This is a standards-based, interdisciplinary science course that integrates biology, chemistry, and microbiology in the context of foods and the global food industry. Students enrolled in this course formulate, design, and carry out food-base laboratory and field investigations as an essential course component. Students understand how biology, chemistry, and physics principles apply to the composition of foods, the nutrition of foods, food and food product development, food processing, food safety and sanitation, food packaging, and food storage. Students completing this course will be able to apply the principles of scientific inquiry to solve problems related to biology, physics, and chemistry in the context of highly advanced industry applications of foods. Recommended Prerequisites: Fundamentals of Food Preparation, Nutrition and Wellness Application of Content and Multiple Hour Offerings Intensive laboratory applications are a component of this course and may be either school based or work based or a combination of the two. Food Allergy
Information Statement Food Allergy The Institute of Food Science & Technology has authorised the following Information Statement, dated January 2009, which cancels and replaces the version dated October 2005. SUMMARY The problem of food allergens is part of a wider problem, that of all kinds of adverse reactions to foods, which can also result from microbial and chemical food poisoning, psychological aversions and specific non-allergenic responses. Food allergy is now recognised as an important food safety issue. Dealing with at least the major serious food allergens is an essential part of Good Manufacturing Practice. The greatest care must be taken by food manufacturers • to formulate foods so as to avoid, wherever possible, inclusion of unnecessary major allergens as ingredients; • to organise raw material supplies, production, production schedules and cleaning procedures so as to prevent cross-contact of products by "foreign" allergens; • to train all personnel in an understanding of necessary measures and the reasons for them; • to comply with the relevant labeling legislation providing appropriate warning, to potential purchasers, of the presence of a major allergen in a product; • to have in place an appropriate system for recall of any product found to contain a major allergen not indicated on the label warning. The purpose of this statement is to describe the nature and cause of food allergies, to outline recent changes in legislation that aim to help allergic consumers to live with their condition and to emphasise the measures that manufacturers and caterers should take to minimise the problems. Master of Public Health/Master of Science in Nutrition Dual Degree Proposal (Plan B, non-thesis requiring) Document of December 8, 2014; Revised February 2, 2015 This is a dual degree program that is offered jointly by the Departments of Epidemiology and Biostatistics, and Nutrition. The core Master Degree courses include a mixture of those from nutrition, biochemistry and public health. 1. Background and Justification The World Health Organization, (WHO), identifies diet and nutrition as a lifestyle factor critical for maintenance of health and well-being, as well as a factor influencing risk of chronic disease. Cardiovascular disease, diabetes, cancer and obesity are examples of chronic diseases significantly related to diet and nutrition. Obesity is one of the most common conditions and is growing to epidemic proportions. The two most common associated co-morbidities of obesity, type 2 diabetes and hypertension, are highly prevalent health risks and are among the principal causes of death in the general population. Additionally, in third world countries, malnutrition is a very common cause of infection or death, especially in young children. Accordingly, knowledge of the basic elements of good nutrition and the biochemical pathways associated with the metabolism of protein, fat and carbohydrate offers important contributions to mitigate these health problems. The proposed dual degree program will provide the student with a core understanding of the mechanics of metabolism combined with advanced courses in public health and nutrition. This combined approach will yield a highly qualified and competitive public health practitioner trained to develop evidence based policy, programs, strategies and advocacy to address these health risks and problems. -

It vas discovered accidentally in 1965 by a scientist at G. D. Searle & Company (Skokie, Illinois) who was doing research on nev drugs to treat ulcers. Since 1965, G. D. Searle & Company has conducted extensive testing in an attempt to demonstrate that aspartame is safe for aort people when added to food products. On July 7, 1981, after considerable debate, the Food and Drug Administration (FDA) approved the use of aspartame in dry food products. On July 8, 1983, FDA approved the use of the sweetener in carbonated beverages. This report provides an overview of aspartame, dis- cuses the regulatory his.tory of artificial sveeteners and identifies some of the current controversy over this recently approved substance. HEALTH ASPECTS OF ASPARTAME In terms of caloric value, aspartame contains four calories per gram, the same as table sugar. -

It has enhanced food production by making plants less vulnerable to drought, frost, insects, and viruses and by enabling plants to compete more effectively against weeds for soil nutrients. In a few cases, it has also improved the quality and nutrition of foods by altering their composition. However, the use of biotechnology has also raised concerns about its potential risks to the environment and people. For example, some people fear that common plant pests could develop resistance to the introduced pesticides in GM crops that were supposed to combat them. Genetic engineering provides a means to introduce genes into plants via mechanisms that are different in some respects from classical breeding. A number of commercialized, genetically engineered (GE) varieties, most notably canola, cotton, maize and soybean, were created using this technology, and at present the traits introduced are herbicide and/or pest tolerance. Gene technology enables the increase of production in plants, as well as the rise of resistance to pests, viruses, frost, etc. -

After eating a meal, our metabolic rate increases in response to digestive processes such as peristalsis, enzyme synthesis, and nutrient uptake and assimilation (1,2). This ‘specific dynamic action’ (SDA) of food has been well-known for a century, but curiously, study of the relative SDA of different types of diet has been neglected. More refined foods (those heavily laden with added sugars and other processed carbohydrates), require less digestive energy than minimally processed or unprocessed foods, which often have more protein, are higher in dietary fibre, and have a greater nutrient density (3-6). So the given calorie content of a meal is not the actual amount of net calories the body receives. -

Using nationally representative data, we tested whether American patients with diet-related chronic diseases had higher diet quality than nonpatients. We also tested whether nutrition knowledge and beliefs (NKB) and food label (FL) use were associated with the observed differences. The 1994–1996 Continuing Survey of Food Intake by Individuals, and the Diet and Health Knowledge Survey were examined for 4356 U.S. adults. Dietary intakes were assessed using 2 nonconsecutive 24-h recalls and diet quality jn.nutrition.org was assessed by using the USDA 2005 Healthy Eating Index (HEI). Patients’ mean HEI was higher than that of nonpatients (mean 6 SE: 53.6 6 0.5 vs. 51.8 6 0.4; P , 0.001). Among patients, blacks were 92% more likely to report low diet quality (HEI , 20th percentile) than whites. The positive association between chronic diseases and HEI was observed only for patients with good NKB [OR = 1.80 (95% CI = 1.34, 2.43)]. -
