Baguettes Crispy crusted, with creamy centers deeply flavorful from sourdough’s tang, these baguettes make amazing . ¾ cup (170g) lukewarm water 1 cup (227g) ripe (fed) sourdough starter 2 ¾ to 3 cups (330g to 360g) Organic French-Style 1 tablespoon Instant Sourdough Flavor 1 ¼ teaspoons salt 1 teaspoon ½ to 1 teaspoon SAF instant yeast, depending on the vigor of your starter 1 teaspoon Vital Wheat Gluten

Combine the water, starter, and 1 ½ cups (180g) of the flour, mixing until smooth. Stir in the sourdough flavor, salt, sugar, yeast, gluten, and an additional 1 ¼ to 1 ½ cups flour. Stir until the pulls away from the sides of the bowl, adding additional flour only as necessary. The dough should be sticky and somewhat slack. Knead the dough for about 7 minutes in a stand mixer. Turn the dough into a greased bowl, cover, and let rise until doubled, about 90 minutes. Deflate the dough and divide into 3 equal pieces, weighing about 250 grams each. Gently round the pieces of dough, cover and let rest on the counter for 15 minutes. After this rest, roll the dough into 15" long baguettes, and place in the greased wells of your Baguette Pan, seam side down. Alternately you can refrigerate the unbaked loaves overnight and bake the next morning. Toward the end of the rise, preheat the oven to 450°F. When the dough has risen, uncover the pan and give each loaf five quick diagonal slashes with a sharp blade and spray lightly with water. Bake for 20 minutes, 25 if they were chilled overnight, until deep golden brown. Remove from the oven and tilt out of the pan to cool the completely before slicing. Yield: three 15" baguettes.
