4100g caster sugar, plus a little extra 4100g butter, plus extra for greasing 4100g dark chocolate, chopped 43 large eggs, separated 4100g ground almonds 44 ripe pears, peeled, halved and core removed with a teaspoon 42tbsp apricot glaze or sieved apricot jam 4Icing sugar, to dust

1 Heat the oven to 180C/Gas 4. Grease a 23cm deep fluted flan tin and line the base with baking paper. Spoon in a little caster sugar to coat the inside of the tin, then tip out the excess. 2 Melt the butter and chocolate together in a bowl over a pan of hot water. Set aside to cool. 3 Using an electric stand mixer, whisk together the egg yolks and sugar until the mixture is thick and creamy and leaves a trail. 4 Fold the melted chocolate mixture and almonds into the whisked egg yolk mixture. 5 In a separate bowl, and using a clean whisk, whisk the egg whites until stif. Fold 2tbsp into the chocolate mixture to loosen it. Add the remaining whisked egg white and lightly fold in. 6 Pour the mixture into the flan tin, arrange the pear halves on the top and bake for 45 mins until set in the centre. As she got older, and I watched her in shows and competitions, I felt like the proudest mum in the room. But seeing her back up on stage, just a few months ago, her face adorned with glitter, made my heart swell in a way I could have never imagined. Steadying my voice, I explained that while everyone dies, it wasn’t her time yet and together we’d fight it. I sounded so certain, so positive, but deep down, I was terrified. But, in May 2017, when Lily was invited to audition at the Scottish Ballet, I had to tell her she wouldn’t be able to go – she’d be having chemotherapy that day.
