Serine or anthranilic acid was used at the concentrations of 0.1, 0.25, 0.5, and 0.75 g/L of medium. Determination of indole compounds in the obtained biomass was carried out using thin-layer chromatography (TLC) with densitometric detection. In every analyzed sample, presence of serine or anthranilic acid was studied. Comparison of the results obtained for the treatment and control samples allowed us to determine the optimum concentration of serine or anthranilic acid in the medium in order to obtain biomass with increased content of indole compounds. A. bisporus with addition of anthranilic acid or serine to the medium at the concentration of 0.5 g/L was the most beneficial. In the case of Imleria badia, anthranilic acid at the concentration of 0.5 g/L was the most optimal. This is the first report demonstrating the content of indole derivatives in biomass affected by their precursors (serine or anthranilic acid). The study indicates that modification of the medium can provide satisfactory results, and it is worth to search for its new, improved compositions.

The research was conducted on 10 species of mushrooms belonging to three families: Boletaceae, Russulaceae, and Suillaceae. Using a spatial autoregressive model, the study showed a strong relationship between heavy metal concentrations (especially Zn, Pb, and Cd) and the distance from a source of industrial pollution (a zinc smelter, Huta Miasteczko Sl´ ˛askie).The concentrations of potentially toxic metals (Pb and Cd) in mushrooms significantly exceeded food-acceptable standards.

In the 1830s, some academic mycologists started information campaigns to teach people about edible mushrooms. This propaganda met with sturdy resistance from rural people. Even at the beginning of the last century, mushrooms were still only being occasionally eaten, and mostly by the gentry. During the twentieth century, the Swedish urban middle class accepted mushrooms as food and were closely followed by the working-class people. A few individuals became connoisseurs, but most people limited themselves to one or two taxa. The chanterelle, Cantharellus cibarius Fr., was (and still is) the most popular species. It was easy to recognize, and if it was a good mushroom season and the mushroomer was industrious, considerable amounts could be harvested and preserved or, from the late 1950s, put in the freezer. The aim of this study is to review the historical background of the changes in attitude towards edible mushrooms and to record today’s thriving interest in mushrooming in Sweden. Methods: A questionnaire was sent in October and November 2017 to record contemporary interest in and consumption of mushrooms in Sweden. In total, 100 questionnaires were returned. The qualitative analysis includes data extracted from participant and non-participant observations, including observations on activities related to mushroom foraging posted on social media platforms, revealed through open-ended interviews and in written sources.

Available online: 28 May 2020 at www.potravinarstvo.com © 2020 Potravinarstvo Slovak Journal of Food Sciences, License: CC BY 3.0 ISSN 1337-0960 (online) 137Cs ACTIVITY CONCENTRATION IN MUSHROOMS FROM THE BOBRŮVKA RIVER VALLEY Petr Dvořák, Jana Doležalová, Katarína Beňová, Martin Tomko ABSTRACT A total of 505 mushrooms belonging to 9 species were collected in the 2017 and 2018 mushrooming seasons near Dolní Rožínka in the Bohemian-Moravian Highlands and analysed by gamma spectrometry for 137Cs activity. The greatest 137Cs activity of 575 Bq kg-1 was detected in the species Boletus edulis, which is just below the permitted limit in its native state. In contrast, the detected activity level was only 316 Bq kg-1 in the mushroom Imleria badia, which is reported to be associated with the highest cumulative capability of all fungi species. However, differences in mean contamination values were not significant (p <0.05) due to high variability. It was shown that activity concentration is not dependent on the weight (size) of Imleria badia. Our results also confirmed the generally well known lower 137Cs activity in Russula species belonging to the group of gill-bearing or lamella-bearing mushrooms.
