The Vault Menu the Vault THE VAULT MENU THE VAULT Every aspirational vintage has a backstory waiting to be uncovered by the curious modern individual. Heritage Lounge brings you, The Vault. Its sophisticated selection of high-end spirits, sourced from around the globe, represents a journey; exudes character and evokes lifestyle through a proud legacy. The Vault, a dedication to the late Sheik, Tony Louis Arida, a role model and driving force behind Heritage Lounge's success. Tony migrated to Australia from the mountains of Lebanon in 1975. From humble beginnings, an empire of success was built. His dedication, and importantly, his compassion not only etched into our hearts, but also into the hallowed walls of the acclaimed Heritage landmark. When Tony purchased the building in a dilapidated state, he had a vision of restoring Parramatta’s heritage, to celebrate its past and remind us of our humble beginnings. ﻳﺎ ﺟﺒﻞ َم ّﻳﻬﺰك رﻳﺢ Ya Jabal Ma Yhezzak Rii7 Oh Mountain, the wind will not shake you! Through his legacy the pillars holding Heritage Lounge stand stronger than ever and represent courage and recognition of hard work. He will forever remain in our hearts and his presence will shine through our hospitality. Our first-tier menu is a testament to the rare calibre that the late Sheik, Tony Louis Arida exerted. GLENFIDDICH 50 YEAR OLD BOTTLE 92 VATTING 3 ABV: 43.7% The Glenfiddich 50 Year Old is a product of time, of 50 years spent maturing in oak casks, its complex and sensuous flavours mellowing and smoothing over the years. Malt Master Brian Kinsman added untraditional personality to this ancient triumvirate of whisky. This exquisite cask strength malt has been drawn from three casks, two having spent the last 50 years quietly maturing undisturbed in their American oak barrels in Warehouse 13 (1955 and 1957 Casks). The third was more unusual, it was transferred into a new oak cask after 40 long years, giving it deeper layers of fresh fruit and oak spiciness, the liquid in these three casks was then married in a European oak butt in Warehouse 8 to allow the wondrous array of flavours and aromas to settle down and create and unrivalled harmony. This, only the third vatting of Glenfiddich 50 Year Old, bottled on 4th April 2018, is a representation of a humble beginning, a legacy proudly passed onto Heritage Lounge, a freeman of the Glenfiddich Distillery. TASTING NOTES: NOSE: The nose is beautifully balanced and remarkably light and delicate. Five decades of refined fruity and floral signature aromas, reveal hints of spring blossom, violets, dried hibiscus flowers and rose petals. The oak influence is soft and subtle with antique leather, delicate vanilla sweetness and toasted almonds. PALATE: On the palate it bursts with flavour; the initial vibrant sweetness is light and syrupy with a vanilla spicy character, followed by rich layers of oak tannin, sun dried apricots, cinnamon and nutmeg. FINISH: The finish is incredibly long-lasting with a dry oak notes that grows to an enduring sweetness. HERITAGE LOUNGE RITUAL: Just 500 bottles of this extraordinary whisky have been created. They are released on a strict global allocation of 50 bottles per year for the next ten years. Experiencing such a rare and precious liquid deserves to be recognised! Heritage Lounge will reward the fine connoisseur with a personalised bottle of Glenfiddich 21 Year Old. A hand rolled Romeo Y Julieta Churchills Anejados Cuban Cigar Aged 15 Years to complement. A personalised scroll, signed by William Grant and Sons, for you to display authenticating your Glenfiddich 50 Year Old experience at Heritage Lounge. GLENFIDDICH 40 YEAR OLD BOTTLE 21 OF 852 BOTTLE 386 OF 850 RELEASE 15 RELEASE 16 ABV: 47.8% ABV: 48% The Glenfiddich 40-Year-Old is a product of time, of 40 years spent maturing in American and European oak casks, its complex and sensuous flavours mellowing and soothing over the years. Heritage Lounge proudly offers both release 15 and Release 16; Release 15 was bottled on 16th April 2018. Release 16 was bottle on 11th February 2019. The Glenfiddich 40-Year-Old is a single malt whisky unlike any other, it is a true time capsule of taste. The complex Glenfiddich 40-Year-Old whisky is vatted with previous 40 Year Old vatting’s that are rich and deep in flavour; a unique remnant vatting process used by Malt Master, David Stewart. TASTING NOTES: NOSE: The nose is beautifully rich and aromatic with layer upon layer of dried fruits, dark chocolate, roasted coffee and ripe black cherries. Occasional wafts of gentle wood smoke, polished leather and cloves. PALATE: The taste is silky smooth and luxuriously mouth coating. The initial flavours are intense dried fruits, Christmas cake, dates, raisins and stewed apples. Over time slightly dryish oak notes appear with some bitter chocolate and just the merest hint of peat. FINISH: Incredibly long lasting and complex – a truly memorable experience. CHIVAS REGAL THE ICON A SPIRIT FROM THE PAST AND ICON FOR THE FUTURE ABV: 43% Chivas Regal The Icon is a truly exquisite blend - perfectly smooth with an intense concentration of sumptuous flavours that develop into an exceptionally long, lingering finish. Bold, balanced, unforgettable, Master Blender Colin Scott, carefully rediscovered lost liquid for their exceptional richness and character. To taste the Chivas Regal The Icon is to experience the rarest whiskies, some from lost distilleries. TASTING NOTES: NOSE: Deep, rich, fruity and sweet, with notes of runny honey, ripe pears, dark chocolate and orange fondant creams. PALATE: Full and fruity with flavours of sweet orange, peaches in syrup and vanilla in abun- dance. The sweet whisky flavours are balanced to perfection with the hazelnut flavours comimg from the cask. FINISH: IIncredibly long, luscious and sweet. ROYAL SALUTE 62 GUN SALUTE BOTTLE NO. 18468 ABV: 43% The 62 Gun Salute takes its name from the annual firing of cannon at the Tower of London to mark the anniversary of Her Majesty’s Coronation. Painstaking selection has seen the rarest of Chivas Brother's whiskies blended to produce a new bench- mark in luxury. With the youngest material being 40 year of age, Master Blender Colin Scott has, in the 62 Gun Salute, realised the work of four generations of master distillers. TASTING NOTES: NOSE: Extremely rich with sumptuous fruit notes and lavish swirls of ripe plums seamlessly combined with a complex essence of sherried sweetness and magnificent notes of fine dark chocolate married with hints of warm spicy cinnamon PALATE: Explosion of power on the palate bursting with a zenith of intense sweet Seville orange mingles with a superb depth of nutty, oaky flavour. Just a sensation of smoke evokes a top dressing of distinction. FINISH: Impressively long and warm finish that lingers luxuriously with superlative structure. GLENMORANGIE GRAND VINTAGE MALT 1993 BOND HOUSE NO.1 – 25 YEAR OLD ABV: 43% The exclusive vintages of Bond House No.1 are all shaped by their own unique stories. Each distilled in a single year, they are captured at their peak by skillful whisky creators and only at their behest, is deemed ready to share. The Collection's third release, Glenmorangie Grand Vintage Malt 1993 has a rare depth and minerality. After ten years in ex-bourbon casks, this superior parcel spurred Dr Bill Lumsden ingenuity. Inspired by the distinctive, oxidised nature of Madeira wine, Dr Bill determined to explore the utmost limits of its cask's influence, without sacrificing the single malt's elegant style. Dr. Bill transferred the whisky into casks which once held Bual Madeira - slowly matured in the traditional way, to augment its rich, bitter-sweet taste. During a 15 year finish, far longer than once thought possible, they would bring an intriguing sharpness to Glenmorangie’s complex fruit notes. Bottled on 31st July 2019, after being skillfully matured over a quarter-century, this single malt achieved the full, flinty intensity Dr Bill had sought. Enriched by these delicious contrasts and mellowed by age, Glenmorangie Grand Vintage Malt 1993 takes its rightful place among Glenmorangie's greats. TASTING NOTES: NOSE: Fruity and subtly smoky, the nose hints at candied orange peel and wood fires, with mint toffee, sultana and treacle. Then comes a suggestion of vine-ripened tomatoes and a rare minerality, before Glenmorangie's classic fruit notes. PALATE: A rich, spicy mouthfeel leads to an abundance of ripe peaches, apricots, melon and baked pears, laced with vanilla custard, a dusting of cocoa powder and nutmeg's gentle spice. FINISH: Notes of honey and mead entwine with the softness of milk chocolate and sugared plums, to create a wonderfully sweet and lingering finish. GLENMORANGIE GRAND VINTAGE MALT 1996 BOND HOUSE NO.1 – AGED 23 YEAR ABV: 43% The exclusive vintages of Bond House No.1 are all shaped by their own unique stories. Each distilled in a single year, they are captured at their peak by skillful whisky creators and only at their behest, is deemed ready to share. The Collection’s sixth release, Glenmorangie Grand Vintage Malt 1996, is luxurious and creamy. Aged in a handful of the first custom-designed casks, this quintessential Glenmorangie honours the pioneering decade of travel and experi- mentation to devise the perfect cask. From the northern slopes of Missouri's Ozark Mountains, was discovered slow-growth American white oaks with a particularly porous structure. Inviting greater synergy between wood and spirit, they would magnify Glenmorangie's creamy character. Hand selected trees, cut into staves, allowing the wood to slowly dry in open air for two years, delivering gentler, sweeter flavours. The casks were then heavily toasted, and lightly charred to augment their natural wood notes.

  • The Balvenie Single Malt Scotch Whisky
The Balvenie Single Malt Scotch Whisky The Balvenie is a unique range of single malts created by David Stewart, The Balvenie Malt Master and longest-serving Malt Master in the industry. Each has a very individual taste, but each is rich, luxuriously smooth and underpinned by the distinctively honeyed character of The Balvenie. Produced in Speyside in the Scottish Highlands, the exceptional quality of The Balvenie Single Malt is due to the fact that The Balvenie Distillery retains and nurtures a high level of craftsmanship that other malt whisky producers no longer employ: nowhere else will you find a distillery that still grows its own barley, still malts in its own traditional floor maltings, still employs coopers to tend all the casks and a coppersmith to maintain the stills. Today the Balvenie Distillery produces a multi award-winning range of The Balvenie Single Malts, which includes The Balvenie DoubleWood 12 Year Old, The Balvenie Signature 12 Year Old, The Balvenie Single Barrel 15 Year Old, The Balvenie PortWood 21 Year Old and The Balvenie Thirty. A limited edition and a rare vintage cask over 30 years old are also bottled each year. Our Award Winning Single Malt The Balvenie Malt Master, David Stewart, and his team of craftsmen are thrilled that their time honoured skills have been so highly rewarded. With over one hundred whisky awards in the last ten years, the world’s most acclaimed experts have recognised The Balvenie’s unique quality and range of tastes and the commitment to traditional malt whisky making, which sets us apart from other single malts.
