Pineapple Cranberry Zucchini Bread

What You Need Directions 3 eggs • Preheat oven to 350 degrees. 2 c shredded zucchini • In a large bowl, combine eggs, 1 c vegetable oil (can use zucchini, oil, pineapple and 1/2 coconut oil melted & vanilla extract. 1/2 veg. oil) • In a separate bowl combine the 1 can crushed pineapple, dry ingredients. 8 oz, drained • Add the dry ingredients to the wet 2 tsp vanilla extract ingredients. 3 c flour • Fold in nuts, cranberries and 1 3/4 c sugar coconut (if desired). 2 tsp baking soda • Pour into 2 greased 8x4” loaf pans 1 1/2 tsp cinnamon or 3 small loaf pans. 1 tsp salt • Bake larger pans for approx. 1/2 tsp baking powder 50-55 mins and smaller pans for 1 c chopped nuts 35-40 mins or until golden brown (macadamia or pecan) and inserted toothpick comes out 1/2 c dried cranberries clean. 1/2 c coconut (opt) • Cool for 10 mins before removing bread from pans onto wire racks.
