Merchant Fine Dining Menu (Pdf Welcome Yannis Baxevanis, our well known Consultant Chef here in Elia, has been passionately working for many years in making Cretan cuisine known to people from all walks of life. As an award winning Chef in Greece and abroad, he has been renowned as Status Magazine’s Chef of the year, and as the 2006 Global Gastronomy Academy’s Chef of the Future. Years of practice and expertise has led him to receive multiple awards in the scope of Greek cuisine. Chef Baxevanis, in turn, presents the great cook of Crete, Kalliopi Kourkoutaki, his golden coat as he calls her, bring you closer to the most cherished Cretan tradition. Cretan cuisine is the basis, beginning and end of the so-called Mediterranean cuisine. In Crete, scientific research has been carried out to find out the reason why they had the fewest heart disease problems. Therefore, Cretan cuisine is considered to be among the healthiest diets in the world. The Cretan cuisine is mostly comprised of the wild greens from the mountains, Cretan Olive Oil, pulses and cereals, fish and herbs as well as lemons where antioxidants are mostly found. As you go along, you will find herbs that are being currently used in our recipes. In this interview she discusses her extended family in Al- exandria, her school years, cooking Greek-inspired Italian food, running her family's res- taurant, and the aftermath of the Turkish invasion of Cyprus. Her son John (Johnny) also talks about his mother's experience as an immigrant and adds his own thoughts on the situation in Cyprus and growing up in a bi-cultural household. In this study, we present a dietary intake assessment and a nutritional characterization of pre-packed graviera products sold in the Greek market using Nutri- Score Front of Pack Label (FoPL). The nutrient contents of 92 pre-packed graviera products were combined with daily individual consumption data extracted from the Hellenic National Nutrition Health Survey (n = 93), attempting to evaluate the contribution of graviera’s consumption to the Greek diet. The analysis of nutrients’ intake as a Reference Intake (RI) percentage ranked saturated fat first on the nutrients’ intake list, with RI percentage ranging from 36.1 to 109.2% for the 95th percentile of consumption. The respective % RI for energy, total fat, carbohydrates, sugars, proteins and salt ranged from 12.7–20.7%, 21.6–50.4%, 0–3.1%, 0–6.1%, 37–57.1% and 6.3–42%.
