Preparation Instructions 1 Prepare side of choice (hash browns, fresh fruit or pancakes). 2 Spray grill with non-stick aerosol.

3 Place 2oz diced chicken breast, 1oz chopped bacon and 1oz tomatoes on grill and heat for approximately 2 minutes.

4 While omelet ingredients are heating, prepare liquid eggs for omelet. 5 Spray non-stick pan coating on grill. Using a 2oz ladle, ladle liquid eggs onto grill. Eggs should form a 12" oblong circle. 6 Cook eggs until slightly firm but still moist, approximately 30 seconds. Sprinkle grilled ingredients throughout omelet and then sprinkle Cheddar Jack cheese over grilled ingredients. Reserve some grilled ingredients for "topping" 7 omelet. Using a 6L x 3W cook's spatula and looking at the omelet from the front of the grill, fold in the top side of omelet towards the middle. Repeat this procedure for 8 the bottom side of omelet eggs. Using your 6L x 3W cook's spatula and dough cutter and looking at the omelet from the front of the grill, fold in the right side of omelet toward the left. You will 9 gently roll omelet over 3-4 times until it forms a 6L x 3W rolled omelet. The size of your cook's spatula. Remove omelet from grill and place @ 2 - 6 o'clock position diagonally on the platter. Using a 1oz ladle, drizzle 2oz hollandaise crosswise over the omelet. 10 Omelet should be 75% covered with hollandaise. Sprinkle "topping" over the omelet as shown in photo. 11 Slice avocado quarter, fan-out, and place atop omelet as shown in photo. 12 Place hash browns @ 12 - 8 o'clock position on the platter. 13 Place biscuit @ 9 o'clock position on the platter next to the hash browns. If pancakes are requested, place omelet on a 9" round plate and shingle 3 pancakes on another 9" round plate. Guest does not receive biscuit when pancakes 14 are requested. Preparation Instructions 1 Prepare side of choice (hash browns or fresh fruit). 2 Prepare breakfast meats; bacon strips and Canadian bacon. Cut bacon strip in half crosswise. 3 While bacon and Canadian bacon are cooking, spray non stick pan coating on 260F degree grill. 4 Spray egg grill with non-stick spray and scramble liquid eggs on grill. Add 1oz cheddar cheese to the eggs.

5 Remove biscuits from warmer, split biscuit horizontally in half and place bottom half of biscuits @ 2 and 6 o'clock position on the platter.

6 Place in order, one slice of Canadian bacon, 2 half strips of bacon, and one cheddar scrambled egg on each bottom biscuit half. 7 Place one top half of biscuit on each scrambled cheddar eggs. 8 Ladle 3oz country gravy over each biscuit . 9 Top gravy with 1/2oz cheddar cheese and 1/2 tsp chopped chives. 10 Place hash browns or fresh seasonal fruit @ the 3 o'clock position of the platter as shown in photo.

11 SERVER: Place steak knife under biscuit sandwich as shown in photo.

12 If pancakes are requested, place biscuit sandwich on a 9" round plate and shingle 3 pancakes on another 9" round plate.

13 Seasonal Soup 6oz FL Includes 1 pkg Saltine crackers Preparation Instructions Place garlic toast slices on grill. Cook until lightly golden brown. Approximately 1 minute. Turn garlic toast slices over and continue to cook until lightly golden brown. 1 Approximately 1 minute.

2 Put 1/2 oz of cheddar jack cheese on each grilled garlic toast.

3 Place ham slices on grill, cook for 30 seconds on each side.

4 Remove ham slices from grill and place on top of cheese on one slice of garlic toast.

5 Place second slice of garlic toast over ham. Cheese side touching ham. Allow cheese to melt and bind sandwich. Approximately 1 minute.

6 Remove grilled ham & from grill and place onto cutting board. Using a serrated edge knife, cut sandwich in half.

7 Place sandwich @ 3-6 o'clock position on the platter as shown in photo.

Preparation Instructions 1 Prepare side of choice (hash browns or fresh fruit).

2 Place bacon on grill and cook for approximately 3-4 minutes per side. Bacon is done when fat has reduced by 50% and bacon strip is bendable.

3 Using 1oz ladle, place 1oz oil on grill. Spread oil with your 6" x 3" cook's spatula. 4 Drop a bread slice into French toast batter. Quickly turn bread over to coat both sides of bread. 5 Place bread slice on pre-oiled grill and repeat with remaining bread slice. Cook until bread slices are 75% golden brown, approximately 2-1/2 minutes. Turn bread slices over and continue to cook until surface is 75% golden 6 brown. 7 Spray egg grill with non-stick spray, prepare eggs over hard or as requested by Guest. Crack eggs directly on grill.

8 Spray grill with non-stick spray and place ham slices on grill and cook for 30 seconds per side. Using dough cutter, cut bacon slices in half crosswise and place on one French Toast slice. Top bacon with ham slices. Top ham slices with over hard 9 eggs and sprinkle with 1oz cheddar cheese. 10 Top cheddar cheese with French Toast slice.

11 Remove French Toast sandwich from grill and place @ 2 - 6 o'clock diagonally on the platter as shown in photo.

12 Place hash browns or side of fresh fruit @ 9 o'clock position on platter as shown in photo.

13 SERVER: Pour 2oz pancake syrup into 4oz and place next to French Toast sandwich as shown in photo.

14 SERVER: Place steak knife under French Toast sandwich as shown in photo.

Critical Sensitivities Storage / Holding Procedures

1 Both sides of slices should be 75% golden brown. 1 French Toast Batter is held at 41F or below.
