Revival of ancient varieties has become one of the important components for our development and we are continuously working a lot in this direction. We cherish traditions, but don’t fear experimenting, searching for new tastes and imple- menting new technologies. Thanks to this approach, we have created new wines from smaller vineyards that have unique terroir. Contributing to the global winemaking, yet step by step we create our signature style. Legend would have been just a good story if not for the great grandfather of the Askaneli’s, Anthimoz Chkhaidze. There in the winery vault built by him lays a pitcher dated 1880.

    A COMPARATIVE STUDY OF TASTES AND PREFERENCES FOR LOCAL AND FOREIGN WINES IN BULGARIA Petyo Boshnakov University of Economics – Varna, Bulgaria [email protected] Abstract: On the base of semantic differential instrument we assess the main factors in wine demand attitudes of Bulgarian customers. We aim to find out whether specific marketing techniques could alter the demand for such a traditional product as wine in Bulgaria. Given the fact that Bulgarian customers only recently received the possibility to taste imported wines, we find that foreign wines are evaluated mainly through the prejudice of past knowledge, not linked to the actual product. Most likely the demand for wine in Bulgaria will continue to be focused on local products. Furthermore we examine how the region of origin determines tastes and preferences for consuming a specific type of wine and the price the consumer is ready to pay. BULGARIAN WINE SECTOR DEVELOPMENT After Bulgaria joined the EU there has been an obvious deepening of the trend to restructure the vineyard and wine sector in the country, which had started in the pre-accession period. The change was necessitated by several key factors: • Outdated variety structure of the vines, mainly consistent with the old markets in Eastern Europe and Russia • Increasing export opportunities for the European Common Market in an environment of strong competition • The emergence of a considerable number of private farms and small wineries oriented towards production and export of high-quality wines • Funding opportunities for restructuring in the sector through EU funds Bulgaria managed to preserve its traditions in the wine industry despite the economically difficult transition.

Georgian grapevine germplasm, which has formed for thousands of years, includes white, black, red, pink and grey 525 Vitis vinifera cultivars. In 2009–2014 up to 440 local grapevine varieties Vitis vinifera sativa has been restored. These varieties are cultivated in the LEPL Agriculture Scientific-Research Center grapevine collection GEO 038, Mtskheta Munisipal, village Jighaura, at an altitude 550 m. There are retrieved and recorded in the collection up to 60 forms of Vitis vinifera silvestris. In order to study biological and technological characteristics of Georgian grapevine, in 2012–2014 were investigated 50 Georgian widely cultivated white and colored wine and table grapes varieties, in the seven viticulture regions of Georgia. Description of grapevine varieties implemented through the descriptors for grapevine (IPGRI OIV). Botanical, biological- technological, qualitative and quantitative marks are characterized and evaluated.     In association with... Welcome to the 2019 Real Wine Fair! The Real Wine Fair is an independent festival of natural growers and winemakers, comprising those who work organically and/or biodynamically and with few or zero interventions in the winery. That said, real wine is relative rather than an absolute or precise term and embodies a certain spirit of endeavour in the vineyard and the winery. We understand that each grower has a highly specific approach; we should celebrate those differences. Real wines tend to be made in small quantities by artisan or independent producers who work without chemicals (which means no artificial fertilisers, pesticides or herbicides) in low yielding vineyards and then vinify without artificial yeasts or enzymes, or recourse to acidification or other adjustments. Many are made with only tiny amounts of added sulphur and some with none at all. ‘Nowt taken out and nowt put in’, as the saying goes. The motivation is to rediscover the true flavour of wine by capturing the sense of place (terroir) and the very nature of the vintage. These wines are individual, hand-crafted, thrilling and unpredictable. They remind us that wine can be a living thing rather than a denatured product and that less intervention means more real flavour. This booklet contains details of hundreds of wines from many countries around the world presented by growers and winemakers who have stories to tell. We hope you enjoy these wines as much as we do. And if you want to buy a bottle or several, or order something you have tasted at the fair there is a pop-up shop by the entrance of the main hall! And wine is only part of the Fair.
