Discover how the King of all cheeses has been made in the same way since the benedectine monks invented it centuries ago: you'll first see the the hand making, then the salt pools and finally the "wheel cathedrals", real walls of cheese in a single room. Every wood gives the balsamic vinegar a special colour, taste and flavour and you will discover them all!

PROGRAM:  In the morning: visit to the amazing brand new museum dedicated to Enzo Ferrari in Modena; The space dedicated to Enzo Ferrari, rather than a museum in the traditional sense of the word, is a fascinating, exciting event that manages to combine truly unique elements: in the futuristic 2,500 m2 pillar-free hall visitors can get up close and personal with the many cars exhibited, but also experience a show that – through an immersive biopic screened using 19 projectors – tells Enzo Ferrari’s incredible life story, spanning 90 years, taking them through his various incarnations: from the child who discovered racing at the beginning of 1900 to the pilot, from the manager of Scuderia Ferrari through to the manufacturer with so many triumphs to his credit.

The counter-piece to this injection of pure emotion is the "Museo dei Motori Ferrari", housed in the painstakingly renovated workshop where Enzo’s father used to work: a history within a history that enables visitors to understand why Ferraris are such unique cars.

 The first stop will be to visit the most famous castle of the area: Torrechiara. Walking through the narrow roads of this medieval village, dominated by the homonymous castle, will be an unforgettable experience.

 To follow: guided visit of a real producer of the most famous Italian ham, Prosciutto di Parma PDO. You'll discover the reasons why it can be made only in this part of Italy thanks to the wind that comes from the Ligurian Sea called Marino.

 09.00 am: Meeting on site with a local host and visit to an authentic cheese dairy of Parmigiano-Reggiano PDO. We have selected a historical producer that started the activity back in 1846, one of the few of the Consortium that has the full production cycle : grass – cows – milk – cheese. Discover how "the King of all cheeses" is made in the same way since centuries ago like the Monks who invented it. You'll see the "making of" it by hands, the salt pools and the "wheel cathedral", a big ageing room with real walls of cheese: sometimes up to 20.000 in the same place!

 10.30 am: Transfer to the Province of Reggio-Emilia to admire a real “Acetaia” with its ancient barrels of Traditional Balsamic Vinegar PDO. You'll learn the difference between the "black gold" and the balsamic condiments that you usually find in the supermarkets. Discover how the King of all cheeses is made in the same way since centuries ago whren the Benedectine monks invented it.  11.00/11.15 am: visit to a unique farm with own fruit and vegetable cultivations and own breeding of an ancient type of black pigs. You will learn how the real farm to table concept works!

 To follow: be welcome at Antica Corte Pallavicina, a medieval court where you’ll admire a brand new Museum of Culatello di Zibello PDO. Learn about the history and the making of this amazing product in a dedicated educational room and then go discover the aging cellars dating back to the XIII century, where the king of the cured meats Culatello di Zibello PDO rests for years.  This once-in-a-life-time experience will take you to the Italian Food Valley, where the most famous and delicious Italian typical products are made. You'll be picked up at your hotel or Bologna train station by our guide and driver for this exciting and unique small-group tour.

 First you will visit a Parmigiano‐Reggiano DOP producer. The secret of such goodness originates in the place of origin, in the natural feed, and in the high quality milk with no additives. During the long aging process, natural fermenting agents in the milk give the cheese its particular flavor and texture, in other words, its typicality. The verb “to make” is absolutely correct in this case because Parmigiano‐Reggiano cheese is not just manufactured, but “it is made” today as it was made eight centuries ago, using those same typical and genuine ingredients: the precious milk from the area of origin, fire, rennet, the expertise of old methods and the skill and knowledge of cheese masters. The visit to the diary will be followed by a tasting.

 Then you will visit a Prosciutto DOP producer. One of the earliest references to ham production in our region appeared about 100 BC in the writings of Cato, who described the practice of burying pork legs in barrels filled with salt. The visit at the producer’s will conclude with a delicious Prosciutto tasting!!!

 Have you ever heard about Italy’s black gold? We are talking about the traditional balsamic vinegar which is produced only in the areas of Modena and Reggio Emilia. The families of the area have always been very proud of their production of Balsamic Vinegar, and have a set of barrels in the attic as a seal of ancient family traditions, if not a confirmation of noble family roots. Born centuries ago as a medicinal of exclusive use of kings and emperors, it has found its place in the kitchen as a product of excellence. Welcomed in a private property we will taste this special traditional balsamic vinegar and learn family recipes and secrets!

 Enjoy a wine tasting in the most famous cellar of the territory. You will tour the winery and explained how grapes are picked, crushed, blended and bottled. You’ll walk through beautiful vineyards with the winery sommelier and then taste the finished product.
