A Tale of Two Cities: SHENZHEN HONG KONG The History of Shenzhen There’s a common rhetoric about Shenzhen-that it’s a city without history that went from a sleeping fishing village overnight to a modern metropolis. It’s hard to fathom when viewing Shenzhen’s changing, skyscraping skyline but beneath the city’s breakneck modernity does lie a wealth of history.

The Asian Infrastructure Investment Bank (AIIB) was first proposed when Xi Jinping and Li Keqiang visited Southeast Asian countries in October 2013. The AIIB will finance infrastructure projects throughout Asia, such as roads, railways and ports.

By October 2014, 22 Asian states had signed a Memorandum of Understanding to establish the AIIB. The bank is to be headquartered in Beijing and is widely seen as China’s answer to the Japanese-led Asian Development Bank and the American-dominated World Bank.

The Chinese government had long been dissatisfied with Japanese and American reluctance to grant it a larger say in existing international financial institutions. For instance, China contributed 12.6 percent to global GDP, with 23 percent by the US and 6.7 percent by Japan. However, Japan is the majority shareholder of the Asian Development Bank with 15.7 percent of shares, followed by the US with 15.6 percent. China only holds 5.5 percent. The same situation occurs with in the World Bank. The institution is led by the US with 16 percent of shares, followed by Japan with 8.9 percent, and China merely holding 5.8 percent. At the same time, the US is unwilling to give China a bigger say in the IMF. Sweet Danger

Like many pieces of modern technology, artificial sweeteners were developed by scientists to solve a problem, but ended up having unintended negative consequences. The original intent in the development of artificial sweeteners was to enable people to enjoy the sweet taste of , without causing unwanted fat and insulin sensitivity that leads to diabetes and many other health concerns. It’s a beautiful idea, but studies in the last decade have begun to cast major doubt about whether that diet soda in your hand is any healthier than the regular kind. In this article, I’d like to share with you the findings of a study on artificial sweeteners funded by grants from the National Institute of Health and published in 2014. 1. The Study found that adding artificial sweeteners into mice's water for only 10 days caused a measureable sugar intolerance in the subjects. 2. The Study went on to also show that the mice fed the artificial sweetener water also had significantly changed digestive bacteria - which could potentially cause digestive problems. 3. The human aspect of the study measured the waistlines of people who reported consuming high amounts of artificial sweeteners against artificial sweetener avoiders. The artificial sweetener consumers on average measured larger in belly circumference and heavier in body weight. No nutritionist would ever recommend heavy consumption of fizzy drinks; however, I would go so far as to say that Diet Coke or Coke Zero and “zero calorie” candies are likely to be worse causers of belly fat than the sugar-filled alternatives. My recommendation is the next time you want a sweet drink, do your health a favour and buy a bottle of 100% fruit juice instead and the next time you have a candy craving, search out a fruit stand and buy a guava.

In the 2010 Asian Games, she won the Gold Medal as a member of the women's six-red team and a Bronze Medal in the singles competition. And Hong Kong’s Ng On-Yee is only 24 years old. As the new world snooker princess, she has become Hong Kong's new golden girl, joining 1996 windsurfing Olympic gold medallist Lee Lai-shan and 2012 cycling Olympic bronze medallist Sarah Lee Wai-sze in a very exclusive club of Hong Kong’s elite athletes.

Not bad for a bespectacled little girl who grew up in Tai Po. Her father Ng Yam-shui supported the family as a truck driver, then sa taxi driver and finally, as a manager of a snooker club. Her mother worked as a waitress at a cafe and a seamstress for a garment factory before joining her father in the snooker-hall business. She has two older sisters and an older brother, Ng Chun-nam, who is also a competent snooker player; all six still live together in the family flat in Sheung Wan. Ng's relationship with her father is integral to her success on the baize. Her interest in snooker stirred after watching him play at a local tournament. However, it wasn't Yam-shui's cue skills that initially caught her eye, it was the smart tuxedo and bow-tie. Her father supported the young girl’s decision to quit school and pursue snooker 11 years ago. He has said that hamburgers played an important role in her early training regime, beginning at the age of 13 at her father’s snooker parlour in Shek Kip Mei.

She was 16 that she was first able to don the tuxedo and bow tie outfit when she travelled to Jordan for her first overseas tournament. Her father chaperoned her to overseas events as they worked hard to achieve a dream that finally came true on April 22 when she become the first Asian woman to win the world championship.

In 2009, she became world amateur champion by winning the IBSF World Championship. The following year, Ng won a gold medal at the Guangzhou Asian Games in the women's six-red team. She also took bronze in the singles.She repeated her amateur world title in December 2010, beating another rising Hong Kong star, Jaique Ip Wan-in, in the final.

Apart from her father, Ng is coached by Wayne Griffiths, son of Welshman Terry Griffiths, one of the world's top players in the 1980s. Line down sheets of wonton dough and moisten around the outer edge of the dough. Set one piece of foie gras in the middle of half of the wonton sheet. Then, put the second half sheets over each foie gras piece and seal it by pinching the edge together. Make sure to press firmly and go all the way around.

For the sauce, pour the wine, vinegar and 5 spices together in sauce pan and reduce by three-quarters. Add chicken and then reduce again by half. Put aside.

Using a melon baller, cut 12 round-shaped pieces of Chinese broccoli bulb. Do the same with the carrot. In a sauce pan, put the bulb with 15g of butter, a pinch of salt and sugar, a drop of water and cook them for 3 minutes, lid almost closed. When the butter coats the vegetables, it’s ready. Do the same with the carrots.

Chef Mok trained in traditional Cantonese cuisine at a young age and has over 35 years of culinary experience. He spent almost two decades working in Singapore’s most prestigious establishments and international luxury hotels, such as Raffles Hotel Singapore, Suntech Singapore International Convention and Exhibition Centre and Marina Bay Sands, Singapore, before returning to Hong Kong. Chef Mok has received a number of culinary accolades, including the Gold Medal Award in Chinese Cuisine from the Restaurant Association of Singapore in 2001 and 2004, the Gold Medal Award in the Food Hotel Asia 2008 Imperial Challenge, and a garnered a depth of international experience, including being one of five guest chefs outside Canada at the 2014 annual Chinese Restaurant Awards in Vancouver, and cooking for the 2012 Melbourne Food and Wine Festival as part of The Crown Melbourne’s ‘Stars of Stars’ programme, which saw a constellation of European and Asian Michelin-starred chefs.

Here, Chef Mok shares his recipe for his much-loved signature dish at Shang Palace:

Oven - Baked Cod Fillet with Egg White and Conpoy INGREDIENTS: 120g Cod fillet 40g Egg white 10g Steamed conpoy 30g Chicken broth 5g Sliced asparagus Seasoning: 5ml Light soy sauce 2g Corn starch 2.5ml Water 10g Crema di Balsamico 3ml Dark soy sauce To taste Chopped ginger 1g Salt To taste Chopped spring onion 0.5g Sugar To taste Artificial colouring 2g Chicken Powder To taste Honey

Garnish: Swiss Parsley

METHOD: 1. Mix light soy sauce, water, dark soy sauce together. Add sugar, chopped ginger and spring onion to the mixture, then stir well. Set aside at room temper for 1 hour. 2. Dip and marinate the cod fillet in the mixture. 3. Place the marinated cod fillet on a stainless steel tray with holes. Bake it under the salamander for 8 minutes at 220-250 degrees until light brown. 4. While the cod fillet is baking, heat oil in a wok, add in egg white, stir fry under low heat until cooked, take out the egg white, drain the excess oil and rinse the egg white with lukewarm water for a few seconds to make it less oily. Remove the water. 5. Heat chicken broth in a wok, add in steamed conpoy (i.e. dried scallop) and sliced asparagus, season with salt and chicken powder, thicken it with corn starch, and add in the cooked egg white. 6. Take out the cod fillet from the salamander and glaze it with honey, put it on a paper kitchen towel to absorb excess oil. 7. On the plate, draw a ‘V’ with Crema di Balsamico, plate the egg white in the middle, and put the cod fillet on top. with Swiss parsley.

Mandarin Perch Fish with Sweet Chili Sauce Ingredients For 4 600g Perch Fish,Cut in 4 60g Sweet chili sauce Salt,a pinch 3 g Black pepper, crushed 50g Oyster sauce 60g Cherry tomato,cut in 4 45g red onion, diced 5g garlic,crushed 30ml Lemon juice 80g red pepper 60g broccoli,diced 60ml fish sauce 5g Sugar 50g lemongrass, sliced 15g ginger,sliced 5g Basil 5g fresh chili,shredded 50g corn flour Oil

Method: 1. Marinate the fish with salt, lemon sauce and black pepper for 2 minutes, then cover with flour. 2. Using medium heat, bring oil to a boil and fry the fish until golden brown. 3. Using another pot, use one tea spoon of oil then put in garlic, lemongrass, ginger, fresh chili and stir fry. 4. Add vegetables and continue to stir fry. Season as necessary. 5. Place the fish on a plate, place the vegetables and sauce on top of the fish and garnish with basil.
