    Shrimp Remoulade Source: Chef Paul Prudhomme’s Louisiana Kitchen Prepared: June 2018 by Laura Lutz Makes: 6 Appetizer servings Make the Remoulade Sauce several hours ahead or, preferably, two to three days before serving. It keeps several days refrigerated and improves with time. 3 cups Basic Seafood Stock or water 2 bay leaves ½ teaspoon white pepper ½ teaspoon onion powder ½ teaspoon garlic powder ½ teaspoon dry mustard ½ teaspoon ground cayenne pepper ½ teaspoon black pepper ¼ teaspoon dried thyme leaves ¼ teaspoon dried basil leaves 1 ½ pounds unpeeled shrimp, without heads 1 ½ cups Remoulade Sauce 6 large bowl-shaped lettuce leaves 2 cups very thinly shredded lettuce 1 ½ small tomatoes, cut in to 12 wedges 12 black olives 6 large sprigs parsley Combine the stock or water and the seasonings in a large saucepan. Bring to a boil; reduce heat and simmer 3 minutes. Turn heat to high and add the unpeeled shrimp. Cook uncovered over high heat for 3 minutes. Immediately drain the shrimp and refrigerate. When cool, peel shrimp and then chill well. In a medium size bowl, combine the chilled shrimp and the Remoulade Sauce. For each serving, place a lettuce leaf on a salad plate and mound about 1/3 cup shredded lettuce in the center; top with 6-10 shrimp. Garnish each salad with 2 tomato wedges, 2 black olives and a sprig of parsley.     CREOLE MUSTARD DIPPING SAUCE 15 Servings INGREDIENTS: ½ Cup prepared Creole mustard ½ Cup spicy brown mustard 1 tsp lemon juice 1 tsp prepared horseradish PREPARATION: Stir all ingredients in a medium mixing bowl until thoroughly incorporated. PESTO BRUSHCETTA FLATBREAD 4 Servings INGREDIENTS 4-5 roma tomatoes cored, seeds taken out and med dice ½ red onion sm dice ¼ cup prepared pesto ¼ cup prepared balsamic vinaigrette 1 package of crumbled feta salt and pepper to taste 4 flatbreads(multigrain) PREPARATION: Preheat oven to 400 degrees F. Combine all the ingredients but the feta and the bread into mixing bowl and mix thoroughly. Place foil on 2 large baking sheets and divide the flat bread evenly not overlapping each other. Spread the tomato mix evenly on the all the flat breads you’re going to be baking. Sprinkle generously with feta cheese. Bake for 12-15 min until crispy. Let rest 5 min before cutting into each flatbread unto about 8 slices. Serve hot or room temp for up to 4 hours. SPICY WHITE BEAN DIP 6-8 Servings INGREDIENTS 1 14-ounce can cannellini beans, rinsed and drained 1 clove garlic (cracked from skin) 1 1/2 tablespoons extra-virgin olive oil (EVOO) 4 sprigs fresh mint leaves 6 sprigs fresh thyme leaves, stripped from stem (2 tablespoons) Coarse salt and black pepper 3 tablespoons chives, chopped ¼ teaspoon cayenne pepper (can add more if you want a little extra kick) PREPERATION: Pulse all ingredients except chives in food processor until a smooth paste forms and transfer to a bowl. Garnish with chives sprinkled on top.

    Cajun Egg Rolls with Sweet and Tangy Dipping Sauce Sweet and Tangy Dipping Sauce 1 12-ounce jar orange marmalade 4 tablespoons Creole or brown, grainy mustard 4 tablespoons prepared horseradish Combine ingredients in a medium bowl. Cover and refrigerate until needed. Makes about 2 1/2 cups. Cajun Egg Rolls 1/2 pound andouille sausage, chopped 1/2 pound small shrimp (about 51-60 count), peeled and chopped 1 16-ounce package coleslaw salad mix 1 14-ounce can bean sprouts, drained and rinsed 1 bunch green onions, chopped 2 tablespoon Creole or brown, grainy mustard 1 tablespoon ginger puree* 1 teaspoon Creole seasoning 1/4 teaspoon salt 20 (6 1/2 square) egg roll wrappers Canola or peanut oil for frying FOR EGG ROLL FILLING: Heat oil in a large saucepan over medium-high heat. Add andouille; saute until brown on all sides, about 4 minutes. Add shrimp; cook until pink, 2-4 minutes, stirring frequently. Add coleslaw, bean sprouts and green onions; cook until coleslaw begins to wilt, about 5-7 minutes. Stir in Creole mustard, ginger puree, Creole seasoning and salt. Cover pan; reduce heat to medium-low. Cook until coleslaw is tender, 10-15 minutes, stirring occasionally. Remove pan from heat, drain excess moisture from pan and allow filling to cool.     GGaarrlliicc MMuussttaarrdd……………… AA CCoolllleeccttiioonn ooff RReecciippeess Garlic Mustard and Spinach Raviolis with Garlic Mustard Pesto Developed by Robert Dunn, Executive Chef, Belmont Conference Center Raviolis: 4 shallots / 1 clove garlic 2 cups spinach 2 cups garlic mustard 4 oz. ricotta cheese 2 oz. Parmesan cheese 2 oz. chopped sundried tomatoes 6 sheets fresh pasta Sauté shallots and garlic in 2 Tbl butter until tender. Add spinach and garlic mustard greens & wilt. Season with salt and pepper. Remove from pan and cool slightly. Squeeze excess liquid from green and chop. Combine all ingredients and season to taste. Cut pasta sheets to desired size. Eggwash pasta and fill with garlic mustard and spinach mixture. Pesto: 1 cup garlic mustard 1/2 cup basil 3 cloves garlic 2 oz. toasted pinenuts 4 oz. olive oil juice of 1 lemon In food processor combine all ingredients except olive oil. Puree and add olive oil with processor running. Toss cooked raviolis with pesto. Time required: 1 hr. Serves 10. Garlic Mustard in Lemon Sauce Garlic mustard is a great vegetable, but it must be handled correctly so its intrinsic bitterness is held in check and prevented from running rampant. Stir-frying followed by simmering in a strongly seasoned sauce does the trick. Serve this Asian-flavored side dish with brown rice. 4-1/2 tbs. kuzu or tapioca flour 3 tbs. vegetable glycerin, barley malt, rice syrup, or honey 2 cups water 1/2 tbs. liquid stevia 6 tbs. lemon juice 1/2 tbs. lemon extract 3/4 tsp. salt 3/4 tsp. cloves, ground 3/4 tsp.
