14 Lamma Island The Perfect Weekend Escapade in Hong Kong jetsetter PAPER MAGAZINE Hong Kong is regarded as one of the most densely populated and fast- paced metropolises in the world. Yet, on the southwest of Hong Kong and only 30 minutes from Hong Kong’s downtown, you can escape from the urban cacophony to Lamma Island, Hong Kong’s popular weekend getaway due to its beautiful scenery, adventurous hiking trails, multicultural shops and cafes, and renowned seafood dining.

How to get there: If you are coming from Hong Kong island, take a 30-minute ferry from Central Pier 4. There are no cars on Lamma Island, so if you are in Sok Kwu Wan or other parts of the island, you have to either hike or ride a bike. The island is very small and the places are all within walking distance, so we recommend you take the hiking option!

Hiking the Family Trail What to do The trail which is known as the "Lamma Island Visit Lamma Fisherfolks Village Family Walk" is a fantastic way to see the Lamma Located on a raft in the bay amongst the fish farms lies the quaint Lamma Island and is one of Hong Kong's most loved Fisherfolk’s Village, started in 2007 to showcase the local fishing culture and trails. THE GRAND PRIX HERO OF MACAU MAKING A COMEBACK: ANDRE COUTO THE MACAU RACER SUFFERED A HORRIFIC INJURY IN JULY 2017 AFTER A CRASH AT THE 2017 CHINA GT CHAMPIONSHIP IN ZHUHAI WHICH ALMOST ENDED HIS CAREER AND LIFE. AFTER A SPEEDY RECOVERY, ANDRE COUTO IS NOW BACK TO REGAIN HIS THRONE AS MACAU’S CHAMPION RACER.

s Macau’s top racer, the Lisbon-born Andre Couto decided to enter competitive racing after having successful runs in Karting in Macau. Before his horrific injury in Zhuhai, Andre Couto’s world and career were on a high. After all, the Macanese racer became Macau’s hero Aafter becoming the first and only Macanese racer to have won his home F3 Grand Prix in 2000 before going on the win Japan’s Super GT GT300 Championship in 2015.

Couto’s father, Carlos, recalled his son’s glorious victory back in 2000, “This was the one race Andre always wanted to win. He was born in Lisbon, but we moved back to Macau when he was four. My wife Isabel and I have now lived in Macau for many years. Isabel was born here, and all her family is from here. This will always be Andre's home. He speaks fluent Cantonese like most Portuguese people living here. He is a Macau citizen; it is what he wanted. We've lived here happily for many years. Today is a special day for everyone in Macau."

What made the F3 Grand Prix victory even more amazing was that Andre Couto had won it in his hometown and he had become the first and only Macanese driver to have become the champion. It also propelled him into the limelight and made him a household name and a superstar in Macau overnight.

Despite having lost his son to leukemia in 2009, Andre Couto rode on By November 2017 however, Andre Couto surprised everyone with an the waves of his earlier successes and continued to represent Macau incredibly fast recovery, “I’m in the recovery phase, doing physiotherapy and compete in championships and circuits around the world. With his usual grit and determination, Andre Couto was back on the tracks by earlier this year in January when he made a return to the tracks at the Zhuhai International Circuit - the same track where he suffered the accident - only, this time as the official test pilot for a four-day test of the NIO EP9, an electric super car produced by Chinese electric car manufacturer NIO. The four-day test started on January 11 and involved some 22 laps per day. “When I’m at the wheel I feel as before [the accident]. This morning when I took the car to the track, I felt normal mentally. The first day was a bit weird, after such a long time without driving, but it is all coming back naturally,” he said.

Nevertheless, although the racer has set his sights on an official comeback at the 2018 Macau Grand Prix, he was not going to rush his recovery. “I also didn’t want to make a deal with any team while my condition is still not 100 per cent. After my next medical tests, everything will be clearer,” he added.

For the sake of Macau and fans of racing, we hope Andre Couto returns to the circuit soon and we wish him a speedy recovery.

As culinary experts will know, the Shunde Style of cooking has often been referred to as the backbone of exquisite Cantonese culinary staples. Braised Pork Ribs with Pickled Chili, cooked in the Shunde Style, perfectly reserve the natural flavours of the ingredients which seamlessly integrate with each other. As you take a bite, the pork ribs sopping up the delicious gravy are softly stretched by your teeth and a faint thread of pungency brought by the pickle chili will further arouse your appetite.

Another delicacy is Braised Grouper with Spicy Beef, Preserved Vegetable and Fermented Soya Bean. Accompanied with a touch of fresh mint, citronella and sliced lemon, the boneless tender grouper slices soaked in the rich and palatable soup made with prime beef brisket paste and savory Yangjiang soya bean will render you a magical and refreshing taste of summer. As it is carefully contained in an iron boat heated by candle placed below, it will be warm right until your very last bite.

Beijing Roast Duck Preparation: • Clean the Peking duck, which is 38-day old and transported from a premium duck farm in Beijing. Then, rinse it thoroughly with water. • Pump the air under the duck’s skin through the neck cavity to separate the skin from the meat. • Soak the duck in boiling water for a short while. • Hang it up to dry for around 6-7 hours. • While it is hung, glaze the duck with a layer of maltose syrup, and the inside is rinsed once more with water to firm its shape.

Roast: • Roast the duck in an oven with an open fire fuelled by hardwood from date trees. • Hang it on hooks above the fire and roast for 30-40 minutes, melting the fat so that the skin is crispy. • While the ducks are roasting, use a pole to dangle each duck closer to the fire for 30 second intervals to make the skin turn shiny brown.

Serving: Almost every part of a duck can be prepared afterwards. The cooked Peking Duck is traditionally carved in front of the diners and served in three ways: 1. Duck skin is served with sugar and garlic sauce as dip. 2. Breast meat could be enjoyed with shallots, cucumber and sweet soybean paste. 3. Duck leg meat is to be wrapped in a pancake with spring onion, cucumber, garlic paste and sweet soybean paste.

The sweet soybean paste, originated from the famed and historic seasoning company Beijing Liubiju, is meticulously prepared by the chef: it is mixed with honey and sugar and steamed with a green Chinese onion on top before being served.

If guests order a whole duck, the remaining duck meat and bones will be cooked in 2 ways and they can choose either palatable duck broth or stir-fried duck bones with pepper and salt.

PAPER 36 out n about THAI CAVE RESCUE INTERNATIONAL TEAM COOPERATES TO BRING BOYS HOME In a world rife with conflict and differences, the international community showed that they could put aside their differences and work together to execute a noble mission.

fter 10 days of being trapped in a flooded cave complex in northern Thailand, and after an enormous searchA effort that had transfixed Thailand and the rest of the world, the missing 12 boys and their football coach were finally found in Tham Luang Cave on July 2. The boys, aged 11 to 16, and their 25-year-old coach went into the popular cave complex after football practice and were caught inside by rising flood waters. Panic gripped the Thai nation and the world as everyone prayed hard for the safe return of the Thai boys and their coach.

Thailand immediately sprang into action to find the missing boys and coach, mobilising around 1,000 Navy Seal (sea, air and land teams) divers, police, soldiers, border guards and officials for the round-the-clock rescue in a remote and mountainous part of Chiang Rai province near the Laos and Myanmar borders. As the challenges and difficulties of the search and rescue mission mounted due to the rough terrain and inclement weather conditions, it seemed as if all hope was lost.

As the world became fixated on the enormous media coverage of this unfortunate incident in Thailand, the international community stepped in to offer their help in the search and rescue mission. What had initially started as a Thai mission became an international search and rescue operations to try and bring the Thai boys and their coach home as the search rapidly grew into an international operation, with specialist cave divers and other support flying in to help.

The two British divers who were the first to reach the boys were John Volanthen and Rick Stanton, both experts on cave rescues. Both flew into Thailand with another British caving expert, Robert Harper, three days after the Thai boys and their coach went missing. Stanton is a firefighter from UK's Coventry who was also involved in the rescue of 13 British cavers in Mexico in 2004. The Daily Mail reported that Volanthen is an IT consultant from UK's Bristol, citing a previous interview with The Sunday Times magazine. In the interview, Volanthen said he started caving as a scout and that he enjoyed the logistical challenge.

Besides the Brits, the Americans also sent their support team of 17 Air Force rescue specialists based on the Japanese island of Okinawa to aid in the search. China put aside their rivalry with the USA to also contribute a team of Chinese cave rescue experts that brought with them rescue equipment including underwater robot, diving equipment and three-dimension imager to the cave. Captain Jessica Tait from the US Air Force’s rescue support team said there were “lots of challenges” throughout the search but that the effort had brought the country together. She was also full of praise not just for the Thai divers and team, but also those who had stepped forward to aid the cause. “But you know what I saw, I saw Thailand coming together,” she added. "This is an absolute humongous success for Thailand."

After a gruelling and risky search and rescue operation, the boys were finally found and luckily, there were no casualties. The world cheered the international rescue team and could finally breathed a sigh of relief. As the international community showed that they could set aside differences and conflicts to achieve something for the good of mankind, Thai Prime Minister Prayut Chan-o-cha has thanked the international effort that came together to find the team.

Paper Magazine wish the boys and their coach a speedy recovery.
