The company is run by myself, Kushal Duggal and my wife Vinita with some assistance from our children. As a little boy, I was often found helping my granny in the takeaway in Moss blown and two years later bought a kitchen where I learned traditional skills and recipes used fish and chip shop in the centre of Ayr. Vinita worked in by my family. At the age of eighteen, I was invited to Dubai Asda which gave retail experience that would later prove by my uncle to work at his Indian restaurant where I honed invaluable in their dealings with major supermarkets. my culinary skills further. Indian Rice Pilaf Type: Main/side Serves: 30 tastes Recipe source: Taste.com Fresh from the garden: onion EQUIPMENT: INGREDIENTS: Knife ¼ cup water Chopping board 1 can chicken broth Whisk 1 cup long grain rice Bowls 1/8 t paprika Wooden spoon ¼ t cinnamon Measuring cups & spoons ½ t garlic powder 2 pinches ground cloves 1 small onion What to do: 1. Food Memories of Migrant Women
FOOD MEMORIES OF MIGRANT WOMEN Mumbai Mobile Creches FOREWORD India’s construction industry depends upon migrant workers who have moved from rural to urban areas, alone or with their families, each looking for better opportunities and a more sustainable livelihood. The wives who accompany them are likely to work as well, at the construction site or elsewhere, leaving their children to fend for themselves during the day. With migration, many of these women leave behind the secrets of their regional cuisine, carrying only the memories associated with their food with them. Sadly, their stories often remain untold and unwritten. Mumbai Mobile Creches (MMC) intends to bring some of these food memories alive and capture the wonderful, culinary heritage through a compilation of treasured recipes. MMC is a four decade old non- profit organisation, and was founded in 1972 with the belief that all children have the right to a safe, happy and healthy childhood. Its mission is to cater to the needs of those children living on constructions sites, aged between 0 to 14 years, by running day care centres on - site that facilitate the comprehensive development of each child. We continue to be the only NGO in Mumbai working with these migrant children, and have been implementing comprehensive on- site education and healthcare programmes for the past four decades. Currently, the children at our day care centres hail from over 15 different states in India, reflecting the regional diversity of the migrant construction workers’ community. We wish to capture this cultural multiplicity, and the migrant perspective, through documentation of several regional recipes from across India. -

Ulundhu Kali / Uluntangali / Urad Dal Halwa – South Indian Recipe Ulundhu Kali / Uluntangali is a South Indian traditional delight. This traditional sweet is specially given to teen girls when they attain puberty mainly because as it strengthens the pelvic bones and muscles. This sweet is made of super nutritious ingredients like urad dal (Protein), palm jaggery(Iron) and gingelly oil (Vitamin E). You can have this healthy and nutritional dish for breakfast or as snacks. Good for adults and kids. Ingredients 3/4 Cup of Urad Dal (White) 1 and 1/4 Cup of Palm Jaggery 1/4 Cup of Gingelly Oil Pinch of Salt 1/2 Cup of water or as needed Method Grate the palm jaggery and keep it aside. Dry roast the urad dal lightly, let it cool for sometime. In a pan, heat the water, after it boils, add the palm jaggery , let it be in the flame until jaggery melts and stir it occasionally. Once it done, turn off the flame Powdered the urad dal finely or rava consistency using mixie or spice grinder. Using tea strainer, strain the jaggery syrup to get rid of impurities. In a medium flame, add the Jaggery syrup to the same pan, add a pinch of salt, bring it to a boil, add urad dal powder little by little and stir well to avoid lumps. Add oil little by little and keep on stirring until the mixture leaves the sides of a pan. Serve hot or cold with a tsp of ghee. Make a small balls, in the center, add a tsp of ghee. -
