And the guinea pigs aren't faring so well! With a higher percent of our GNP spent on medical care than in any other industrial country and after remarkable advances in the understanding and cure of disease, the life expectancy of a forty-year-old American male in 1980 was only about six years longer than that of his counterpart of 1900. Why haven't our wealth and scientific advances done more for our health? Medical authorities now believe that a big part of the answer lies in the new American diet-an untested diet of high fat, high sugar, low fiber, which is now linked to six of the ten leading causes of death. (See Figure 4.) The first two editions of this book are. full of nonmeat recipes, just as this one is. But in my discussion of nutrition I stuck to the protein debate because I wanted to demon- strate that we didn't need a lot of meat (or any, for that matter) to get the protein our bodies need. Now I think I missed the boat, for the Diet for a Small Planet message can't be limited to meat. Some young parents also switch to this diet. The safety of vegetarian diets, especially vegan diets, is very important, especially during pregnancy. Unfortunately, reference publications do not provide coherent data on the safety of vegetarian diets during pregnancy. On the one hand, the vegan diet has advantages because it reduces the risk of heart disease and gestational diabetes. On the other hand, vegetarians/vegans should be aware of potential deficiencies of some nutrients (iron, zinc, vitamin B12, vitamin D, omega-3 fatty acids, calcium, iodine) and the clinical consequences for the fetus. For example, iron deficiency may affect cognitive abilities, behavior, intelligence and increase the risk of preterm birth and low birth weight of infants. Plant food contains non-haem iron with variable absorption. Therefore, the vegan diet should include nutrients increasing the bioavailability of iron, e.g. ascorbic acid, carotene and retinol. Due to the fact that animal food is the main source of vitamin B12, vegans are at a very high risk of vitamin B12 deficiency, which will affect the infant’s weight at birth. -

All you need to do is talk to your school’s dining-service officials or other school officials who make dining decisions and give them the following materials. You can set up a meeting or just stop by their office. Remember that their job is to satisfy students’ needs—so by politely speaking up, you’re helping them out, and they will welcome your concerns. What This Pack Contains and What You Should Do With It ‘Vegan-Friendly Cafeteria’ Petition Gather names to show to dining-service officials. Use a petition to show widespread student support for vegan options. Make copies of the petition, grab some clipboards and pens, recruit friends if possible, and spend some time around school between classes and around the cafeteria during lunch asking people to show their support by signing your petition. They aren’t committing to eating only vegan foods all the time (although that would be awesome); they’re just supporting healthy, humane choices—so it should be easy to get lots of support in a short period of time. After you have collected a bunch of signatures (including e-mails so that you can keep signers up to date about the success of the campaign as well as help the school advertise its new options), show them to your school’s dining officials. -
