Ricotta Bougatsa (Greek Breakfast Pastry)

What’s lovely about this breakfast treat is that it can be prepared a day in advanced and baked Christmas morning. Ricotta Bougatsa (Greek Breakfast Pastry)

1 cup (8 oz) whole milk ricotta Heat oven 350F. Line a baking sheet with parchment. In small cheese bowl, combine ricotta cheese, 2 tablespoons sugar, flour, 2 tablespoons plus 1 teaspoon sugar, lemon zest vanilla and egg yolk; blend well. In another small divided bowl, whisk or beat egg white and salt to stiff peaks; fold into 1 tablespoon all purpose flour ricotta mixture and set aside. Lay 1 phyllo sheet on work sur- 1 teaspoon grated lemon zest face with short end toward you; brush with butter. Top with a 1/2 teaspoon vanilla second phyllo sheet; brush with butter. Fold in half with two 1 egg, separated short ends meeting each other; brush with butter. Spoon 1/4 1/8 teaspoon salt cup of ricotta mixture over center of dough. Fold longer sides 12 sheets phyllo dough, covered with over filling, brushing with butter. Fold in sides to meet in the damp paper towel middle forming a parcel. Brush with butter and place on baking 1/4 cup melted butter sheet. Brush top with butter. Repeat with remaining phyllo, but- 1/4 teaspoon cinnamon ter and filling to make 5 more parcels. Mix remaining teaspoon 1/2 cup honey of sugar with cinnamon and sprinkle over parcels. Bake 30 2 tablespoons lemon juice minutes or until golden and crispy. Let stand 5 minutes before 1 cup fresh berries serving. Meanwhile, combine honey and lemon juice in small 1 container plain Greek yogurt saucepan over medium heat, stirring just until warm. Arrange bougatsa on individual serving plates. Top with syrup, berries and dollop of Greek yogurt. Serves 6. sampleNote: unbaked parcels may be made night before, covered with plastic wrap and refrigerated. Bake as directed above in the morning. VF18 190

Smokin’ Spice Dark Chocolate Cookies

Delicious with a cold glass of milk or a fine port. Smokin’ Spice Dark Chocolate Cookies

1 1/2 cups all purpose flour Heat oven 350F. In mixing bowl, sift flour, cocoa powder, bak- 1/2 cup unsweetened cocoa powder ing powder, spices and salt; set aside. In bowl of stand mixer, 1 1/2 teaspoons baking powder using the paddle attachment, cream butter and sugar until 1/4 teaspoon each ground cinnamon, light. Add egg, orange juice, zest and vanilla; blend well. Add ground cloves, grated nutmeg and dry ingredients; mix well. Using a cookie scoop, drop batter on salt to ungreased baking sheets. Bake 10 minutes. Cool on pan 1 1/2 cup unsalted butter minute before transferring cooking to rack to cool completely. 1/2 cup sugar In microwave or on stovetop, melt chocolate chips with heavy 1 egg cream, stirring, until smooth; stir in corn syrup. Spread choco- 2 tablespoons fresh orange juice plus 1 late mixture over tops of cookies. Top each cookie with a whole teaspoon grated zest almond or sprinkle with chopped nuts. Makes about 30 cookies. 1/2 teaspoon vanilla 1/2 cup semisweet chocolate chips 2 tablespoons heavy cream 2 teaspoons corn syrup 30 whole smoked almonds or 1/2 cup choppedsample nuts
