Memorial Day Appetizers! Loaded Baked Potato Dip

[ 2 C (16 ozs) reduced-fat sour cream, 2 C shredded reduced-fat cheddar cheese, 8 center -cut bacon or turkey bacon strips-chopped & cooked, 1/3 C minced fresh chives, 2 tsps. Louisiana-style hot sauce, hot cooked waffle-cut fries ]

In a small bowl, mix the first five ingredients until blended; refrigerate until serving. Serve with waffle fries. Makes 2-1/2 cups.

Creamy Taco Dip

1 pkg. (8 ozs.) fat-free cream cheese-softened, 1/2 C (4 ozs.) fat-free sour cream, 1/2 C taco sauce, 1 tsp. ground cumin, 1 can (15 ozs.) fat-free refried beans, 1 C shredded let- tuce, 1 C shredded fat-free cheddar cheese, 1 medium tomato-diced, 1/4 C chopped ripe olives, 1/4 C chopped green chilies, Tortilla chips ]

In a large bowl, beat cream cheese & sour cream until smooth. Stir in taco sauce & cumin; set aside. Spread the refried beans over the bottom on a serving platter or 13 x 9- in. dish. Spread cream cheese mixture over the beans, leaving about 1 in. uncovered around the edges. Top layer with lettuce, cheese, tomato, olives & chilies. Serve with tortilla chips. Serves 20.

Fresh Fruit Salsa

[ 1 C chopped peeled mango, 1 C diced honeydew melon, 1 C unsweetened pineapple chunks, 1 C chopped sweet red pepper, 2 large kiwifruit-peeled & chopped, 1/2 C chopped red onion, 1/4 C minced fresh cilantro, 1 T cider vinegar, 2 tsps. lime juice, 1 tsp. chopped jalapeno pepper, 1/2 tsp. salt, 1/4 tsp. white pepper, Tortilla chips ]

In a large bowl, combine all ingredients. Refrigerate until serving. Serve with tortilla chips. Makes 5 cups. Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

This Week: The Home of Julia Ward Howe ~ Boston, Massachusetts Author of "Battle Hymn of the Republic"

Julia Ward Howe (1819-1910) was a reformer & writer, most famous for authoring "Battle Hymn of the Republic." Howe became interested in social causes, particularly abolitionism & women’s suffrage. Although her husband disapproved of her working outside the home, he relied heavily on her contributions as a writer & editor for the Boston Commonwealth, the daily newspaper of the Boston Emancipation League for which he was the publisher. She was the first woman elected to the American Academy of Arts and Letters, an honorary society begun in 1904 which chooses the most exceptional artists, writers, and composers in America & was then considered the highest recognition. The Howes live for many years after their marriage at "Green Peace", a house which no longer stands, in South Boston. Thereafter they lived at a number of Boston addresses, of which 13 Chestnut Street is the most significant. The National Park Service states: "The Howe House was home to humanitarians and abolitionists Julia Ward Howe & Samuel Gridley Howe (1801-1876) during an extremely exciting period in their lives, 1863-1866. The house, a four-story brick row house with Georgian elements, is one of three adjoining “Swan Houses” built by a wealthy widow for her daughters. In 1863, while in Washington, D.C., with her husband, a prominent director of the newly named Perkins Institution for the Blind, Julia Ward Howe composed a poem to the cadence of “John Brown‟s Body” & called it the “Battle Hymn of the Republic.” Reportedly, the poem's moving words caused Abraham Lincoln to cry & subsequently brought Julia Ward Howe immense recognition. Before writing the poem, Howe was active as an abolitionist. Later, after seeing the goals of the abolitionist movement fulfilled, she took up the cause of women‟s suffrage. Throughout their stormy marriage, Julia & her husband made contributions to many humanitarian causes. It was said of Julia Ward Howe that in the last third of the 19th century, “no movement or „cause‟ in which women were interested, from suffrage, to pure milk for babies, could be launched without her.” Howe was the first president of the New England Women Suffrage Association, a pivotal figure in the Branch of the Women‟s Belle Fleur Floor Suffrage Association & the first president of the American Branch of the Women‟s International Peace Association, peace being a cause to which she devoted the bulk of Lamp in Vintage her attention for many years. Two of Julia‟s daughters, Laura Elizabeth Howe Rich- Bronze ards & Maude Howe Elliott enjoyed prominence as authors and activists. Julia Ward Howe is buried in Mount Auburn Cemetery in Cambridge."
