The Raymond family arrived in Napa in 1933 and have become deeply connected to the valley’s winemaking origins. Raymond’s Rutherford and St. Helena estate vineyards are certified organic and biodynamic; and 100% of the winery’s power comes from renewable solar energy. The soils in this vineyard are clay limestone. The hand-harvested grapes were picked when they had reached optimal maturity. They were then destemmed and macerated for 10 to 15 days in temperature controlled stainless steel vats. Frequent pump-overs took place to extract the fruit’s rich aromas, fine tannins and colour. The wine was fermented and aged in stainless steel in order to display the purest expression of Merlot. A dark red colour, delicately threaded with flashes of violet. The Naigeon family has been established in Gevrey-Chambertin for over 150 years. They acquired some vines and started to produce wine in 1890. Pierre Naigeon believes passionately in sustainable farming, without the use of herbicides. He believes in non-interventionist winemaking and aims to produce wines full of fragrance revealing the natural terroir. Florent, who is passionate about innovative winemaking, while honouring traditional values, has recently started working with new tulip-shaped concrete vats which were initially designed for Cheval Blanc and are at the cutting edge of winemaking technology. His grandson bought Château Langoa and part of the Léoville estate in 1826. Current owner Anthony Barton lives in the beautiful 18th century Château Langoa and makes two wines, Château Léoville Barton and Château Langoa-Barton. He now owns 51 hectares of vineyard at Château Léoville-Barton which lie close to the Gironde, sandwiched between the water and Château Talbot. They have a typical St Julien terroir of gravelly soils over deep clay. Plantings are are 74% Cabernet Sauvignon with the remainder being 23% Merlot and 3% Cabernet Franc, reflecting the classic, Cabernet-dominated wine produced in the region. The second wine of Leoville Barton, this traditionally styled Bordeaux has anexpressive nose of forest berries with hints of cedar, coffee and a touch of vanilla spice. We searched for the best of both worlds – a fruit-driven modern style of wine at Joven level and more concentrated, typical flavours in the Crianza and Reserva levels. Carefully selected growers from this area produce the Hugonell Joven. The Ondarre winery, which is located 10km from Rioja’s capital of Logrono, is the specialist division of The Bodegas Olarra Group for producing Crianza and Reserva wines. The Bodegas Olarra Group has worked for years at the forefront of wine producing initiatives and we work closely with Olarra/Ondarre on the Hugonell Crianza and Reserva. This is a classically made Rioja which shows wonderful aromatic complexity of red berries, liquorice and hints of smokiness, cedar and spice oak flavours. NEW ZEALAND Pinot Noir 'Origin', Saint Clair (Marlborough, New Zealand) 313 2017/18 45.83 55.00 The fruit is sourced from a number of specifically chosen low cropping vineyards from the Southern Valleys region of the Wairau Plain. The vines are grown in very clay rich, vigour moderating soils. Each vineyard is closely monitored and tasted to determinewhen the flavours were at their optimum and harvested in the cool of the morning. Aromas of sun-kissed dark berries, boysenberry and freshly picked blackberries, are interlaced with toasted wood notes and a hint of dark chocolate. The palate is full ofsumptuous dark berries, layered with freshly ground coffee beans and dark chocolate. A hint of cinnamon spice leads into a savoury finish.

ENGLAND Bolney Estate Pinot Noir (West Sussex, UK) 322 2018 50.00 60.00 As one of the longest established English vineyards, Bolney Wine Estates have been making award winning wines at their Sussex Estate for over 40 years. The Bolney Wine Estate is located on the edge of the South Downs, about 14 miles from the UK’s south coast, and comprises five unique vineyard sites. The vines were re-planted in 2002-2005, being replaced when they reached 35-40 years of age. One vine produces enough grapes for 1-3 bottles of wine. A fantastic example of a cool climate Pinot. It was Jim Barry’s drive that helped shape South Australia’s Clare Valley as a benchmark producer of world class Riesling and cemented it as one of Australia’spremier wine regions. Named in 2012 as the IWC Red Winemaker of the Year and Wine Enthusiast's European Winery of the Year, he is known locally as the "King" of the Languedoc. The palest of salmon pinks, this is a wonderfully pure, fresh flavoured wine, with vibrant fruit aromatics. Whispering Angel Rosé, Château d’Esclans, Côtes de Provence (Provence, France) 420 2018 54.17 65.00 Chateau d’Esclans is located on an exceptional site, on elevated land near the Gorges de Pennafort, twenty five kilometers northwest of the ancient Roman city of Frejus on the Mediterranean coast. The first traces of the château’s site date back to Gaullist times during which its location served as a lookout point to spot intruders coming by boat into the Gulf of Frejus. The château’s cellar structure or foundation (known today as the oldest in the region) housed an original Château that was given by the Comte de Provence to Gérard De Villeneuve, in 1201. The current chateau, inspired by Tuscan Villa design, was built during the mid 19th century. Caves d’esclans identifies vineyards, grapes and wines from château d’esclans as well as local growers to make what has reputedly become the world’s greatest rosé.

DESSERT WINE Essensia Orange Muscat, Quady (USA) 375ml 457 2016 34.33 41.20 Andrew Quady's change of career from making fireworks to making wine produced an explosion of its own kind when he created Essensia from the Orange Muscat grape. It was an instant success and until 1985 he could not make enough to satisfy demand. Now Quady is the foremost American winery specialising entirely in dessert wines and continues to win medals worldwide. Vibrant orange in colour, this wine delivers luscious sweet oranges and apricots on the palate. The bittersweet orange marmalade notes balance well with the zesty citric acidity. Château Suduiraut, Castelnau de Suduiraut, Sauternes (Bordeaux, France) 375ml 458 2008 49.58 59.50 The history of Château Suduiraut, in Sauternes, goes back centuries. After the total destruction of the property by the Duke d'Epernon in the 1600's, Count Blaise de Suduiraut replanted the vineyard and restored the estate to its former glory. The château is a superb example of 18th century architecture. Aristocratic, classical, and bright in style, the Château is surrounded by charming gardens designed by Le Nôtre. The quality of this First Classed Growth is the result of the unflagging attention devoted to its crafting. Extremely low yields foster the concentration of sugars. Each vat is stringently selected. Castelnau de Suduiraut is their second wine and no less care is taken in its production. This elegantly rich wine shows orange peel and mineral notes on the nose. The palate is full bodied with almonds, spice, honey and candied fruits through to a lovely, lingering finish.

Having studied oenology at Beaune and Dijon, Bertrand Minchin acquired his first vineyards in the village of Morogues over 20 years ago, planting them with eight hectares of Sauvignon Blanc and seven of Pinot Noir. Today with an established reputation for quality, the estate has doubled in size to 17 hectares in Menetou-Salon and a further 14 in Valençay. The modern winery incorporates the latest technology and Bertrand is hand-crafting wines that are easily on a par with the finest Sancerre. Rich aromas of grapefruit and citrus are complemented by fresh mineral notes and delicate floral highlights. Mâcon Villages, Domaine Guillot-Broux (Burgundy) 703 2017 48.33 58.00 Domaine Guillot was the first Burgundy domaine to be organically farmed, during the early 1950s when Pierre and Jeannine Guillot, began working vineyards which had been abandoned during the outbreak years earlier. Their son, JeanGerard took over in 1978 and together with his wife Jacqueline Broux, they established the modern day Domaine Guilllot Broux. It was officially certified organic in 1991. Jean-Gerard was formerly a winemaker in Meursault a factor which has influenced the controlled oak ageing which takes place at the Domaine today. The 17 hectare estate is now run by the third generation, brothers Emmanuel and Patrice. Emmanuel is the head winemaker, a position he returned to in 2000 after a distinguished career as a Sommelier in London and at the Michelin starred L’Ortolan, Reading. The Guillot brothers focus on showcasing the diversity of the Mâcon terroir. Suitable for vegetarians and vegans. Bourgogne Chardonnay, Domaine René Monnier (Burgundy) 717 2016/17 63.33 76.00 "Domaine René Monnier is one of the largest privately owned domains in the region. Founded in 1723, the domain is now in the hands of the tenth generation, with all the wines being skilfully made by Xavier Monnot. Suitable for vegetarians. Chablis 1er Cru Fourchaume, Domaine Jean Goulley (Burgundy) 706 2016 70.83 85.00 Domaine Jean Goulley was formed in 1986 by Jean Goulley and is now run by his son Philippe. The family own 4.5 hectares in the Premier Cru districts which are the heart and soul of the domaine. They own approximately 18 hectares in total and produce around 11,000 cases a year. In 1991 the domaine became one of the very first certified organic producers in Chablis. All of the vineyards are farmed organically and the wines are produced with restricted use of sulphur. Philippe believes the organic farming methods permit an expressive and sustainable soil. Their wines are mineral, pure and lively. Suitable for vegetarians and vegans. Montagny 1er Cru Les Burnins, Château De Chamilly (Burgundy) 708 2015/16 77.50 93.00 Château de Chamilly is situated in the appellation of Bourgogne Côte Chalonnaise, between the Côte de Beaune to the north and the hills of the Mâconnais to the south. The Château was purchased by the Desfontaine family in the 19th century and the vineyard was then expanded to include several blocks of first growth land in Mercurey. The estate has been handed down through the generations and since 1999, the 16 hectare estate has been run by Véronique Desfontaine and her sons, Xavier and Arnaud. They studied viticulture and gained experience in Australia and New Zealand respectively. There is a strong focus on quality, while maintaining utmost respect for the vineyard. It is managed following the principles of 'la Lutte Raisonée', or sustainable agriculture and farmed using organic preparations. In the 19th century Château de Rouillac was owned by Baron Haussmann, who produced a delicious wine which is said to have delighted Napoleon III. The current proprietor Laurent Cisneros and his family took up the reins of this magnificent property in 2009, passionately championing sustainable and environmental practices. The property has had a long association with horses and possesses beautiful stables; Titan their huge and impressive horse is still used today to plough the exceptional gravel soils in the vineyard. Renowned oenologist Eric Boissenot produces wines which are delicately blended with the utmost precision to reveal their optimum expression. The family owns 60 hectares of vineyard in three of the classic growing areas - Langhe, Monferrato and Gavi and have access to a further 50 hectares through long-term relationships with their growers. Michele has insisted on total quality since his first vintage in 1956, an ethos which his sons Stefano and Alberto adopt today. The Chiarlo style is highly elegant, they make complex wines that can age for decades but above all reflect their provenance - some of the finest vineyard sites in Piedmont. The vineyards were planted on the orders of the Roman Emperor Charlemagne. Planted solely with Riesling grapes in 1720, Schloss Johannisberg was the world's first Riesling Estate and plays a significant part in wine history. It was here in 1775 that the Spätlese quality was discovered using late picked grapes suffering from ""noble rot"". Following this discovery, in 1787 the estate gave Auslese, Beerenauslese and Trockenbeerenauslese to the wine world. Fleurie, Château Grand Pré (Beaujolais) 804 2017 47.50 57.00 The Château de Grand Pré comprises a beautiful 18th Century castle complete with vaulted cellars, a "lieu dit" vineyard and an eight hectare family domain in the Beaujolais region. The winery is located in the heart of Fleurie where they own six hectares of vineyard, with a further two hectares in the village of Morgon. When Louis and Renée Bertrand bought the domain in 1972, the vines were old and the cellars were in ruins. They took the estate in hand and gave it a new lease of life, replanting and rebuilding. Today it is run by their children Guy and his wife Annick; Christine and her husband Claude Zordan and their grandson Romain Zordan. The name Saint Damien for the domaine was introduced in 1979. Four generations have worked on this family estate since 1821. In 2013 Romain joined his father on the estate. John-Lewis Brown bought the vineyard in Cantenac at the beginning of the 19th century and built a traditional Tudor style château reminiscent of his Scottish origins. The estate quickly passed out of his family but his name will be forever linked to the château. Today Cantenac Brown has 42 hectares of sustainably cultivated vineyard located in the heart of the Margaux appellation, principally in the southern commune of Cantenac. Since then, numerous family members have played a role in the history of Bordeaux. In 1964, Jacques de Pichon, Baron de Longueville, married the daughter of Pierre de Rauzan, who created the estate. Their descendants were thereafter much involved with the property of Pauillac. Raoul de Pichon-Longueville built the current Château in 1851. His family lived there until 1933. In 1987, AXA-Millésimes acquired the estate. The new owners completely restored the Château and installed ultramodern wine making equipment. A lovely, lightly perfumed nose with the appealing fruit aromas of blackcurrant andnotes of cedar, minerally gravel and violets. The fruit in the mouth is forward and surprisingly powerful. Château Lynch Bages, 3eme Cru Classé, Pauillac (Bordeaux) 822 2010 208.33 250.00 Château Lynch-Bages, just outside Pauillac, owes its name partly to the very ancient hamlet of Bages where it is situated. The other half of the name comes from the marriage of Thomas Lynch to the daughter of the owner in 1749. The property was sold a few times but the name was re-established by the Cayrou brothers in 1862 and has remained unchanged ever since. The estate has been owned by the Cases family since the eve of world war II. Château Ducru Beaucaillou, 2ème Cru Classé, Saint-Julien (Bordeaux) 831 2010 287.50 345.00 Château Ducru-Beaucaillou is a St-Julien property that today is one of the leading Super Seconds. It is owned by the Borie family and is situated in the south-east of the St-Julien appellation. Ducru-Beaucaillou's 50 hectares of vineyards (Cabernet Sauvignon 65%, Merlot 25%, Cabernet Franc 5% and Petit Verdot 5%) lie on deep, large-stone gravel beds enriched with alluvial soil deposits and with a high clay content. The wines are matured in oak barriques (50-60% new) for 18 months. The 2010 has massive concentration and is held together with such fine tannins, beautifully coating ripe and zingy black fruit, making it feel and taste ethereal. It also has a sensational finish which highlights this wine’s incredible potential to be a modern legend and a true contender for ‘wine of the vintage’; it could also be the greatest Ducru ever made! Château La Conseillante, Pomerol (Bordeaux) 832 2009 295.83 355.00 Jean-Michel Laporte describes his 2009 as “a real Conseillante” – soft, silky, long and sopisticated. We completely agree; this is superb. The wine brims with elegant damson fruit, an intriguing note of eucalyptus and wave upon wave of multi-layered complexity. A higher than usual addition of Cabernet Franc in the blend (19%) has resulted in beautiful freshness, with ultra-fine tannins and a delicious, crunchy finish. This is clearly one of the top wines of the vintage. Château Mouton Rothschild, 1er Cru Classé, Pauillac (Bordeaux) 833 2010 832.50 999.00 The whole Mouton stable of wines in 2010 were quite simply spectacular, but the Grand Vin itself was otherworldly. With such a majestic nose of deeply concentrated blackberries and cream, it was very hard to drag the glass away to actually taste it. It is exceptionally unctuous, silky, almost with the consistency of single cream. Incredible, ripe, but not overly so, with red and black fruits, and a really dense compote of woodland lushness. The tannins are gloriously wrapped up within the satin creaminess of its dense but elegant body and it has an extraordinary finish of minutes not seconds. Tasting and writing about the First Growths has now become something of an elite treat as we know that there is no chance we shall be able to afford to drink these incredible wines, but if I could afford to drink the best of the best, I’d find it hugely encouraging that they really are the Top Guns of the wine world and really deserve their status. Their expertise in Colheita Ports has established them as the stand out producer of this style. Barros leaves their Colheita Ports to mature in cask until being hand bottled to order. LBV Port, Douro, Barros 197 2013 54.17 65.00 Barros LBV 2013 was produced by the traditional Port method. The grapes were destemmed, crushed and underwent a careful skin maceration in order to obtain the necessary richness, body and fruitiness needed for a Vintage Port. Fermentation took place in vats with constant pump overs during fermentation. Temperatures were controlled and maintained at between 28 to 30°C, until the desired Baumé was reached. Dom Pérignon is named after the famous 17th Century Benedictine Monk who actually did more for still wines in the region, contrary to the myth that he invented Champagne. Very fine aromas of quinine, lemon, lime, minerals and gingery; lightly musky suggestion of yeast autolysis. If you need to reduce numbers and not incur cancellation costs, please ensure you make any changes before the stated deadlines on the order form, after this time the original order will be invoiced. Should you wish to open the box after the deadline has passed we will endeavour to accommodate your order but this cannot be guaranteed. Please note we are unlikely to be able to provide items from our enhancements menu at this stage. BOX NOT IN USE If you are not planning to use your box on a race day, please notify us by filling out the front page of the order form with the box number and writing "Box not in use" in the address section. DIETARY REQUIREMENTS We are aware that some of your guests may have special dietary requirements. To make the ordering process easier for you we have provided alternative dishes suitable for vegetarian, plant based and gluten free diets. Please indicate on the order form how many of your party require these alternative dishes. These dishes will be substituted for the appropriate number of standard covers ordered. Please ensure that you order the main menu for the full amount of people dining and NOT the number minus the vegetarians. MENUS Bespoke menus start at entry level cost, and will be approved and costed by our catering team. All menus must be ordered for a minimum of 80% of the party, this includes bespoke menus. When ordering for your party please bear in mind that each single box has a maximum capacity of guests for each specific menu: Maximum capacity for a Buffet menu in a single box is 18 guests (excluding level 6 boxes where the maximum capacity on a buffet is 14) Maximum capacity for a Sit Down menu is 12 guests (excluding level 6 boxes where the maximum capacity for a Sit Down menu is 10 guests) Menus are to be served as designed by 1711 by Ascot, under no circumstances are Sit Down menus to be served as a Buffet, or Buffet menus to be served as a Sit Down Meal. All boxes must order a main menu. ENHANCEMENTS We regret that Boxholders are not able to choose exclusively from the enhancements section. These dishes may only be added to your selected menu choice. BOX GIFTING SERVICES We can arrange a wide range of services for you from tipsters to Ascot Bet For further information on a comprehensive range of guest services please contact the 1711 by Ascot boxes team. Boxholders are able to send in their own personalised gifts and should contact [email protected] to arrange delivery to the Racecourse, one week before the day. Box Gifting Services will arrange for the gifts to be delivered to your box on the day We regret to inform you that under no circumstances are balloons allowed in the boxes. STANDARD BAR, DRINKS PACKAGES AND LIQUOR STOCK PROCEDURES A standard bar selection will automatically be placed in your box and can be restocked throughout the day as required. Details of the standard bar contents can be found on the Bar Selection Page. Spirits are charged by the measure and all drinks within the standard bar are charged on a consumption basis. If you wish to enhance the range of spirits available please choose from the bar selection list and detail your requirements in the relevant section on the order form. We will be closing down all bar stocks at the end of each day and will require a signature to verify the closing stock to avoid complications. Please note, failure to sign the stock sheet at the end of the day will be seen as an acceptance of the calculated closing stock. SPECIALITY WINES Any speciality wines must be ordered as full cases and will be charged for in full. Anything not opened on the race day can be taken off site following prior approval with the the 1711 by Ascot boxes catering team. ADDITIONAL CHARGES Any bespoke request may incur a staffing charge, which will be quoted on an individual basis. Please note the staffing charge is £170.00 + VAT per 1 member of staff. PAYMENT PROCEDURES Annual Box Account Holders If you have a credit account with us and invoice payments are up to date, you will be invoiced after the race meeting. If your account is in arrears, you will be contacted by our Accounts Team and payment of outstanding arrears must be collected before the order is processed. Box sub-lets and Non Account Holders On placing your order for catering within a box, our Accounts Team will contact you prior to the meeting to take payment. A deposit for the full cost of the food, wines and additions will be taken along with a £30 plus VAT per person deposit. Payments & Queries Cheques should be made payable to Ascot Racecourse Limited. Queries regarding account payments can be answered by the accounts team who can be contacted on 0344 346 3625 or by email at [email protected] ON THE DAY INFORMATION Please note there will be no facilities to pay on the day. Additional items ordered on the day will be invoiced post event. This includes vegan, vegetarian options or alternative dishes due to dietary requirements that have not been ordered in advance. Under no circumstances is food or drink to be brought into or removed from the boxes. This includes food & beverages purchased elsewhere on site, or off site. Should a party wish to bring a celebration cake on site on special occasions they must obtain an authorisation letter from Ascot Racecourse which can be requested by emailing [email protected]. Guests are welcome to take their bespoke flowers from the box at the end of the day, however all containers and vases must remain in the box. Any vases removed will be invoiced for post event WEATHER CANCELLATION POLICY If the booking is made in conjunction with a race meeting which is subsequently cancelled, Ascot Racecourse Limited may cancel the Booking. If Ascot Racecourse Limited cancels the booking because of a race meeting cancellation then Ascot Racecourse Limited may (at Ascot Racecourse Limited's sole discretion): Offer a reasonable alternative date and/or venue Reimburse any sums paid in respect of the booking Please note if the race meeting cancellation occurs after the guest has entered the box at the event then the provisions of this clause shall not apply and all charges shall be retained by Ascot Racecourse Limited. SECURITY Please be sure to remove all personal property when leaving the premises. We cannot be responsible for any lost or misplaced property left unattended.
