    CHAPTER ONE INTRODUCTION Background to the Study Alcohol has various socio-economic and cultural functions among the people of southeastern Nigeria. It is used in rituals, marriages, oath taking, festivals and entertainment. It is presented as a mark of respect and dignity. The basic alcoholic beverage produced and consumed in the area was palm -wine tapped from the oil palm tree or from the raffia- palm. Korieh notes that, from the fifteenth century contacts between the Europeans and peoples of eastern Nigeria especially during the Atlantic slave trade era, brought new varieties of alcoholic beverages primarily, gin and whisky.1 Thus, beginning from this period, gins especially schnapps from Holland became integrated in local culture of the peoples of Eastern Nigeria and even assumed ritual position.2 From the 1880s, alcohol became accepted as a medium of exchange for goods and services and a store of wealth.3 By the early twentieth century, alcohol played a major role in the Nigerian economy as one third of Nigeria‘s income was derived from import duties on liquor.4 Nevertheless, prior to the contact of the people of Southern Nigeria with the Europeans, alcohol was derived mainly from the oil palm and raffia palm trees which were numerous in the area. These palms were tapped and the sap collected and drunk at various occasions. From the era of the Trans- Atlantic slave trade, the import of gin, rum and whisky became prevalent.These were used in ex-change for slaves and to pay comey – a type of gratification to the chiefs. Even with the rise of legitimate trade in the 19th century alcoholic beverages of various sorts continued to play important roles in international trade.5 Centuries of importation of gin into the area led to the entrenchment of imported gin in the culture of the people.

Department of Biochemistry and Biotechnology, Faculty of Biosciences, College of Science, Kwame Nkrumah University of Science and Technology, Private Mail Bag, Kumasi, Ghana. Accepted 30 December, 2009 Locally distilled liquor (Akpeteshie) is a beverage which is widely consumed in Ghana. It is produced from different raw materials. The purpose of this research was to determine the presence and levels of certain contaminants in akpeteshie from the various sources and to determine effects of ambient temperature, refrigeration, pasteurization and pasteurization in combination with low temperature for the liquor stored for seven weeks. The contaminant microorganisms are spore forming gram positive Bacillus spp., responsible for converting alcohol to acetic acid. Total viable count (TVC) reached 25, 120 cfu/100 ml during the first week of storage, under room temperature in the most contaminated sample and thereafter, increased till the end of the storage period. Storage under the other conditions drastically retarded microbial growth. pH decreased from 5.0 to 2.7 at the end of storage period while the titrable acidity increased from 1.10 to 1.63. However, the pH and titrable acidity varied at slower rates in samples stored under other conditions. An increase from 0.02 to 0.04 was recorded for the acetic acid content of S2 (sample obtained from the second production site in the district; New Town).

(SCA) and the American Homebrewers' Association. Beginning in 1997, I became loosely associated with the SCA's inter-kingdom brewers guild, or IKBG. The IKBG email group has always been a hotbed of discussion on a variety of topics firmly and loosely related to brewing. In mid-2005, one of the list members posted a question. He stated that his SCA persona was that of a pirate, and he was curious as to what would be an appropriate beverage for him to drink. Several other list members replied with various suggestions before I glibly responded that any pirate should be able to drink rum. I was immediately challenged on that assertion by more than a dozen commenters who maintained that rum was not only post-period, but an American invention. While I successfully argued that the West Indies rum industry did in fact supply the European market, I could not persuade any of the detractors that the beverage itself was present during the SCA time period. The principle argument stemmed from the word “rum”, and the assertion that the oldest rum distillery in the new world only dated its products to the early 1600s.
