Panos Vamvakaris stile di vita mediterraneo 1 cosa è il MedLS alle origini dello stile di vita mediterraneo 2 Cos’è MedLS Il Mediterraneo o Terra di Mezzo è crocevia di popoli, scienze, arti, pensieri, storia. Il nome, come anche la posizione geografica di questo territorio, indica mediazione, equilibrio e uno stile di vita improntato a valori sani, semplici. Piacere e gioia di vivere, tempo per assaporare con calma ogni più piccola emozione. In poche parole, un modo di vivere diverso dal solito. Una visione rinnovata e motivata dalla ricerca di auten- ticità, di esperienze vere, di scoperta. Per attingere alla cultura, al territorio, a persone e gusti che ci apparten- gono e che desideriamo ritrovare con attività che invitano a un ritmo di vita meno frenetico. Lo stile di vita mediterraneo riporta a una dimensione più antica, originaria, di recupero di quei valori fonda- mentali per trovare un senso nella propria esistenza (tradizione/tempo, lentezza, misura, natura/sostenibilità, socialità/contaminazione, emozione). MedLS è un circuito a cui aziende presenti sul territorio locale possono aderire con i loro prodotti e/o servizi diventando così parte integrante di un sistema che caratterizza uno stile, quello Mediterraneo. MedLS è uno stile ritrovato per attrarre un nuovo tipo di turismo. E’ un progetto che si rivolge specificatamente a tutti coloro che desiderano avvalersi di un nuovo approccio al marketing turistico, fondato su un metodo rigoroso, strategie proprie e tattiche fondate su valori tipici della mediterraneità. MedLS è un marchio d’identità culturale e territoriale, improntato a valori antichi e sani. Entrare in Mediterranean Life Style significa beneficiare di un’offerta integrata dei territori del circuito e vocati alla valorizzazione e promozione dello stile di vita mediterraneo. Significa affidarsi ad un sistema turistico e ad un’unica strategia di marketing e comunicazione finalizzata ad intercettare una domanda di turismo ad oggi poco ascoltata. stile di vita mediterraneo 3 alle origini dello alle origini dello stile di vita mediterraneo stile di vita mediterraneo 4 1.1 Alcune note introduttive Dare una definizione esatta di stile di vita mediterraneo non è semplice perché lo stile di vita mediterraneo comprende al suo interno diversi ambiti, antropologici, sociali, geografici; tuttavia si può affermare con ragione che fulcro dello stile di vita mediterraneo è la dieta mediterranea. La quinta sessione del Comitato Intergovernativo dell’UNESCO per la salvaguardia del patrimonio culturale immateriale dell’umanità, il 17 novembre 2010, ha iscritto la Dieta Mediterranea nella sua prestigiosa Lista. Inizialmente dei 166 elementi di cui constava la Lista dell’UNESCO solo 2 erano italiani: l’Opera dei Pupi sici- liana e il Canto a tenore sardo; solo in seguito ad essi si è aggiunta la Dieta Mediterranea. Tale importante riconoscimento consente di accreditare quel meraviglioso ed equilibrato esempio di contami- nazione naturale e culturale che è lo stile di vita mediterraneo come eccellenza mondiale. Il concetto di dieta si colloca all’interno della “Teoria degli Umori”, una concezione dell’organismo che adde- bitava l’insorgenza delle patologie allo squilibrio tra i quattro umori del corpo umano: sangue, flemma, bile bianca e bile nera. Gli umori rispecchiavano i quattro elementi fondamentali di cui all’epoca si credeva fosse composta la realtà (Aria, Acqua, Fuoco, Terra) ed il benessere ottimale dell’individuo veniva fatto derivare pro- prio da una loro integrazione reciproca, all’insegna dell’equilibrio che un bravo medico doveva esser in grado di trovare. Uno dei primi ad occuparsi del rapporto tra salute ed alimentazione e sostenitore della teoria degli umori è stato Ippocrate di Cos, il Padre della Medicina. Secondo Ippocrate “alimenti ed esercizi hanno, in ef- fetti, virtù reciprocamente opposte, ma che contribuiscono insieme a fare la salute. Per loro natura gli esercizi disperdono l’energia disponibile, mentre i cibi e le bevande compensano la perdita” (Ippocrate De dieta I, 1-2). 1.2 Fondamenti storici, antropologici e sociali della Dieta Mediterranea Entrando nello specifico, il termine “Dieta” deriva dall’etimo greco “dìaita” “stile di vita”, cioè l’insieme delle pratiche, delle rappresentazioni, delle espressioni, delle conoscenze, delle abilità, dei saperi e degli spazi cul- turali con i quali le popolazioni del Mediterraneo, nel corso dei secoli, hanno creato e ricreato una sapiente sintesi tra ambiente culturale, organizzazione sociale, universo mitico e religioso riguardo il culto del cibo. stile di vita mediterraneo 5 La Dieta Mediterranea rappresenta, dunque, un insieme di competenze, conoscenze, pratiche e tradizioni che vanno dal paesaggio alla tavola, includendo le colture, la raccolta, la pesca, la conservazione, la trasformazio- ne, la preparazione e, in particolare, il consumo di cibo. La donna in questo senso è l’elemento fulcro della dieta mediterranea, in quanto svolge un ruolo indispensa- bile nella trasmissione delle competenze, così come della conoscenza di riti, gesti tradizionali e celebrazioni, e nella salvaguardia delle tecniche di preparazione, selezione e conservazione degli alimenti. Il concetto di dieta, di dìaita, che venne formulato per la prima volta nella Grecia del V sec. a. C., originaria- mente non alludeva ad un regime alimentare restrittivo, ma ad un insieme di abitudini alimentari e di orga- nizzazione delle ragioni di cibo protratto nel tempo e finalizzato al perseguimento ed al mantenimento di un buono stato di salute; ci si riferiva ad uno stile di vita tendente al benessere psico-fisico dell’uomo compren- dente l’aria, l’acqua, l’habitat (inteso come luogo di ristoro dello spirito e del corpo), l’attività fisica, la qualità del sonno, le deiezioni, la vita sessuale ed affettiva. Parte fondamentale ne è la componente sociale, poiché il pasto in comune è alla base dei costumi sociali e delle festività condivise da una data comunità, e ha dato luogo a un notevole corpus di conoscenze, canzoni, massime, racconti e leggende. La Dieta Mediterranea, infatti, è sempre stata la colonna portante della convivialità, perché lo stare a tavola è stato inteso, fin dall’antichità, come una gratificazione, un concedersi una pausa ristorativa, un momento di socialità beata, un’opportunità di incontro con le persone amate, il piacere, cioè, di condividere allegramente il tempo con altri. Andrew Steptoe, uno degli autori dello studio sulla dieta mediterranea ha dichiarato “La felicità è fortemente le- gata alle buone relazioni sociali, e forse sono cose come queste ad essere responsabili del legame tra felicità e salute”. Questo concetto che la felicità allunga la vita è confermato dalla scienza, infatti uno studio condotto dall’Uni- versity College di Londra e firmato dallo stesso Andrew Steptoe e Jane Wardle, pubblicato sulla rivista Pnas, ri- vela che essere felice abbassa il rischio di morte precoce del 35% rispetto a chi invece è infelice e insoddisfatto. alle origini dello stile di vita mediterraneo Già nella cultura greca emerge con grande evidenza l’importanza della commensalità e dei rituali connessi con il mangiare e bere, tanto che si configura come una delle più importanti forme di socializzazione e fa parte integrante dell’organizzazione politico-sociale della polis. Le attività connesse al concetto di commensalità, presso i Greci, hanno tutte una grande valenza sociale, dal banchetto al simposio, dai rituali dell’ospitalità alle feste, sia civili che religiose, tutte vengono ritualizzate, 6 tanto che la partecipazione ad esse manifesta il senso di appartenenza del gruppo ad una stessa comunità in un’esperienza di piacere e di festa che include sia gli uomini che gli dei. Nei poemi omerici tutto il mondo greco è strutturato secondo i riti della commensalità, l’Iliade è incentra- ta sull’ira di Achille che si manifesta soprattutto nel rifiuto di partecipare al pasto comune. Nella Grecia, ma anche nella Magna Grecia del V sec. a C. il rituale della commensalità si esprime attraverso la separazione delle attività connesse con il cibo, cioè il banchetto (deipnon), da quelle connesse con le bevande, il simposio (sympósion), secondo precise abitudini rimaste immutate nel tempo. Era diffusa la pratica di mangiare sdra- iati secondo un’usanza mutuata probabilmente dal mondo fenicio; i commensali mangiavano semi-sdraia- ti su letti conviviali (klinai), appoggiati al braccio sinistro, sostenuto da alcuni cuscini. I servi disponevano davanti ai letti piccoli e bassi tavolini (trápezai) su cui erano collocati i piatti con le vivande. Durante il pasto vero e proprio non si serviva vino, non si usavano

A sustainable food system also encourages local production and distribution infrastructures and makes nutritious food available, accessible and affordable to all.
