Azerbaijani cuisine is one of the most interesting cuisines in the Caucasus and deservedly enjoys wide recognition. Pilaf with fragrant saffron, juicy kebabs roasted over coals, freshly-caught fish, and sweet fruit and honey for dessert - Azerbaijan’s cuisine is full of flavors and surprises. Hospitality is a large part of Azerbaijani culture, and cuisine is no exception. Food culture is so rich that dolma (stuffed grape leaves) and its central place in Azerbaijani culture and families have been recognized in the UNESCO List of Intangible Cultural Heritage. Many dishes are delicious and healthy, which is why Azerbaijan is a country of centenarians. Beef and mutton are common, as are poultry, fish, fruits and vegetables. Spices include dill, coriander, mint, chives and basil can be found in many of the dishes, giving them full and rich flavors. The result is a wide variety of dishes that are substantial and nutritious, full of familiar and unusual flavors. But don’t think that this is a whole list - there are endless foods to try in Azerbaijan. Whether you want a hearty soup (like piti) or a quick snack (kutab) or something to satisfy a sweet tooth (baklava), you’ll find plenty to explore. And the more you travel around Azerbaijan, the more you’ll discover, since each region (and each cook) has their own recipes that bring out new flavors and delights. It was founded in 1936 in Baku and in 1943 was named after Rustam Mustafayev, a prominent Azerbaijani scenic designer and theater artist. The museum consists of two buildings standing next to each other. The museum's total collection includes over 15,000 artworks. There are over 3,000 items in 60 rooms on permanent display. About 12,000 items are kept in storage. The museum changes the exhibits periodically so that more of these artworks can be displayed temporarily. Baku Boulevard (also known as National Park) is a promenade established in 1909 which runs parallel to Baku's seafront. Its history goes back more than 100 years, to a time when Baku oil barons built their mansions along the Caspian shore and when the seafront was artificially built up inch by inch. The park is about 3 km and 750 m in size and located in south coast of the Caspian Sea. It starts at the National Flag Square and ends at Freedom Square. According to the Azerbaijan Cabinet of Ministers, the boulevard's size is expected to reach 26 km, which will cover areas including Bibiheyb?t and Bay of Baku by 2015. More information click here: http://bulvar.gov.az/en/ Museums and places to visit Highland Park of Baku Highland park, well known as ‘’Viewing Square’’, and earlier in Soviet era as ‘’Sergei Kirov park’’ is one of the most favourite places in Baku to have walk, rest, and enjoy the sea view. There you can take rest by breathing fresh air, viewing the city, drinking tea in the Highland Park Café , while listening to the classic lounge music. It’s the best place to relax, that is located right in the heart of Baku. Tours Icerisheher(Old City) Old City or Inner City is the historical core of Baku, the capital of Azerbaijan. The Old City is the most ancient part of Baku, which is surrounded by walls which were easily defended. In 2007, the Old City had a population of about 3000 people. In December 2000, the Old City of Baku, including the Palace of the Shirvanshahs and Maiden Tower, became the first location in Azerbaijan to be classified as a World Heritage Site by UNESCO. The temple was used as a Hindu, Sikh, and Zoroastrian place of worship. The pentagonal complex, which has a courtyard surrounded by cells for monks and a tetrapillar-altar in the middle, was built during the 17th and 18th centuries. It was abandoned in the late 19th century, probably due to the dwindling of the Indian population in the area.     Walled City of Baku with the Shirvanshah's Palace and Maiden Tower (2000) Baku (Azerbaijani: Bakı), sometimes known as Baky or Baki, is the capital, the largest city, and the largest port of Azerbaijan. Located on the southern shore of the Absheron Peninsula, the city consists of two principal parts: the downtown and the old Inner City (21,5 ha). As of January 1, 2003 the population was 1,827,500 of which 153,400 were internally displaced persons and 93,400 refugees.Baku is a member of Organization of World Heritage Cities and Sister Cities International. The city is also bidding for the 2016 Summer Olympics. Baku is divided into eleven administrative districts (Azizbeyov, Binagadi, Qaradagh, Narimanov, Nasimi, Nizami, Sabayil, Sabunchu, Khatai, Surakhany and Yasamal) and 48 townships. Among these are the townships on islands in the Bay of Baku and the town of Oil Rocks built on stilts in the Caspian Sea, 60 km away from Baku. The first written evidence for Baku is related to the 6th century AD. The city became important after an earthquake destroyed Shemakha and in the 12th century, ruling Shirvanshah Ahsitan I made Baku the new capital. In 1501 shah Ismail I Safavi laid a siege to Baku. At this time the city was however enclosed with the lines of strong walls, which were washed by sea on one side and protected by a wide trench on land. In 1540 Baku was again captured by the Safavid troops. In 1604 the Baku fortress was destroyed by Iranian shah Abbas I. On June 26, 1723 after a lasting siege and firing from the cannons Baku surrendered to the Russians.

(A CASE STUDY OF ARMENIAN RESTAURANTS IN ST PETERSBURG) Evgenia Guliaeva Th e Russian Museum of Ethnography 4/1 Inzhenernaya Str., St Petersburg, Russia [email protected] A b s t r a c t: Using restaurants in St Petersburg serving Armenian cuisine as a case study, the article studies the question of what makes an ethnic restaurant ethnic, what may be learnt about ethnicity by studying a restaurant serving a national cuisine, and to what extent the image of Armenian cuisine presented in Armenian restaurants corresponds to what Armenian informants tell us. The conclusion is that the composition of the menu in these restaurants refl ects a view of Armenian cuisine from within the ethnic group itself. The representation of ethnicity is achieved primarily by discursive means. Neither owners, nor staff, nor customers from the relevant ethnic group, nor the style of the interior or music are necessary conditions for a restaurant to be accepted as ethnic. However, their presence is taken into account when the authenticity or inauthenticity of the restaurant is evaluated. Armenian informants, though, do not raise the question of authenticity: this category is irrelevant for them.
