friendshipbreadkitchen.com THE BASICS Amish Friendship Bread Starter If you haven’t received a bag of Amish Friendship Bread starter, this is the recipe for making your own.

INGREDIENTS

1 (0.25 ounce) package active dry

¼ cup warm water (110° F/45° C)

Let stand 10 minutes. 1 cup milk In a 2-quart glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly with a whisk or fork. KITCHEN NOTES Slowly stir in 1 cup milk and dissolved yeast mixture. The starter should be left at room temperature. Drape Cover loosely and let stand at room temperature until bubbly. Consider this Day 1 of the 10-day cycle. Stir or loosely with a dish towel or plastic wrap. Do not use mix the starter daily. On Day 6, add 1 cup flour, 1 cup sugar, 1 cup milk and mix well. On Day 10, add 1½ cup metal utensils or bowls. If using a sealed storage bag, flour, 1½ cup sugar, 1½ cup milk and mix well. Divide into 1 cup portions, placing each portion in a gallon- be sure to let the air out if the bag gets too puffy. sized Ziploc bag. Bake with one and give the others away. INGREDIENTS

1 cup Amish Friendship Bread Starter

3 eggs

1 cup oil

½ cup milk

1 cup sugar

½ teaspoon vanilla

2 teaspoons cinnamon

DIRECTIONS ½ teaspoon salt Preheat oven to 325° F (165° C). ½ teaspoon baking soda In a large mixing bowl, add ingredients as listed. 2 cups flour Grease two large loaf pans. 1-2 small boxes instant pudding (any flavor) Dust the greased pans with a mixture of ½ cup sugar and ½ teaspoon cinnamon. 1 cup nuts, chopped (optional) Pour the batter evenly into loaf or pans and sprinkle the remaining cinnamon-sugar mixture on the top. 1 cup raisins (optional) Bake for one hour or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean. Makes two loaves.

INGREDIENTS

3 cups nonfat dry milk

4 cups sugar

½ teaspoon nutmeg

1 teaspoon salt

3 cups cornstarch

5 teaspoons vanilla extract

Mix all ingredients and store in airtight container. Makes 10 cups.

Use ½ cup of mix (dry) per box of instant pudding being substituted.

INGREDIENTS

1 cup Amish Friendship Bread Starter

2 mashed bananas

3 eggs

1 cup oil

½ cup milk

1 cup sugar

½ teaspoon vanilla

Dust the greased pans with granulated sugar. If making , spray tins or 1-2 small boxes banana cream instant pudding use paper liners.

INGREDIENTS

1 cup Amish Friendship Bread Starter

3 eggs

1 cup oil

½ cup milk

1 cup sugar

1-2 teaspoons lemon extract

1½ teaspoon baking powder

DIRECTIONS ½ teaspoon baking soda Preheat oven to 325° F (165° C). 2 cups flour In a large mixing bowl, add ingredients as listed except grated lemon zest. 1 small box lemon instant pudding Grease muffin tins the dust with sugar. ¼ cup poppy seeds Pour the batter evenly into muffin tins. Sprinkle the tops mixture of sugar and grated lemon zest. Zest of one lemon (for topping) Bake for 25 minutes or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean. Makes 12 large muffins or 24 small muffins.

1 cup oil

½ cup milk

1 cup sugar

½ teaspoon vanilla

INGREDIENTS

1 cup Amish Friendship Bread Starter

1 cup butter, softened

1½ cups sugar

2 eggs

1 teaspoon cinnamon

1 teaspoon baking soda

2 teaspoons cream of tartar

DIRECTIONS ¼ teaspoon salt Preheat oven to 375° F (190° C). ¼ cup sugar for rolling In a large mixing bowl, add in wet ingredients. ⅓ cup cinnamon for rolling Mix in rest of ingredients except the ¼ cup sugar and and ⅓ cup cinnamon.

In a small bowl, mix together the sugar and cinnamon.

Shape into 1-inch balls.

Roll balls in cinnamon-sugar mixture.

Place balls 2 inches apart on cookie sheet.

Bake 10 minutes.

Remove from cookie sheet to wire rack. Makes 60 cookies.

KITCHEN NOTES

The dough will be sticky but rolls really well into balls. If you want a crunchy cookie, bake an additional 3-5 minutes.

INGREDIENTS

1 cup Amish Friendship Bread Starter

3 cups flour

1 teaspoon salt

2 teaspoons active dry yeast

¼ cup very warm water

½ cup butter, softened

1 egg

Combine yeast, starter and water in mixing bowl. Let mixture stand for 5 minutes. Hold each strip at both ends and twist once in opposite directions. Divide dough in half. Remove from oven and drizzle the icing while hot. Makes 16 twists. Using very little flour (if any), pat or roll one half into a 12"x 9" rectangle.

Spread a thin layer of softened butter over each rectangle. With a butter knife, score the rectangle into thirds horizontally on the 12" side (be sure not to cut KITCHEN NOTES through). ½ cup corn oil

Put all ingredients in a very large bowl (20-cup size) and mix until batter is stiff. Oil hands with oil and knead dough into a mound.
