Pangkep, 10 Oktober 2013 Yang Menyatakan ( Firman ) iii ABSTRAK Ikan Ekor Kuning (Caesionidae) adalah Ikan laut yang hidup di perairan Indo-Pasifik. Ikan Ekor Kuning (Caesionidae) lebih memilih tinggal perairan hangat di wilayah Indo-Pasifik tropis. Tidak ada anggota keluarga telah dicatat untuk memperpanjang ke perairan subtropis, tidak pula spesies hadir di Atlantik atau Karibia. Direktorat Jenderal Pengolahan dan Pemasaran Hasil Perikanan, Kementerian Kelautan dan Perikanan memperkenalkan dan menerapkan Good Manufacturing Practices (GMP) atau cara produksi yang baik dan Standar Nasional Indonesia (SNI) pengolahan fillet ikan ekor kuning kepada para pengolah, termasuk yang ada di Perusahaan PT. Usaha Centraljaya Sakti. Saat ini, beberapa pengolah yang sebelumnya menerapkan GMP dan SNI pengolahan fillet ikan ekor kuning sering menerapkannya. Tujuan kajian ini adalah untuk menganalisis penerapan GMP dan SNI fillet ikan ekor kuning dan untuk melihat kondisi terbaru dari penerapan GMP dan SNI di perusahaan pengolahan fillet yang dilanjutkan. Pengolahan dan analisis data menggunakan metode survey dan magang. Responden penelitian ini adalah perusahaan PT. Usaha Centraljaya Sakti pengolahan fillet ikan ekor kuning di Makassar yang terbagi atas alur pengolahan fillet ekor kuning yang dilanjutkan dengan penerapan GMP dan SNI dan. Faktor-faktor yang mempengaruhi kelangsungan penerapan GMP dan SNI di perusahaan PT. Usaha Centraljaya Sakti yaitu pengolahan fillet ikan ekor kuning. Mengenai proses penanganan pembekuan ikan ekor kuning dalam bentuk utuh beku mulai dari penerapan GMP dan SNI melalui proses yaitu penerimaan bahan baku, penyortiran, penimbangan, pencucian, pemfilletan, cabut duri, trimming (penghilang duri dan perapian), penimbangan II, penyusunan dalam pan, Diangkut ke ruang ABF (-400C), Pengemasan, dan Diangkut ke ruang cold storage (-250C). Dibawah Bimbingan SYAMSUAR dan NURLAELI FATTAH Tujuan penelitian ini adalah untuk menganalisis Penerapan Gmp Pada Proses Penanganan Fillet Ikan Ekor Kuning Di Pt. Usaha Centraljaya Sakti. Ikan Ekor Kuning (Caesionidae) adalah Ikan laut yang hidup di perairan Indo-Pasifik. Ikan ini disebut fusilier, suli, sulih, suliri, sunin. Warna umumnya biru, kuning pada bagian belakangnya dan perak. Jenis ini dikenal sebagai perenang cepat dan termasuk ikan diurnal. Ikan ini sering ditemukan di luar karang (tubir karang). Makanannya adalah zooplankton. Proses pemfilletan ikan kakap mulai dari penerimaan bahan baku hingga penyimpanan beku dilakukan dengan baik dan benar. hal ini dapat diketahui mulai dari pengontrolan suhu, rendemen, higieni personil dan organoleptik. Rendemen yang dihasilkan sebesar 43% untuk bentuk skin on sedangkan bentuk skin less dihasilkan sebesar 38%. Penerapan GMP di Perusahaan PT. Usaha Centraljaya Sakti hasil analisis pada tingkat penerapan kelayakan dasar pengolah di daerah penelitian secara keseluruhan untuk pengolah besar antara 43% dan di pengolah kecil berkisar antara 38% dengan pemenuhan pada penerapan GMP. Dengan demikian pengolah ikan asin kering harus dapat menerapkan GMP untuk meningkatkan mutu produksi ikan ekor kuning dan jaminan keamanan pangan. Dengan menggunaka metode penerapan GMP yang dikeluarkan oleh perusahaan PT. Usaha Centraljaya Sakti menunjukkan bahwa kondisi persyaratan kelayakan dasar di Perusahaan tersebut mendapat hasil yang cukup baik. Pada aspek kelayakan dasar atau GMP tersebut harus diperbaiki dan disempurnakan terlebih dahulu oleh Perusahaan PT. Usaha Centraljaya Sakti, sebelum perusahaan yang bersangkutan akan menerapkan system GMP secara penuh sesuai dengan persyaratan pada kelayakan dasar yang ditetapkan dalam SNI 01.4852-1998, serta untuk mencapai fondasi persyaratan kelayakan dasar yang lebih baik. v KATA PENGANTAR Syukur alhamdulillah, merupakan satu kata yang sangat pantas penulis ucakan kepada Allah STW, yang karena bimbingannyalah maka penulis bisa menyelesaikan sebuah karya tulis sosiologi berjudul “Analisis Penerapan GMP Pada Proses Fillet Ikan Ekor Kuning Di PT. This paper presents a fish inventory of the Jordanian Gulf of Aqaba. Fish sampling was conducted by means of different fishing gears, monitoring of local fish market and visual census technique. A total of 507 fish species belonging to 109 families with an average of 4.7 species per family; 18 Chondrichthyes and 489 Ostichthyes. The largest families are as follows (number of species in parentheses): Lab- ridae (51), Pomacentridae (29), Serranidae (25), Apogonidae and Blen- niidae (24, each), Gobiidae (21), Carangidae (17) and Syngnathidae (16). Collectively these eight families comprise 40.8% of the fish fau- na. The great majority are from benthic habitat (82.8%) and the remaining are pelagic fish. About 30.6% of the fish species feed on in- vertebrates and fish while 24.8% feed on invertebrates only. The en- demic species present 12.8% of the recorded species in the Gulf of Aqaba, and this is slightly less than the percentage of endemic species in the Red Sea and Gulf of Aden, 13.7%. On the Jordanian part of the Gulf of Aqaba seventy six fish species are reported for the first time. Out of them Gymnothorax monochrous, Myripristis xanthacra, Cory- thoichthys haematopterus, Syngnathus macrophthalmus, Istiblennius flaviumbrinus, Enneapterygius destai and Grammatorycnus bilineatus species are first confirmed report for the first time in the entire Gulf.

It now faces overfishing, habitat degradation, and anthropogenic induced climate-change. Marine Protected Areas (MPAs) became a powerful management tool to protect vulnerable species and ecosystems, re-establish their balance, and enhance marine populations. For this, they need to be well designed and managed. There are 15 designated MPAs in the Red Sea but their level of enforcement is unclear. To design an MPA it is necessary to know if it will protect species of interest by considering their movement needs. In this thesis I aim at understanding fish movement in the Red Sea, specifically home range (HR) to inform MPA size designation. With not much empirical data available on HR for Red Sea fish, I used a Machine Learning (ML) classification model, trained with empirical literature HR measurements with Maximum Total Length (L Max), Aspect Ratio (AR) of the caudal fin, and Trophic Level as predictor variables.

The symbioses comprised Diadema urchins and their hosts, Actiniaria spp. and their hosts, contacts of cleaner fi sh (Labroides dimidiatus and Larabicus quadrilineatus) with their clients, goatfi sh (Parupeneus spp.) and their fi sh follower, and goldspotted goatfi sh (Parupeneus cyclostoma) and bird wrasse (Gomphosus caeruleus) as alternate followers. With means of SCUBA 32 dives of about 60 minutes in reef habitats and 12 in eelgrass/pebble environments were performed in 2012 and 2014. The numbers of symbioses and the number of the participating partners were counted. The observations were quantitatively analyzed with the aim to elaborate differences between the results from the reefs from differ- ent depth and between reefs and the eelgrass environment. Anemones and Diadema were more abundant in the eelgrass habitat whereas cleanerfi sh and their clients were abundant in the reefs. Bird wrasses were absent in eelgrass habitats whereas burrowing goatfi sh were equally abundant in reefs as well as in eelgrass habitats. Comparing the values from the reefs of different depths 70 % of the results were identical but in the case of reefs against eelgrass only 28 % were identical.

In Saudi Arabian waters of the central Red Sea, widespread and heavy fishing pressure has been ongoing for decades. To evaluate this influence, we surveyed the assemblage of offshore reef fishes in both this region as well as those of remote and largely unfished southern Sudan. At comparable latitudes, of similar oceanographic influence, and hosting the same array of species, the offshore reefs of southern Sudan provided an ideal location for comparison. We found that top predators (jacks, large snappers, groupers, and others) dominated the reef fish community biomass in Sudan’s deep south region, resulting in an inverted (top-heavy) biomass pyramid. In contrast, the Red Sea reefs of central Saudi Arabia exhibited the typical bottom-heavy pyramid and show evidence for trophic cascades in the form of mesopredator release. Biomass values from Sudan’s deep south are quite similar to those previously reported in the remote and uninhabited Northwest Hawaiian Islands, northern Line Islands, Pitcairn Islands, and other remote Pacific islands and atolls.

The fish collection originally contained types of 88 nominal Klunzinger species; types of 13 of them were problably lost during "World War II. At present, the SMNS collection contains types of 75 nominal Klunzinger species, i.e. a total of 30 holotype and 147 syntype specimens. 3 syntypes of a small Bleeker collection (Engraulididae, Exocoetidae) recently acquired are additionally presented in the catalogue.
