The Wine Journey The Wine Journey “Wine is art, and like other art forms, it has the ability to take us out of ourselves: transporting the taster on an imaginary journey around the world, and back in time. Giving pleasure to the senses, it widens our horizons...” MB From vineyard to the glass, join us on a journey of some of the best wine regions of the world. Our wine list of 1000 selections encompasses what is one of Australia’s largest collections of fine wine in an international hotel. Our sommeliers & wine waiters are pleased to offer advice as well as to fulfil your requests; explore some of the best Australia has to offer and many great and difficult to find bottles from throughout the world. Winter pruning in the Yarra Valley vineyards 2018 Housed in climate controlled cellars within Hilton Sydney and glass brasserie’s 3500 bottle wine wall; to the best of our ‘Hall of Fame’ ‘Best International Hotel Wine List’ knowledge, the wines in our collection Australia’s Wine list of the Year Awards 2016 have been kept under controlled temperatures and humidity since their ‘WineReader’s Choice Award’ Australia’s Wine list of the Year Awards 2014 release, and many come direct from the winery, estate or Château. ‘Best Listing of Australian Wines’ Australia’s Wine list of the Year Awards 2013 Carefully sourced; we believe each of ‘Best Wine List New South Wales’ our older ‘museum’ bottles to be sound; Australia’s Wine list of the Year Awards 2012 however each bottle has its own history. For some wines of age, there are often no ‘Best List of Wines by the Glass’ Australia’s Wine list of the Year Awards 2011 good wines or vintages per se, only good bottles. We will endeavour to find that ‘Best Fine Dining Wine List’ Awards for Excellence 2011 bottle for you. • Diner Het Diner Werd Gehouden Op Het Terras Van Ons Hotel in De Chique Badplaats Deauville.

This Prosecco has no added sulfites and it’s characterized by a fine perlage and intense and complex notes of ripe fruit, bread crust and yeasts. Prosecco Colfondo 2014, Casa Belfi, Albino Armani (Veneto) …………………………………………..…...£33,00 The naturalness of this wine is confirmed by the analyses with a zero residue of chemical products.
