Chesnok Red-Purple Striped variety Originating from Shvelisi, Republic of Georgia. Chesnok is capable of producing large bulbs containing 7 to 9 crescent shaped . A test winner and a must have for anyone's Garlic collection. Stores very well Chesnok Red is one of our favorite heirloom . One reason: It's great for all-around use in the kitchen. This hardneck heirloom variety adds a rich but not overpowering garlic flavor to eggs, seafood, soups, stews and meats. When roasted, Chesnok Red turns garlicky-sweet. Is sweet, making it great for desserts. • Produces medium to extra-large bulbs 7-9 cloves/bulb.

Deerfield Purple Stripe: Purple Stripe Rocambole type. A 5-star garlic for its uniformity, size and flavor. Bulky heads are covered in thin, white wrappers that are streaked with purple. Averages 8-10 cloves per bulb. Individual cloves are covered in blushed-tan skins with plum stripes. Attractive purple variety has large, meaty cloves and a balmy rich garlic flavor that starts out mild and finishes with a spicy kick. I picked up Deerfield at St. Jacob’s Mennonite Farmers market in Ontario but it is said to have originated from Vietnam in 1994

Georgian Fire It is often described as one of the best-tasting varieties, with a white-hot flavor. Considered to be one of the more disease resistant varieties, this garlic gets its name from the Republic of Georgia and it belongs to a group known as porcelain garlic because of a satiny white outer wrapping around the bulbs. Inner wrappers may be brownish, purple, or a combination. Individual bulbs are large, with 5 to 8 large cloves each, and

Italian Purple Soft neck: producing large, milky-white, thick-skinned bulbs with light purple stripes at its base and up to 20 plump cloves. Easy to braid with soft main stalks without flowers, this softneck can store up to 10 months with proper curing once harvested. Shipped in the spring at the proper time for planting in your area. Flavour: this garlic is hot, with flavor and middle of the scale but with rich tones. This flavor, combined with the color and long storage life, has made Italian Purple a favorite garlic.

Kilarney Red Killarney Red is a Rocambole variety with several possible origins.... Ireland, Ontario, and even Idaho in the US. Being a Rocambole garlic, its flavor is very strong, hot and spicy and sticks around for a long time. Good taste makes a very nice garlic powder which is great since because of its thin papers it is not a long storer. White bulb wrappers with light striping and reddish-brown wrappers. 8-12 cloves per bulb. Korean Red A rich yet mellow Asiatic Garlic. When you first bite into a clove there is a beautiful pure garlic flavor that is utterly devoid of heat, And after a minute or so, the rich garlickiness is replaced with a smooth warm aftertaste that just makes you feel good. is great for raw eating and stores about six months. Asiatic and Turban garlics are usually pretty hot but this one is for those who love garlic flavor but who don't want the hotness. Great for Kim Chi and whole clove stir fries

Leningrad: Described as: “From the days when St. Petersburg was still called Leningrad comes this cultivar with a pungency to power another proletarian revolution.” Big heat and big pungent garlicy flavour, Leningrad stays with you for a long time. Typical of Porcelains, Leningrad averages 5 large cloves per bulb, ranging from 4 to 6 in number.

Music is the most popular heirloom garlic we grow. In good growing conditions, Music can produce big bulbs with , easy-to-peel cloves. Music's hot if you eat it raw. But when cooked, Music gives dishes an earthy garlic flavor gourmet chefs covet. (We know one well-known restaurant in Louisville that uses Music almost exclusively for its dishes.) It's also a great garlic to grow, with sturdy, disease-resistant plants.

Persian Star: A true medium hardneck garlic that is sweet when roasted. They are a full flavored garlic with only a small bite to them and are more mellow than hot as are most other standard Purple Stripes. Relatively long storage: stores about 6+months. Persian Star is a perhaps the most beautiful of the standard group of Purple Stripes with its thick white bulb wrappers that are streaked with purple as you peel away the outer wrappers. When the wrappers are all peeled away the clove covers with their distinctive long sharp points resemble an eight point star, hence their name. They're pretty enough to be used as a centerpiece. Like Samarkand, they apparently originated in Uzbekistan, one of those central Asian Islamic republics that were once part of the USSR.

Portuguese Purple: Bulb wrapper lightly striped. Robust Rich full bodied taste that is sweet with a hint of heat.

Romanian Red -Porcelain variety It is pungent and hot “with a bite” when eaten raw. When cooked it has a wonderful Garlic complexity. This is a “Garlic lovers” Garlic. Stores well Introduced to British Columbia from Romania, it is reported to be a fairly disease resistant garlic. This Garlic is a robust grower, producing 4 to 5 large, easy to peel cloves..

Rose de L’Autrec: Described thusly: “Rose de Lautrec is a beautiful Creole that is almost as long storing as its fellow French Creole, Germinador but has a much more robust flavor.” I think it is the prettiest of all garlic, hands down. “Rose de Lautrec has a very unique flavor, I don't think I've ever tasted one quite like it. It has a modest amount of pungency, perhaps 3 or 4 on a scale of 10, so it is a warm garlic but not a hot one. Its flavor is what separates it from the others; It has a deep sort of muskiness but with an influence of dijon or a hint of . It left me with the impression of a flat, wide yet deep flavor quite unlike any other garlic. One of these days, I have to see what it is like cooked. So many garlics, So little time..” Some garlic afficionados can become quite poetic.

Samarkand (Duganski): long-storing Marbled Purple Stripe garlic. The bulbs will typically store around nine months from the date of harvest at room temp. (will usually store firm all the way through winter.) Strong pungent fiery flavour, with mellow aftertaste. A stunningly beautiful garlic with large bulbs and an amazing flavor that matches its looks and size. Purple outer wrappers protect the violet-tinged cloves that burst with a fiery flavor and mellow out with a pleasant aftertaste. If you like your garlic Impressively big, strong and boldly colored, Samarkand is for you. Five huge cloves of rich, deeply flavored and pungent garlic.

Susan Delafield: Susan Delafield is one of the hottest and most flavourful Porcelains, a leading garlic. . It shows perfect symmetry with an average of 4 huge cloves per bulb. Taste-wise, this is a very hot garlic and is what the gourmet cooks would pick. It grows tall, generally produces very large bulbs, and is more tolerant of wet conditions than most garlic varieties. It is a variant of Music that is distinctly different and has been growing true since 2004. Susan Delafield is listed in the Seeds of Diversity Canada catalogue of heritage varieties

Thai Purple: Thai has a delightful, delicate, distinctive flavour. moderate to strong heat, especially when eaten raw.It is a weakly bolting hardneck, an early garlic with small bulbs. Thai is listed In the Seeds of Diversity Canada catalogue of heritage varieties. It is an early garlic and is probably a Turban. I like it for its especially pretty braids

Tibetan Red: “HOT, HOT, HOT! Very likely our hottest variety. "El Diablo" as it is affectionately known by our customers, if the devil was a garlic bulb he'd be a Tibetan Red. Use raw for that kick in the pants your looking for. Very poor storage, use early fall. Averages 8-12 cloves that are slender and well formed with striking purple streaks.
