2 cups coconut sugar Preheat the oven to 350F. 1 1/2 cups extra virgin olive oil In a large mixing bowl, whisk together the 3 eggs sugar and oil. Add in the eggs and vanilla and 1 tsp vanilla continue to whisk. 3 cups spelt In a separate medium bowl mix together the 1 tsp salt flour, salt and cinnamon. Slowly add these 1 tsp cinnamon “dry” into “wet” bowl and continue to whisk 1/2 cup , crushed until fully combined. Fold in the and 4 apples, sliced thinly walnuts. ** **If you want to do an apple design on top, layout the apples at the bottom of the springform in two layers (I used a parchment paper cut out in the perfect round shape first and put the apples on too) then fold in the rest of the apples into the batter. I used a 9 in springform pan to cook up this batter. Bake 1 hr - 1 hr and 15 min (or toothpick comes out clean) I got the bit of gooey center by baking for 1 hr but to fully bake - go a little longer.
