Ek het my liefde vir kook by my Ma geërf. Sy kon die heerlikste kos kook. Die boerpampoen was uit die boonste rakke. Tot vandag weet ons nie hoe sy dit gaargemaak het nie. Sy het later jare Alzheimer gehad en het baie keer vergeet of sy sout, suiker of speserye in die kos gegooi het. Ons het nogal partykeer kos gekry wat te sout of te soet was. Haar laaste paar maande op die aarde, was sy in ʼn inrigting gewees. Wanneer ons haar gaan besoek het, het sy nie geweet wie ek is nie, maar sy het altyd gevra kan ek vir julle kos maak. Ma Ies Lombard So paar jaar gelede sit ek en wonder waar kom kos vandaan soos bv. Hamburgers. Sekere disse, kossoorte het ʼn interessante begin en ek hoop julle geniet die reis saam met my. Maar kos gesels sal ons hier doen. Dit is my visie om hierdie ʼn lekker kos gesels rubriek te maak. Geen kos rubriek sal volledig wees sonder om te kyk na die oorsprong van kos nie. Wanneer ons kyk na die oorsprong van kos moet ons gaan na die Bybel. Dit bevat die vroegste verwysings na kos en die kookkuns. Reg aan die begin van Genesis sien ons dat op die derde dag die plante aan ons gegee is. Op die vyfde dag is die seediere aan ons gegee. Diere is aan ons gegee op die sesde dag. Die eerste opdrag aan die mens was om te eet van al die bome in die tuin van Eden. So kan ons dan aflei dat Adam en Eva aan die begin van vrugte geleef het. Hoe wonderlik kon dit nie gewees het nie om elke dag vars vrugte te eet nie. Vrugte wat behoorlik op ʼn organiese wyse gekweek is. Vrugte wat nie weke of dalk maande gelê het om met chemiese stowwe ryp gemaak te word nie. Indien ons verder gaan kyk na Kain en Abel sien ons dat Abel ʼn veeboer was en Kain ʼn saaiboer was. So die oudste beroepe wat bestaan het is boerdery. Aan die begin van die skepping was dit al ʼn edele beroep en vandag is dit nog so. Daar word egter nie verwys na wat hulle geëet het nie. Met verwysing na die sondvloed kom daar ʼn ander aspek na vore en dit is wyn. Noag was die eerste boer in die geskiedenis wat ʼn wingerd geplant het. Hy het van sy eie wyn gedrink en dronk geword. Die vroegste verwysing na ʼn ete, of soos ons vandag seker sal se ʼn spyskaart kom in Genesis 18 voor, waar Abraham 3 besoekers gekry het. Daar het hy aan Sara toe gegaan en aan haar 16 kilogram meel gegee met die opdrag om dit te knie en roosterkoeke te bak. Vader het hy na ʼn slaaf gegaan ʼn kalf gegee en vir die slaaf gesê hy moet die kalf voorberei. Nadat die kalf voorberei was het Abraham die kalf met botter en melk na die 3 mans geneem om te eet. ʼn Ander interessante byvoegsel tot die vroeë mense se dieet is sop. Hierdie kom uit die welbekende verhaal van Esau en Jakob. Wat hier verder ook genoem word is die eerste verwysing dat die mens wildsvleis begin eet het. ʼn Hele paar jaar na Esau en Jakob se bestaan het die vroeë volk al vleis gebraai. Dit kan gesien word met die opdrag wat aan hulle gegee is met die instelling van Paasfees. Hulle moes een jaar oud lammers neem hulle slag en dan braai. Die opdrag aan hulle was "Julle moet dit gebraai eet, saam met ongesuurde brood en bitter kruie. Julle moet dit nie rou of in water gekook eet nie, maar oor die vuur gebraai, met die kop, pootjies binnegoed en al." Hierdie opdrag bring by my ʼn klompie vrae op soos Het hulle vleis rou gee-eet op ʼn stadium? Was dit hulle gewoonte om hulle vleis in water te kook? Onthou hier dat hulle al die vleis moes eet wat hulle gebraai het. Dit laat ʼn lekker lang gril hier teen my ruggraat afgaan as ek net dink aan die kop en pootjies. So sien ons dan dat die mens begin het om vrugte te eet en namate die tyd gevorder het, het hulle oorgegaan na graan en vleis. Toe ek so ʼn bietjie navorsing gedoen het, het ek gesien dat die mens daardie tyd lank geleef het en baie hoë ouderdomme bereik het. Nou kom die vraag op was die grootste rede nie dalk hulle dieet nie. Was dit nie dat hulle in die meeste gevalle rou en organiese voedsel eet-eet het nie? Moet ons nie dalk terugkeer na ʼn meer growwe en natuurlike dieet nie? My Pa was ʼn slagter van beroep, hierdie was sy gunsteling vers in die Bybel: 1 Kor 10:25 "Alles wat in ʼn slaghuis verkoop word, kan julle eet sonder om ter wille van die gewete navraag te doen." Hierdie aanhaling het altyd gevolg nadat ek nie afval wou eet nie. Pa Jan Lombard Terug na Indeks DIE ETE Kersfees Dit is nou al amper weer daardie tyd van die jaar waar ons voorbereidings begin tref vir Die Ete van die jaar. Die ete wat ek hier van praat is natuurlik ons Kersete. Ek het so gesit en dink waar kom al die tradisies en die baie eet vandaan. Daarom het ek gaan kyk waar kom Kersfees vandaan. Met Kersfees vier ons die geboorte van Christus. Eeue gelede was die dag nooit gevier of herdenk nie. In die jaar 274 AD het die Romeinse Keiser Aurelian Desember 25 verklaar as Natalis Solis Invicti, wat nou vir ons gewone mense maar net beteken die fees van die geboorte van die onoorwinlike son en wat ʼn heidense gebruik was. In die jaar 354 AD het ʼn man genaamd Philocaluas ʼn Christen geskryf wat die geboorte van Jesus plaas op 25 Desember. Hy het ouer werke aangehaal om sy punt te bewys. Sedert die jaar 355 AD is daar bewyse dat die kerk van daardie tyd Kersfees gevier het. Ander bronne beweer dat Kersfees op 6 Januarie gevier is volgens die Julian kalender. In 1734 toe daar oorgeskakel is na die Grigorian kalender is daar finaal besluit op die 25ste Desember. Daar word beweer dat Pous Julius I die 25 ste Desember gekies het as Kersdag om ʼn teenkanting te bied teen die Pagan’s se fees Natalis Solis Invicti. Kersvader of te wel Santa Claus Santa Claus of te wel Kersvader gaan eindelik oor die lewe van Saint Nicholas. Hierdie man was ʼn Roomse Biskop in die 4de eeu in Asia. Soos die storie gaan het Saint Nicholas eendag anoniem ʼn sak goud deur ʼn skoorsteen gegooi om ʼn man se dogter te help om haar bruidskat aan te skaf. Hy het ook so die tweede dogter gehelp. Met die derde dogter word hy uitgevang. As erkenning van sy goedhartigheid het die mense begin om geskenke deur skoorstene te gooi.

This year’s theme for World Salt Awareness Week is “Look out for Hidden Salt”. Many people unfortunately don't realise they are eating too much salt. The World Health Organisation recommends that adults eat less than 5g of salt (one teaspoon) per day. However, a reduction of salt intake by just two grams a day will reduce your risk of cardiovascular events by 20%. Thanks to efforts by the food industry, governments and health organisations like World Action on Salt and Health (WASH), salt is well and truly on the health agenda across many countries worldwide.

Okpechi3* Abstract Background: The multi-racial and multi-ethnic population of South Africa has significant variation in their nutritional habits with many black South Africans undergoing a nutritional transition to Western type diets. In this review, we describe our practical approaches to the dietary and nutritional management of chronic kidney disease (CKD) patients in Cape Town, South Africa. Discussion: Due to poverty and socio-economic constraints, significant challenges still exist with regard to achieving the nutritional needs and adequate dietary counselling of many CKD patients (pre-dialysis and dialysis) in South Africa. Inadequate workforce to meet the educational and counselling needs of patients, inability of many patients to effectively come to terms with changing body and metabolic needs due to ongoing kidney disease, issues of adherence to fluid and food restrictions as well as adherence to medications and in some cases the inability to obtain adequate daily food supplies make up some of these challenges. A multi-disciplinary approach (dietitians, nurses and nephrologists) of regularly reminding and educating patients on dietary (especially low protein diets) and nutritional needs is practiced. The South African Renal exchange list consisting of groups of food items with the same nutritional content has been developed as a practical tool to be used by dietitians to convert individualized nutritional prescriptions into meal plan to meet the nutritional needs of patients in South Africa.
