One of the most popular Korean dish Galbi jjim(Braised short ) is served when im- portant guests visit or eaten on holidays like Korean anksgiving day or Lunar New Year. Galbi-jjim always reminds people of special occasions or holidays, when family members are brought together.

Ingredients

700g Beef Shorts Ribs (7cm) 60g 50g Pak Choi 30g Scallion 20g Carrot 50g Brussel Sprouts 10g Enoki Mushroom 10g Shiitake Mushroom 30g Egg 10g Ginkgo Nut 10g Lotus Root 2g Pine Nut 1ea Jujube 5g 20g Oyster Mushroom

Instructions 1. Soak the beef ribs in cold water for at least 30 mins to draw out the blood from the meat. 2. Boil water in a pot. Put in the to boil 5-10 minutes. 3. Put ribs and Galbi Jjim sauce in Ziplock bag and cook it using Sous-Vide method for 3 hours. 4. Grill tofu and cut brussel sprout into bite size. 5. Cut pak choi, scallion and lotus root into bite size. Prepare carrots, shiitake mush- room and oyster mushroom. 6. Prepare Enoki mushroom by cutting the bottom 7. Make Poached egg 8. Put all prepared vegetables and Sous-Vide cooked beef ribs on a frying pan and boil with Galbi Jjim sauce. 9. Transfer Galbi Jjim to a plate and put poached egg and jujube on the top.
