheets. Roast until the florets are tender, collapsed, and golden brown on their cut faces and around the edges, at least 20 minutes and possibly longer. The darker the cauliflower the better it will taste (short of burnt, of course). Pile the cauliflower into a warmed serving bowl and drizzle generously with the sauce.

    Peruvian-Style Chicken with Tangy Green Sauce, Roasted Potatoes & Salad This recipe is a variation of one I found on Epicurious.com. I have made some changes to the timeline and I have added in the potatoes. After all potatoes were first domesticated in Peru so it seems crazy not to enjoy them with this dish. Preparation should only take about 40 minutes. Cook time should be about 45-50 minutes. Marinate time is 5-6 hours. This recipe is long but it is not complicated. You are making a complete dinner here. INGREDIENTS For the chicken: 3 garlic cloves, finely chopped 1 tablespoon ground cumin 1 tablespoon olive oil 1 tablespoon paprika 1/2 teaspoon freshly ground black pepper 1/2 teaspoon dried oregano 1 1/2 teaspoons kosher salt 2 lemons 1 (4-4 1/2-pound) whole chicken 2 medium potatoes cut in wedges. (each potato should make 10-12 wedges) 4 -6 pats of butter olive oil for roasting For the green sauce: 1 cup (packed) cilantro leaves with tender stems 1–2 medium jalapeños, coarsely chopped 1 garlic clove, finely chopped 1 tablespoon extra-virgin olive oil 2 1/2 teaspoons fresh lime juice 1/4 teaspoon kosher salt 1/3 cup mayonnaise For the salad: 1 English hothouse or 2 Persian cucumbers, cubed 1 firm-ripe avocado, cubed 3 scallions, thinly sliced 1 tablespoon plus 1 teaspoon fresh lime juice 1 tablespoon extra-virgin olive oil 3/4 teaspoon kosher salt 1/2 cup cilantro leaves with tender stems, coarsely chopped, plus more for serving PREPARATION Begin the chicken preparation at least 6 hours prior to roasting: Mix garlic, cumin, oil, paprika, pepper, oregano, salt, and finely grated zest from 1 lemon in a medium bowl.

    GRILLED OCTOPUS & GREEN SAUCE BY CHEF HOLLY SMITH OF CAFÉ JUANITA Octopus Green Sauce 1 three-pound octopus ½ bunch scallions (green tops only, (fresh is possible) save bottoms for other use) 1 cork from a bottle of wine 1 bunch Italian flat parsley 2 cloves of garlic 4 tablespoons salted capers, 1 bay leaf (rinsed well) ½ cup ancholade Juice from ½ a lemon (anchovy & garlic marinade) Olive oil, Kosher salt (enough to make sauce smooth) Salt (to taste) Pinch of cayenne pepper For the Octopus Fill a large pot with water and add cork, garlic, bay leaves, and octopus. Cover and boil lightly for 2-hours and 45-minutes. Check for tenderness--if necessary continue cooking an additional 15-minutes. Drain and cool. Trim off arms and pull off slimy film— discard head. Lightly marinade in ancholade (can be purchased at local ethnic or specialty stores) and season with Kosher salt. Grill over BBQ or broiler until warmed through and a slight crunchy crust forms (a couple of minutes, depending upon the flame). For the Green Sauce In a small food processor cut scallions and parsley until well mixed. Add capers and process until all are finely ground. Stir in lemon juice and salt. Whisk in olive oil and adjust seasoning to taste. On The Plate Stack Octopus in center of plate. Drizzle the green sauce in a generous portion over the octopus. Enjoy. We have sauces for you that are meat and dairy free, delicious on plant- based and other dishes. All kinds of menu items are improved by the addition of a sauce, but plant-based specialties—especially vegan ones—pose a special challenge. Fortunately, there are many kinds of sauce that don’t depend upon a meat stock, or dairy products like butter and cream, to make a delicious finish for food. Many are uncooked, making them not only easy but also fresh-tasting, and their versatility values both seasonal ingredients and creativity. And the best news is that these plant-based sauces are flavorful enough to work for all kinds of recipes, including ones that include chicken, beef or pork, or fish. Vinaigrette – While vinaigrettes are most frequently associated with salads, they also work beautifully with items like grilled or roasted vegetables, specialties such as cauliflower steak, plant proteins such as tofu or seitan, and of course simply prepared lean meats, including fish or chicken. They can also be used as a marinade. In fact, the bright balance of acid in a properly prepared vinaigrette can lift the flavor profile of a variety of foods. Adding a sweet or spicy element—such as balsamic vinegar, agave, honey (for vegetarian rather than vegan items), Sichuan peppercorns or chiles, or a branded hot sauce—will build complexity. And the temperature contrast between an item like hot seared Brussels sprouts and a finishing splash of cool vinaigrette adds further interest.
