A DAY IN PINK AT THE LINC As you hopefully know already, October is Breast Cancer Awareness Month (which is why we decided to make this edition of the BEV is pink). For the past six seasons the Philadelphia Eagles have been promoting the Eagles Tackling Breast Cancer campaign. The goal of the campaign is to raise awareness and funds for breast cancer care and research, with all donations going towards the Jefferson Breast Cancer Center. At today’s game and all month long we will be celebrating how much we have accomplished in our goal so far, as well as continuing to spread the word. Wearing pink is definitely encouraged! How can you help? By creating awareness to all guests visiting Lincoln Financial Field and letting them know why today is special. Anyone who wants to contribute can purchase Tackling Breast Cancer memorabilia or give a donation at merchandise locations throughout the stadium. All donations earned will go towards the Jefferson Breast Care Center.

BON APPÉTIT FROM ARAMARK SUITES DEPARTMENT By: Susan Hayslip Guests come to Lincoln Financial Field to watch a great game of football. While they are here, all of us want to give them an awesome experience regardless of what happens on the field. It starts with the parking attendants, ushers and security. Once in the building we at Aramark want to contribute by offering a wide variety of food and beverages that our guests can enjoy dur- ing the game. Since I work in the suites department, I will share some of the great things going on in the suite level.

We come up with new items every season to keep it interesting for the suite holders that have a suite for multiple years. Of course we offer the stadium fare like hot dogs, buffalo wings and Italian sausage but we also like to treat our guests to items that you would see on a restaurant menu. Our luscious Shrimp and Crab claws platters or Pan Seared Scallops are great seafood options and the Braised Short Ribs and Carved Tenderloin of Beef are perfect for the meat lovers.

Some of the new items this year are the Applewood Smoked Turkey Sandwich; sliced turkey breast, crispy bacon, Monterey jack cheese, red onions, leaf lettuce, and herb mayonnaise, served on grilled flatbread and the chicken cutlet hoagie which includes breaded chicken cutlet with broccoli rabe, sharp provolone cheese, and roasted red peppers, served on a three-foot hoagie roll.

By partnering with the local farmers, growers, ranchers, and producers we have access to the best available ingredients and a network of suppliers who share our A GO GREEN! UPDATE dedication to sourcing sustainable menus. For example the mushrooms used in the Wild Mushroom Cannelloni come from the Moser Mushroom Farm (Kennett Tons & Tons of Recycling Square, PA). How do I go about saying goodbye to a game day staff who has been such an integral part of my career? After careful considering, I’ve decided that I won’t. Instead of saying goodbye, I would like to say THANK YOU… FOR YOUR SUPPORT as I learned and grew from a 22 year old intern just starting out to my dream job of running the Guest Services department in the . FOR PUTTING UP WITH ME when I called on Christmas to activate snow removal team captions, when I put you in the cold November rain and told you to welcome our guests warmly, when I begged you to wear a cowboy hat and help me wristband 12,000 people. FOR YOUR DEDICATION to our mission of providing a safe, clean and friendly environment for all our guests and team- mates. FOR MAKING ME SMILE each and every event. Even if I had been awake for +24 hours, even if it was my 20th day of work in a row and even when I had a broken foot and had to hobble around for an entire NCAA Lax weekend – your smiles are what I counted on to keep me moving ahead. FOR BEING YOU and letting me be a part of a job that you love and the Philadelphia Eagles team you are so passionate about. As difficult as it is, I am excited to move on with the Cancer Treatment Centers of America at Eastern Regional Hospital in Phila- delphia. My new mission will be to welcome each patient and family into an integrative and compassionate team focused on one single goal: winning the fight against cancer. The Philadelphia Eagles and Lincoln Financial Field is and will always hold a huge piece of my heart. I cherish all the relationships I’ve made here and have many great memories. I wish you all the very best and never forget to enjoy the game!

BIRDS EYE FOOD: Barbeque Chicken Flatbread By: Chef James Hennessey Key Players for Chicken Spice & ing, smoke with hickory chips for 10 min- 2 T. extra virgin olive oil Marinade (Ingredients): utes then grill until an internal tempera- 1 t. dried oregano 1 T. fennel seed ture of 160°F. Coat with 1/2 cup of barbeque 6 oz smoked mozzarella 1 T. anise seed sauce (recipe follows). 6 oz smoked cheddar 1/2 T. black pepper corns Key Players for Barbeque Sauce Game Plan 3: 1 t. smoked paprika (Ingredients): Marinate the red onions with the red wine 1/2 t. cayenne pepper 1 cup ketchup vinegar, olive oil and oregano. Reserve. Kosher salt, to taste 1/8 cup red wine vinegar Spread 2 T. of the barbeque sauce onto 4 boneless chicken breasts 1/8 cup of coffee each of the grilled flatbread dough. Top 1 cup red wine vinegar 2 T. Dijon mustard each flatbread with a 1/3 of the cheeses, Game Plan 1: 2 T. Frank's hot sauce 1/3 of the barbeque chicken and place on Toast the fennel, cumin, coriander, anise 2 T. Worcestershire sauce the grill. GIANTS 9.25.11 Eagles Television Network (ETN) received three Emmy Awards honors this past weekend. They won awards for Best Live Coverage of a Final Attendance: 66,914 Sporting Event, Best Sports Program Series, and Best Photographer/ Cinematographer. Doug Interrante also received individual honors for exceptional work as a cinematographer.
