It has easy recipes to replicate the taste of a number of Singapore favorites such as Chai Tow Kway, Roti John, Otah, Beef Rendang, Tauhu Goreng, Sayur Lodeh, Sambal Kangkong, Bak Chor Mee, Nasi Lemak, Mee Siam, Goreng Pisang, and Chicken Rice, among others. Y-U-M !!!The book thoughtfully includes very helpful chapters for the novice cook that makes everything so much less intimidating: Kitchen 101 explains in simple terms how to choose meats, fish, fruit and vegetables while the Fridge and Pantry List suggests the basic items needed for the recipes. Other topics cover which dishes and trays are safe to use in the microwave and which for the oven, the essential equipment in setting up a kitchen, and conversion tables to make the recipes doable whether one lives in Metric Land or Imperial Kingdom.Another thoughtful feature: the cover of the book has a special coating to repel spills and stains!This is a wonderful addition to my cookbook library and I highly recommend "Mum's Not Cooking: Favourite Recipes for the Near Clueless or Plain Lazy". Cut the beef into 4 cm squares, half cm thick. Do not cut the beef too small as the meat can break into smaller pieces during cooking. 2. Blend all the ingredients in (B), set the blend aside. 3. Remove the green section and the outer sheath of the lemongrass. Use only the white portion. Bash them so that the lemongrass to ensure the release of the flavor. 4. Heat up the vegetable oil in a wok. Saute the spice paste (B) over low heat until aromatic. 5. Add the coconut milk and lemongrass into the wok. 6. Add the beef and cook over medium heat. Bring the coconut milk to a boil. 7. Once it is boiled, continue simmer over low heat. Add water from time to time when the stew is about to dry.

It is mainly originated from the Malay culture being the largest ethnic group in the country. The Malays themselves have contributed to many local cuisines ranging from appetiser, soup, main course and dessert. However, some Malay heritage foods have almost been forgotten and jeopardized in quality. This is especially happening to the Malay sweets or desserts which have gradually become less appealing to the younger generations. They are not even familiar with Malay foods, let alone consuming them. Among the popular Malay heritage foods in Malaysia are lemang, ketupat, rendang, wajik and dodol. Dodol specifically has been listed as one of the endangered heritage foods in Malaysia. Preserving the Malay cuisines is part of sustaining the Malay culture and this should begin with a great amount of knowledge and understanding about any elements within the culture itself. This article highlights a nostalgic and evergreen Malay’s traditional sweet, known by the locals as dodol by discussing its history, different types and names of dodol, as well as the recipes, preparation, cooking methods and packaging.
