Pork and Mussel Cataplana I have a massive soft spot for Portugal in general, and the Algarve in particular. Not only is it a wonderfully welcoming part of the world, the local food is massively underrated. You can get the freshest grilled sardines on toast for a few pounds and the local fresh fish in general is of the very highest quality. Many restaurants also serve what is called a Cataplana. The Cataplana pan itself looks a bit like a UFO and the stews made in it are all about simple ingredients cooked gently. This recipe was created by one of the very fine ‘home cooks’ who join me regularly on the Weekend Kitchen, Christian Carden-Maund. The balance of the pork and mussels here is perfect and the dish is made all the sweeter because this whole lot will cost you under a tenner to feed 4 people. Don’t worry if you don’t own a Cataplana - a normal skillet or saucepan with a lid will be perfect.

1. Brown the cubed pork in the pan on a medium Ingredients heat with a little oil. Add in the onion and the chorizo and continue to cook out for 5 or 6 500g cubed pork shoulder minutes. 150g chopped chorizo 2. Add the tomatoes and a good glug of water and give it a stir. 1 large onion, chopped 3. Simmer for 1 hour, covered, until the pork is very 2 cloves garlic, finely chopped tender. 4. If at this stage it is looking a little bit liquid, turn 1 large tin of chopped tomatoes up the heat to thicken the sauce. Stir in the chopped parsley right at the end and serve with crusty fresh bread to mop up the lovely juices.
