The regulations are particularly severe for wine and include various aspects of the viticulture practices and winemaking techniques. Nevertheless, the use of phenolic profiles for quality control is still fragmented and incomplete, even if they are a promising tool for quality evaluation. Only a few methods have been already validated and widely applied, and an integrated approach is in fact still missing because of the complex dependence of the chemical profile of wine on many viticultural and enological factors, which have not been clarified yet.     ―――――――――――――WINEMAKER’S NOTES――――――――――――― 2015 ZINFANDEL ● CARMEL VALLEY ESTATE In 1984 Joullian planted some of Carmel Valley’s first Zinfandel vines. We began with a non-heat-treated Amador County clone selected by Dr. Bioletti in 1917, and have since added pre-prohibition vineyard selections from Lytton Springs, Brandlin (Mt.Veeder), St. Peter’s Church (Cloverdale) and Primitivo-3 (Puglia, Italy). For complexity, we also have small amounts of Petite Sirah (Lytton Springs), plus our Italian field crush varieties: Aleatico, Alicante Bouschet, Carignane and Black Grenache. Joullian’s multi-clonal approach in the vineyard continues to reap multidimensional benefits in the winery. 2015 featured several weeks of 90-95°F heat in late September, early October, so we carefully culled sunburned and raisined fruit in the field, resulting in 40% less tonnage but the final Zin blend is full of perfumed rich black fruit, silky tannins and thanks to a dollop of Cabernet, refreshing acidity. TECHNICAL INFORMATION: Varietal Content: 90% Zinfandel 5% Primitivo 3% Petit Sirah 2% (0.5% each) Aleatico, Alicante Bouschet, Carignane, Grenache Appellation/AVA: 100% Joullian Estate, Carmel Valley Harvest Dates: September 24, 2015 Sugar at Harvest: 26.2° Brix Fermentation: Primary and malolactic fermentation completed in 19 days Barrel Aging: 18 months in new and used French oak barrels Alcohol: 14.5% Total Acidity/pH: 7.7 g/L; 3.79 Residual Sugar: Off-dry (0.6%) Total Production: 473 cases (750ml), 17 cases (1.5L), 79 bottles (3.0L) Release Date: May 2019 TASTING NOTES: The wines dark cherry color, with a light garnet rim. Aromatic rose petal, blackberry, cola, and licorice scents are enhanced by a touch of cedar and black peppercorn.

    Dolcetto d'Alba DOC The Bongiovanni farmstead dates back to the early 1950s, when it was purchased by Giovanni Bongiovanni. Giovanni planted a Nebbiolo vineyard where there had been nothing but untamed woodland. He struck gold, yet never bottled his own wine. When he died, the estate was left to his daughter Olga who grew to cover prime hillside vineyards of the Langhe for her own wines. Here, the family only planted native grape varieties and one noble international grape, Cabernet Sauvignon. A good number of innovations have come about thanks to Olga’s nephew, winemaker Davide Mozzone. The Bongiovanni philosophy aims to minimize outside intervention and maximize character and terroir, steering clear of stereotypical wines. While not certified organic, the winery proudly participates in Piedmont’s Green Experience, which is a network of sustainable and organic growers. Dolcetto was and is still considered the wine you’d drink on a lazy Sunday in any given osteria in the stunning countryside of Piedmont. And in fact, because of its versatility and capacity to adapt to very different soil types, it is one of the most widely cultivated varieties in the Langhe area. Bongiovanni has two small parcels in Roddino and Castiglione Falletto with vines aging ten to forty years old. After harvest, the wine ages strictly in stainless steel, preserving the color, aromas and flavors. The wine is neither clarified nor filtered before bottling.     BAROLO DOLCETTO D’ALBA DENOMINAZIONE DI ORIGINE CONTROLLATA 2018 We love Dolcetto. In the local tradition, this grape was cultivated on the best exposures, just above Nebbiolo parcels. Resonating with our own heritage, we dedicate only fine blocks to this variety, so to let it express with plenitude. DESCRIPTION: Historically, Dolcetto was cultivated in prime land, just above Nebbiolo vineyards. At Vajra, we remain loyal to this approach, farming this grape in places of true vocation. Our Dolcetto d’Alba DOC is a homage to a wonderful, often overlooked heritage of Piemonte. It is a pure, vibrant and fruity expression of the variety, ideal for many food pairings from appetizers to pastas and vegetables and light protein such as white meats and egg-based dishes. VARIETY: 100% Dolcetto. VINEYARD AND TERROIR: Multiple estate vineyards with an average age of 25 years. VINTAGE: 2018 was marked by an abundant flowering, a gradual ripening and one of the latest harvests of the decade. Precipitations were exceptional during the entire year, as the dedication of our vineyard team. Such determined work and a meticulous sorting gifted us with healthy grapes, with delicate perfumes and a juice that was pink already upon crushing. This harvest was particularly favorable for the best exposed vineyards, those at high elevation, and the late ripening varietals - but it is giving us great surprises also on the whites and Dolcetto. All the wines are fragrant, deliciously aromatic, with elegant tannins. 2018 reminds 2016 and perhaps even more 2004, and promises to become an elegant and classic vintage.     TEXAS HIGH PLAINS 2018 e Wine: Roussanne, originating from the Rhone Valley, has found a home in the Texas High Plains. Our Roussanne produces a distinctively rich white wine with wonderful aromatics reminiscent of tropical fruit, pineapple and honeysuckle. e palate is equally rich with hints of citrus, Mandarin orange, grilled nectarines and a light acidity. AVA: e Texas High Plains is the second largest AVA in Texas, comprising roughly 8 million acres in west Texas, mostly south of the panhandle region. e eastern border of the Texas High Plains AVA follows the 3000 elevation contour line along the Caprock Escarpment, the steep transitional zone separating the High Plains from the lower plains to the east. e elevation within the Texas High Plains gradually increases from 3,000 . to 4,100 . in the northwest portion of the AVA. is positioning provides an environment of long, hot dry summer days, which allow the grapes to mature and ripen to proper sugar levels, and cool evenings and nights, which help set the grape’s acidity levels. Grapes and wine have been produced in this region since the mid-1970s and vineyards here have become the major grape supplier to wineries throughout the state. ere are over 75 Wine Grape Varietals planted in the High Plains AVA, including Cabernet Sauvignon, Chenin Blanc, Gewurztraminer, Grenache, Merlot, Malbec, Dolcetto, Mourvèdre, Sangiovese, Tempranillo, and Viognier. Wine Makers Notes: We aged our Roussanne in new French Oak Barrels to provide a kiss of oak before moving the wine into stainless to complete its maturation. No malolactic fermentation was required with this grape as acidity is naturally so and the grape complex in phenolics.

Favorable springtime conditions continuing through August allowed the vines to complete budbreak and fruit set without experiencing any adverse weather. Moderate temperatures allowed for a long and slow maturation of grapes and produced balanced red fruit. The blocks selected for this wine produced incredible fruit for intense wines with power and depth. Each block was farmed, picked, and fermented separately, with the wines seeing new French oak aging to add complexity. These wines were then blended to create a final wine that is bold, layered and cellar worthy. TASTING NOTES Ruby in color with brilliant clarity, this wine is a bold expression of Bordeaux varietals cultivated in Texas. Aromatic notes of red fruit are accentuated on the palate with layers of rich red and black fruit flavors coupled with undertones of spice, vanilla, and oak. Firm tannins provide grip and structure, making it a perfect pairing for steak or brisket. There’s no substitute for vine age.” Ted Lemon, Littorai There is no consensus or legal definition of “old vine” Pinot Noir. Wikipedia states, “In a place where wine production is longstanding, it often means a wine whose vines are thirty to forty years old.” I have used forty years (1980) as the cut-off for my California old vine Pinot Noir bucket list. Some would consider these “mature” vines only, insisting that the term “old” be reserved for vines older than this such as 125-year-old Zinfandel vines in California that are still bearing small amounts of fruit. Hanzell 1953 Ambassador’s Vineyard Pinot Noir Vine The term “old-vine” has created debate for years in the wine industry. Most winemakers believe the terminology should be defined and regulated. Some choose to define “old-vine” as a minimum of 20 years and others prefer 50 years as a minimum. There are also disagreements about the percentage of grapes that should be required in a wine labeled “old-vine.” Some winemakers would agree that “old-vine” grapes should make up at least 85% of the grapes contained in a wine sold as “old-vine,” and others demand that 95% of the grapes be from “old-vine” sources. There are variances to consider among different varietals as well. For example, Pinot Noir vineyards over 20 years are considered old, yet Zinfandel from a 20 year-old vineyard would not be labeled “old-vine.” The issue of “old-vines” results from the perception by many consumers who consider “old-vine” wines better.
