THE DECONSTRUCTED FALAFEL SALAD

Falafels are the perfect plant-based morsel FOR THE LEMON TAHINI and a family favorite. However, in this salad, 1/3 cup tahini I’ve dismantled perfection and discovered a new, delicious way to enjoy the feted flavors of Juice of 1 lemon, plus extra if needed falafels—chickpeas, cumin, parsley, mint, and 1 garlic clove, very finely chopped tahini. The crispy oven-roasted chickpeas are nothing short of incredible, and I encourage you Sea salt and black pepper to try roasting all types of beans in this manner. Preheat the oven to 425 degrees F.

SERVES 4 For the crispy roasted chickpeas, place the drained chickpeas in a small ovenproof dish. Upside Down In the winter of 2017, Valle began to ex- perience debilitating pain in the femur of her left leg. The doctor initially thought it was a type of benign tumor, and Valle was recom- mended to go through non-invasive sur- gery. However, after one procedure, the pain came back. After a second surgery, the pain came back. The family would go from doctor to doctor to get answers. After a year of this ordeal, Valle finally received the correct diagnosis—Ewing sarcoma, a rare type of pediatric bone cancer. She was just 19 years old. “It was a very difficult thing to hear, but at the same time I know in the back of mind that there was always this possibil- ity,” said Valle’s father, Giovanni Valle. “We both knew, at that moment, that the most important thing was just being sup- portive, and helping her get through it in whatever way we could.” Chiara Valle after it all worked out,” Chiara said.
