The concept of the OOP focuses on reducing administrative burden for individuals and businesses by re-organising public sector internal processes, instead of making citizens and business users adjust to existing procedures. It is based on the assumption that collecting information is more expensive and burdensome than sharing already collected information. Hence, this principle proposes to collect information only once and then share this information, respecting other constraints, such as regulations. So far, many European Union countries have started to implement the once-only principle at a national level, while its cross-border implementation is still fragmented and limited to a very few services. Crete was once the center of the Minoan civilization (c. 2700–1420 BC), regarded as the earliest recorded civilization in Europe. In addition to birding, we will explore several famous archeological sites, including Knossos and ancient Phaistos, the most important centers of Minoan times. Crete’s landscape is very special: defined by high mountain ranges, deep valleys, fertile plateaus, and caves (including the mythological birthplace of the ancient Greek god, Zeus) Rivers have cut deep, exceptionally beautiful gorges that create a rich presence of geological wealth and have been explored for their aromatic and medicinal plants since Minoan times. Populations of choughs, Griffon Vultures, Lammergeiers, and swifts nest on the steep cliffs. A fantastic variety of birds and plants are found on Crete: not only its resident bird species, which are numerous and include rare and endangered birds, but also the migrants who stop over on Crete during their journeys to and from Africa and Europe. The isolation of Crete from mainland Europe, Asia, and Africa is reflected in the diversity of habitats, flora, and avifauna. The richness of the surroundings results in an impressive bird species list and often unexpected surprises. Cheese is an excellent and complex food matrix that preserves in concentrated form valuable milk constituents, such as proteins, minerals, vitamins, and biofunctional lipids. The formation of cheese mass requires the removal of whey, i.e., water and soluble milk substances—proteins, minerals, lactose, and vitamins—. According to Fox and McSweeney [1], cheese is the most diverse group of dairy products manufactured from a few kinds of milk by means of a protocol that is more or less common in respect to the first 24 h of manufacture. They suggest that cheese is the most interesting and challenging dairy product due to an inherent instability that results from a series of biochemical changes. Whey is the valuable byproduct derived from the cheesemaking process. Lactose and whey proteins are the main compounds of whey and the main reasons for its valorization, through the production of whey cheeses, functional/nutritional whey proteins concentrate, bioactive peptides, and oligosaccharides [2,3]. In the present article collection, two publications for the Parmigiano Reggiano cheese are included. Considering the demanding cheese making conditions and the long-term ripening of this cheese variety, relevant studies are of particular importance. Franceschi et al.
