Restricted Quantities 2021 Program & Wines The year 2021 marks Restricted Quantities 21st program, featuring an entirely European line-up of varietals. The number 21 and the Europe-focus led us to the concept of tarot. What is Tarot? • From the mid-15th century in many parts of Europe, tarot cards were used to play various card games • In the late 18th century, some tarot packs began to be used as a trend for divination (fortune-telling) via tarot card reading Inspiration for theme • The number 21 (since 2021 is the 21st anniversary of the Restricted Quantities program and the “major arcana” tarot card pack has 21 trump cards) • European wine focus (because of tarot’s European roots). Spain Tempranillo Merlot • A red blend that has proved popular in northern Spain, particularly Navarra, and in various parts of the New World. • Tempranillo's thick skins can sometimes lead to wines with tough tannins. Blending it with Merlot is ideal as the latter can smooth out these rough edges, making a more approachable wine. • Tempranillo merlot wines are generally rich and concentrated with berry fruit flavours. • Tempranillo • Has been adopted across the winegrowing world, but is still very much associated with the fine wines of Spain and Portugal. • Strawberries, tobacco and spice flavours can be found in many Tempranillo wines. • Merlot • Merlot has spread far and wide from its homeland in Bordeaux, and is found in many top wine regions around the world. • Merlot commonly exhibits cherry or caramel flavours but is perhaps more often recognized for its silky texture rather than for any one flavour. This makes it ideal for blending as it can smooth out more-tannic varieties. Spain Muscat • Spain is the fastest growing old world country - growth rate 2.3% • The Muscat grape is thought to be the world’s oldest known grape variety. • The grape is characterized by an intensely aromatic bouquet and a musky, fruity (mandarin orange, apricot, peach), honeyed flavour. • At present, Muscat wines are not mainstream wines but their presence is felt in every country in which wine is produced. France Cabernet Sauvignon • The world’s most popular red wine grape is a natural cross between Cabernet Franc and Sauvignon Blanc from Bordeaux, France. • Cabernet Sauvignon is loved for its high concentration and age worthiness. • Cab is a full-bodied red wine with dark fruit flavors and savory tastes from black pepper to bell pepper. France Cabernet Sauvignon Cabernet Sauvignon Taste Cabernet Sauvignon Profile FRUIT BODY TANNIN ACIDITY ALCOHOL Why? Italy Nero d’Avola • If you love full-bodied dry reds like Cabernet Sauvignon or Syrah then Nero d’Avola (“nair-oh davo-la”) is your buddy. • This lesser-known Sicilian grape variety deserves more recognition as a wine to be taken seriously. • Nero d’Avola is known for its superbly bold fruit-driven flavours that range from black cherry to prune. • Nero d’Avola is one of the full-bodied wines of the world in the same boldness as Cabernet Sauvignon, Pinotage, and Syrah. • With Nero d’Avola you can expect moderately high acidity, but not so tart that the wine tastes overly spicy. Italy Nero d’Avola Nero d’Avola Taste Nero d’Avola Profile FRUIT BODY TANNIN ACIDITY ALCOHOL Why? France Rosé • Pink wine happily spans the colourspace between red and white wine, in a way, rosé is more like a state of mind. • Rosé happens when the skins of red grapes touch wine for only a short time. Where some red wines ferment for weeks at a time on red grape skins, rosé wines are stained red for just a few hours. • The epicenter of the Rosé wine world is in the South of France. There, along the Mediterranean, regional varieties like Grenache, Carignan and Syrah are blended together to make refreshingly dry Rosé. • The primary flavours of rosé wine are red fruit, flowers, citrus, and melon, with a pleasant crunchy green flavour on the finish similar to celery or rhubarb. France Rosé Rosé Taste Rosé Profile Restricted Quantities 2021 Kit Components Yeasts in RQ2020 Kits Bourgovin RC212 This yeast was specifically developed in Burgundy, France for red wine fermentations to enhance varietal character by emphasizing ripe berry and fruit aromas. QA23 This yeast Originating from the Vinhos Verde region of Portugal, the QA23 was selected for enhancing the flavors and aromas of grapes utilized in the production of premium white wines. Recommended for styles such as, Chardonnay, Sauvignon blanc, Chenin Blanc, Colombard and Semillon, the QA23 produces fresh, fruity and clean wines. French Oak Wine is aged together with wood to enhance the flavour, aroma and complexity of the wine through the extraction of the substances from the wood into the wine. When compared to American oak, French oak imparts more subtle flavours and firmer, but silkier tannins which is ideal for lighter wines. French oak contributes flavours such as cigar box, cinnamon, and coffee. American Oak American oak is used by many winemakers for the aromatic sweetness it contributes to the wine. On the palate, American oak provides a tannin structure that accentuates the fruit on the mid palate. While on the nose, it will contribute aromas of vanilla, coconut, dill and mocha. Dried Grape Skins The GenuWine Winery Dried Grape Skins included in our three red wine kits are made through a patented process of gently drying crushed whole grape skins to retain original colour and nutritional integrity. The skins are processed to maximize colour and flavour extractions so that all their goodness can be extracted in a five or six day fermentation period. Grape skins will add smooth tannins, robust colour, and rich aromas to your red wines, making them more complex and fuller-bodied. These bigger, bolder red wines will drink well while young, but the goodness from the skins will also continue to enhance the flavour of the wine when aged. The French often describe structure as the skeleton ofthe wine, as opposed to its flavor which they describe as the flesh. • Where does structure come firom? In white wines, it usually comes from alcohol or acidity; in red wines, it comes from a combination of acidity and tannin, a component in the grapes' skins and seeds. Thus, wines with a lot of tannin (like cabernet) also have a lot of structure. Beaujolais is made from gamay which does not have much tannin. As a result, Beaujolais can lack structure; it feels soft, flat or simple in the mouth (though its flavors can certainly still be attractive). • While structure is hard to articulate, you can easily taste or sense it —^and the lack of it. • Understanding structure is critical to understanding any ofthe ''powerful" red varieties: cabernet sauvignon, merlot, syrah, nebbiolo, tempranillo, and malbec, to name a few. I just don't think you can understand these wines unless you understand structure, and how it frames and focuses the powerful rush of fruit. It adds freshness, and a "lightness" to the density ofripe fiuit. Structure matters when pairing wine and food. Foods with a lot of structure themselves— like a meaty, thick steak-need wines with commensurate structure (like cabernet), or the food experience can dwarfthe wine experience.

Sugar 1.44 g/l · Acidity: 5.11 g/l Serve at: 59º F-63º F UPC: 1-85554 00054-3 Vineyard: All of the production is obtained from the Estate FINCA CAÑADA HONDA. The production area includes lime soils which are ideal for obtaining colorful wines. Also the sand textures of these lime soils benefit the ripening of the grapes. The vineyard is situated 800 – 850 meters above sea level with an N / SE orientation resulting in maximum sunlight exposure. Vinification: The wine making process without the use of sulfur means that the hygienic conditions have to been extreme during harvest season. The grapes are harvested solely by hand in small crates. Every effort is made to avoid breakage and bacteria attacks. The wine deposits are filled very briefly so as not to delay the delicate fermentation process. All elements that come in contact with this no sulfite added wine are subject to the most extreme hygienically conditions. Terroir: Mix of sandy and clay soils, with the presence of stones. Training system: The vines are guided by the Gullot doble system, although the vines are not held. This system enhances the airing of the vines, avoids the emergence of cliptogamic diseases. Also, a shading cover of the vegetation avoids the direct impact of the sun on the vines. Tasting Notes: Aromas of strawberry, stewed plum, vanilla custard, and baking spice with a bright, dry light-to-medium body and an interesting, medium-long , prune, and bittersweet chocolate finish with well-integrated tannins.

    2010 RELEASE 2010 OUBLIÉ $60 43 % Syrah, 26 % Mourvedre, 16 % Counoise, 15 % Grenache Debuting its third vintage, Oublie brings a vibrant mix of fresh red fruits while still possessing texture, mouth feel and undertones of dried herbs to the palate. The Mourvedre and Grenache give it a balanced structure, while the Counoise brings a sense of freshness. This wine was aged in 80% used French oak barrels in order to not overwhelm its lighter and more graceful style. 2010 REMNANT $50 6 0 % Syrah, 20 % Tempranillo, 11 % Mourvedre, 5 % Grenache, 4 % Counoise Since man or woman cannot live on massive wines alone, Remnant was born. Francophiles, this is your wine! Fermented 50% whole cluster, the Remnant is light yet textural, showing bright red fruits and a tannic finish, revealing its longevity. This wine saw 100% used French oak barrels and was aged for 16 months. Make no mistake though when I say not massive this is still Booker! 2010 RIPPER $65 100% Grenache One of our more coveted wines, the Ripper is a stunner that is not produced yearly. Changing with each vintage, the 2010 is pure Chateauneuf in style with intensely layered red fruit and sweet tobacco. This wine is 100% Grenache, most of which was aged in cement tanks and the balance in used, large format French oak barrels. The Ripper is one of the most pure expressions of Booker Vineyard.     D.O. La Mancha Viña San Juan Merlot Syrah Tempranillo The label on Viña San Juan bottles depicts the bonfires during the celebration of Noche de San Juan (the night of Saint John) at Toledo. Our Viña San Juan exhibits the maximum expression from three grape varieties: Merlot, Syrah and Tempranillo. The resulting coupage is a real pleasure to our senses: sight, smell and taste. This is a perfect wine to enjoy with a wide range of Spanish gastronomic concepts. Region In the former kingdom of Castilla-La Mancha in central Spain, we can find the largest vine-growing area in the world with an endless expanse of 300,000 hectares of vineyard. It is also the stomping ground of Miguel de Cervantes’s famous novel, Don Quixote. The huge area covered by this Denominación de Origen borders Valencia and Murcia to the East, and Extremadura to the West, Andalusia to the South and Madrid to the North-West.     2017 NAPA VALLEY TEMPRANILLO A passion project of Rolando’s, our Tempranillo is a tribute to the Tempranillo wines you often partake of on a local’s table in the Rioja region of Spain. Known as their noble grape it has a similar taste profile to both Sangiovese and Cabernet Sauvignon. STARTING IN THE VINEYARD Record-breaking winter rainfall kicked off the season, filling the water table to capacity and replenishing soils. A mild spring brought bud break at the normal time, and vintners reported small berries with excellent color. A hot summer culminated in a Labor Day weekend heat wave, where the grapes endured the heat and once cooler weather arrived, fruit was able to mature at a gradual pace. At harvest, the fruit came in with excellent color, pronounced flavors and high quality across varieties. TO THE CELLAR Rolando treats this wine just like Cabernet in the cellar. As much tannin and structure as possible is extracted before the wine is aged for 21 months to refine the texture and balance the body. IN YOUR GLASS This wine radiates a dark black cherry-red hue.     Why I like Tempranillo Red Wine After suffering through a pandemic when, for many people, a glass of wine helped them enjoy one of the little indulgences that were to be enjoyed in their own home, we read, "There are three periods in life when people are most at risk from alcohol consumption." It's a real downer to read that Australian scientists have narrowed down the three stages in life when the effects of even moderate alcohol consumption are most harmful: from before you are born, between the ages of 15 and 19, and when over 65 years old. The article goes on to emphasise, "There is an undeniable cumulative effect of alcohol use on cognitive health across the life span." But if you already enjoy a glass of red wine with your evening meal, drinking it in moderation appears to help your heart. Antioxidants in red wine, called polyphenols, may help protect the lining of blood vessels in your heart. A polyphenol called resveratrol is one substance in red wine that's got attention for its health benefits. Any link between resveratrol and fewer heart attacks isn't completely understood, but part of the benefit might be that resveratrol may increase levels of high-density lipoprotein (HDL) cholesterol (the "good" cholesterol) and protect against cholesterol buildup. Resveratrol in red wine The resveratrol in red wine comes from the skin of grapes used to make wine. Because red wine is fermented with grape skins longer than white wine, red wine contains more resveratrol. The study, which is published in the July/August issue of the journal Nutrition, is a follow-up to earlier experiments from the same team that found that drinking 300 ml of red wine a day could contribute significantly to the daily recommended intake of resveratrol.
