COOKING is one big ADVENTURE Gingerbread Men INGREDIENTS 350 g plain flour 1 tsp bicarbonate of soda 2 tsp ground ginger 100 g butter 175 g light muscovado sugar 4 tbsp golden syrup 1 large egg For the decoration 1/2 cup icing sugars, smarties; METHOD Pre-heat the oven to 190C / 170C fan. Line 3 baking sheets with greaseproof paper. Measure the flour, and add it to a large mixing bowl.Weigh the butter then chop it up into a few pieces before adding it to the flour. Using your fingertips, rub in the butter until the mixture resembles fine breadcrumbs. Measure the sugar then stir it into the flour mixture with the bicarbonate of soda and ginger. Add the golden syrup.Crack the egg into a separate bowl then add it to the flour. Mix everything together until you have a smooth dough.The recipe makes quite a lot so, if you need to, divide the dough in half then roll out one half on to a lightly floured work surface until its about 5mm thick. Cut out your ginger bread men using a cutter or use any other shapes you have to hand. Place them on your baking tray.Gather up any scraps and roll out again. Repeat with the remaining dough.Bake in the oven for 10-12 minutes until they become a slightly darker shade. If your shapes are smaller, check them after 7-8 minutes. Cool slightly then lift on to a wire rack to cool.You can enjoy the ginger bread biscuits as they are or add some icing decorations. y Cupcake Christmas Tree INGREDIENTS 1 x batch quick chocolate cupcakes 1 x batch buttercream icing Green food colouring 2 tbsp cocoa powder Smarties (to decorate) Method 1. Make cupcakes and icing and keep about 3 tbsp of the buttercream separate and colour the remaining icing green. Ice 10 cupcakes with the green buttercream then decorate nine of these with smarties, keeping one green cupcake aside. 2. Mix a little cocoa powder into the remaining buttercream or until desired chocolate colour is achieved then ice the remaining two cupcakes before decorating with brown Smarties. 3. For the star on top; you can either ice a star- shape onto your remaining green cupcake, or top with a star-shaped cookie as we have. Top this with a little green icing and one pretty red Smartie. 4. Arrange the cupcakes into a tree shape then finish with the two brown cupcakes and you're done! y Marshmallow Snowmen INGREDIENTS 18 white marshmallows 250g ready-to-roll white fondant icing 18 strawberry laces 250g icing made from royal icing sugar 6 Pontefract cakes, black writing icing, 3 round black Liquorice Allsorts, Halved 6 orange Tic Tacs. 18 mini chocolate beans. 24 mini white marshmallows. mini candy canes roughly crushed sugar cube. Equipment6 lolly or cake pop sticks Method STEP 1 = Take one cake pop stick and thread on a marshmallow, narrow end on first. Thread on a second marshmallow, wide end on first so the the two wide ends meet in the middle. Thread a third marshmallow on sideways so the narrow round end makes the snowman's face. STEP 2 - Knead the white fondant icing and divide into 6. Shape each one into a rough mound and stick the snowmen into these bases. STEP 3 - Take three strawberry laces and twist together. Tie around a snowman's neck and then trim off the excess with scissors. Repeat for the other snowmen. STEP 4 - Using a little royal icing stick a Pontefract cake on each head. Using a little black writing icing, stick a Liquorice Allsort on top of each Pontefract cake. STEP 5 - Pipe on two eyes using black writing icing. Using royal icing, stick a Tic Tac on each face for a carrot nose. Stick mini chocolate beans on the bodies as buttons. STEP 6 - Using royal icing, stick four mini marshmallows on each snowman to represent arms. Stick a candy cane or pretzel stick to the end of one of each of the snowmen's arms, attaching the bottom end to the icing mound. STEP 7 - Take a little royal icing and thin with a few drops of water. Brush or dab on the base and sprinkle over the crushed sugar cubes. Leave to set.
