Oberthur Primary School student Elyce Chinnery (10) raised $1500 for her family’s memorial fund after having her long locks cut off on Anzac Day, with 45cm-long strands of her hair sent to Variety to make wigs. Roasting a butterflied chicken cuts cooking time and makes the idea of enjoying a mid-week roast appealing. You can get your butcher to butterfly the bird, but if you want to have a go yourself, it’s actually very easy. Place the chicken, breast-side down, on a chopping board and, using sharp kitchen scissors or a knife, cut down either side of the backbone and remove and discard (or save for stock). Turn the chicken over and use the palm of your hand to press down on the chicken and flatten. Serve with roasted spuds.
