Savor Simplicity It’s ok to pare down this year’s menu or go in a different direction with your holiday meal planning. A smaller family gathering is a great chance to try something new like a whole salmon fillet or roasted pork tenderloin. If you’re flying solo in the kitchen, consider a one-pan roast with all your favorite root vegetables nestled in Plan ahead alongside the main dish. 5 | The Carrot | Fall 2020 seedlings spotlight APPETITE FOR CHANGE Appetite For Change (AFC) is a dedicated team of educators, growers, guides and leaders using their skills and passions to enact positive change for everyone in the North Minneapolis community and beyond. They are building health, wealth and social change. AFC has been a Seedlings participant several times, most recently in September 2020. Their programming includes community cooking workshops focused on connection and youth-led urban agriculture initiatives at seven community plots that provide produce for the farmers market and community meals. They also operate the West Broadway Farmer’s Market and organize Northside Fresh, a community based coalition committed to building a more self-reliant, just, and connected food system on the Northside.

We hope you were able to see Princess Haley, AFC’s co-founder, speak at the co-op’s annual meeting. She shared a powerful message of how Appetite For Change is supporting North Minneapolis. Amid the uncertainty and change that has come with the spread of coronavirus, Appetite For Change has continued to connect the community and come together around food. They have cooked and delivered over 8,000 fresh meals each week for neighbors and healthcare workers since the beginning of April. These meals are distributed at 11 sites throughout the Northside, 5 across the Twin Cities and 2 hospitals. They have shared over 100,000 meals with neighbors and healthcare workers! AFC operates under the core values of innovation, resilience, integrity and community. The pandemic meant an estimated $1,000,000 loss in revenue for the organization, but they have quickly pivoted. Their urban agriculture initiative sprouted over 2,000 seedlings in greenhouses this spring. These fresh fruits and vegetables are distributed throughout the Northside to our community members, many of whom are disproportionately impacted by chronic health diseases that lead to poorer health outcomes and marked disparities. AFC strives to meet everyone where they’re at, no matter their location, health, or circumstance, unified in the understanding of the long-term effects that uneven resource distribution has on people of color.

Together, we will make it through this. With your continued support, Appetite For Change can persist in building change in our community. One of the ways Eastside partners with Appetite for Change is through our Seedlings program, where shoppers make donations at the register to support local non profits. Our 2021 Seedlings will be announced in the winter issue of The Carrot. Applications for 2022 Seedlings will open in the spring. PUMPKIN WAFFLES

1½ cups all-purpose flour Heat waffle iron. In a large mixing bowl, sift together dry ½ cup cornmeal ingredients. In a medium bowl, combine eggs, milk, oil and 2 tsp baking powder pumpkin puree. Whisk until smooth. Add wet ingredients ¼ tsp cinnamon to the large mixing bowl and stir to combine, a few lumps ¼ tsp ginger are okay. Stir in nuts. Add ⅓-½ cup of waffle batter to your ¼ tsp nutmeg heated waffle iron. Cook according to your waffle maker ½ tsp salt 3 eggs, beaten instructions until crisp and golden. Adjust amount of 1¾ cups milk batter used, if necessary. Serve immediately or keep warm ½ cup vegetable oil in an oven set to 200°F until all waffles are cooked. Serve ¾ cup cooked and pureed pumpkin with butter and maple syrup, topping with additional nuts ½ chopped pecans if desired.

Serves 4 BUTTERNUT SQUASH MAC & CHEESE

1 medium butternut squash, Toss cubed butternut squash with olive oil, place in peeled and cubed a 9x13 glass pan and roast in a 400°F oven until very 1 Tbsp olive oil soft - able to be easily mashed with a spoon - about 90 2 Tbsp non-dairy butter minutes. 2 small yellow onions, diced 1 clove minced garlic Melt butter in a saucepan over medium heat. Stir in blended butternut squash. Add 1 tsp fresh lemon juice more milk if thinner consistency desired. Season with 1 tsp malt vinegar paprika, chili flakes, salt and pepper. 1 tsp smoked paprika ½ tsp red pepper flakes Prepare noodles according to package directions. ½ tsp nutmeg When noodles are nearly cooked, drain in a colander. 1 tsp black pepper Add shredded cheese to sauce. Stir in cooked noodles. ½ tsp kosher salt, or more to taste Enjoy! 10 oz vegan cheddar cheese, grated 1 lb pasta of choice Serves 8

Beat the butter in a stand mixer for 1 minute until smooth 10 Tbsp unsalted butter, and creamy. Add the brown sugar and molasses and beat until fully combined and fluffy. Scrape down the sides and bottom softened to room temperature of the bowl as needed. Next, beat in egg and vanilla for 2 full ¾ cup packed brown sugar minutes. ⅔ cup molasses 1 large egg, at room temperature In a separate bowl, stir together remaining ingredients. Slowly 1 tsp vanilla extract mix dry ingredients into the wet ingredients. Dough will be 3½ cups all-purpose flour thick and sticky. Wrap tightly and pat into discs. ½ tsp salt Refrigerate 3 hours. 1 Tbsp ground ginger ½ Tbsp ground cinnamon After chilling dough, heat oven to 350°F. Line 2-3 large baking ½ tsp ground allspice sheets with parchment paper or silicone baking mats. Remove ½ tsp ground cloves 1 disc of chilled dough from the refrigerator. Generously flour a work surface, as well as your hands and the rolling pin. Roll out disc until ¼-inch thick, adding flour as needed to prevent sticking. Cut into shapes. Place shapes 1 inch apart on prepared baking sheets. Re-roll dough scraps until all the dough is shaped. Repeat with second disc of dough.

Bake cookies 8-11 minutes. Allow to cool for 5 minutes on the baking sheet. Transfer to cooling rack to cool completely. Decorate as desired with royal icing, recipe as follows. The Carrot | Fall 2020 | 12 SNOWFLAKE GINGER COOKIES ROYAL ICING

In a stand mixer, combine egg whites, salt, vanilla, and lemon juice 3 oz pasteurized egg whites or cream of tartar. Beat until frothy. Sift powdered sugar into bowl and mix on low speed until sugar is incorporated and mixture is ¼ teaspoon salt shiny. Turn speed to high and beat until mixture forms stiff, glossy 1 tsp vanilla extract peaks, 5-7 minutes. 1 tsp lemon juice or ¼ tsp cream of tartar Transfer icing to pastry bag or plastic sandwich bag with the tip of a 4 cups powdered sugar bottom corner cut off and pipe as desired.
