HIGHLAND FINE WINE DECEMBER 2016 HALF CASE - RED SanguIneti Cannonau Di Sardegna - Sardinia, Italy (Mixed & Red Club) $11.99 Made of 100% Cannonau, or Grenache, this fiercely Mediterranean varietal thrives in sun-soaked, arid landscapes. Rising to the occasion in the rocky, windswept vineyards of Sardegna, the vines find themselves in the capable hands of Antonio Sanguineti. In his youth, Sanguineti lost his ancestral Tuscan vineyards in familial disputes. He now relishes the opportunity to use his knowledge and passion for winegrowing. This wine is packed with ripe cherry, raspberry, plum, and pomegranate fruit notes along with some earthy/spicy nuances. It is medium bodied, juicy, pliant, and fresh with flavors of warm red berries, peppery spice, and smoky herbs. Pairs effortlessly with steak, lamb, sheep’s milk cheeses, and roasted red pepper. Whilst it is not known exactly when wine and viticulture was introduced to the Alentejo, there is plenty of evidence that they were already part of the day-to-day life in the Alentejo by the time the Romans arrived in the south of Portugal. It is thought that the Tartessians, an ancient civilisation based in the south of the Iberian Peninsula and heirs of the Andalusian Megalithic culture, were the first to domesticate vineyards and introduce winemaking principles in the Alentejo.

  • Colección 2017 Where Bordeaux Meets Mendoza
COLECCIÓN 2017 WHERE BORDEAUX MEETS MENDOZA Following Bordeaux tradition, Colección is our “Second Label” after our Grand Vin. Colección is similar to Grand Vin but less concentrated and with less ageing potential and is therefore friendlier to drink young. In this blend you can taste the concentration and intensity of a Mendoza wine along with the elegance and finesse of a Bordeaux-blend. Technical Data % varieties: 53 % Malbec ; 17% Cabernet Sauvignon ; 15% Petit Verdot ; 12% Syrah ; 4% Merlot Location: Uco Valley, Vista Flores, Tunuyán, Mendoza, Argentina. Alcohol: 13.6% Acidity: 5.17 g/L Residual Sugar: 1.6 g/L pH: 3.80 Dry Extract: 30.24 g/L Production: 13.000 bottles Vintage Characteristics Winter 2016 has been absolutely normal in terms of both temperatures and rainfall though spring showed lower temperatures than usual, especially during bud-break and flower that did affect our yields, especially for Malbec which is more sensitive to cold temperatures. Summer 2017 has been normal with low rainfall and very good thermal amplitude that combined with the low yields, generated an extraordinary accumulation of anthocyanin, especially in Malbec and an optimal phenolic maturation for all our varietals. These conditions produced outstanding wines, with less quantities of Malbec but exceptional characteristics of concentration, complexity and ageing potential. Vineyards Total area: 65 hectares. Area in production: 55 hectares. Altitude: 1000 meters above sea level. Plantation density: : 5500 plants per hectare in vertical trellising system. Yield: 7000 kg per hectare. Harvest: manual in 12 kg boxes. Tasting Note Appearance: intense and attractive red with violet reflection. Wine-Making Aroma: very complex and of great finesse with Once the vats are full, the grapes undergo maceration before the alcoholic spicy notes and ripe plums as well as a certain fermentation occurs.

  • The Mendoza Wine Region. (These Notes Are Compiled and Edited From
The Mendoza Wine Region. (These notes are compiled and edited from various internet sources mostly Wine Searcher and Wine.com) Mendoza Province, responsible for over 70% of the Argentina's wine production, is divided into several distinctive wine making sub-regions, including Luján de Cuyo and the Uco Valley. It is the source of some of the country’s finest wines. Most large wineries are in the provincial capital of Mendoza. For many wine lovers, Mendoza is practically synonymous with Malbec. Originally a Bordelaise variety brought to Argentina by the French in the mid-1800s, here it found success and renown that it never knew in its homeland where a finicky climate gives mixed results. Cabernet Sauvignon, Tempranillo, Syrah, Merlot and Pinot Noir are all widely planted here as well (and sometimes even blended with each other or Malbec). Mendoza's main white varieties include Chardonnay, Torrontés, and Sauvignon Blanc. The pink-skinned grapes of Criolla Grande and Cereza account for more than a quarter of all planting. Criolla is used to produce deeply colored white wine. It is sometimes used to produce a light-colored rosé. The grape is rarely exported outside of Argentina where it is used to produce massive quantities of box and jug wines. Vineyards are planted at some of the highest altitudes in the world, in the eastern foothills of the Andes, in the shadow of Mount Aconcagua, with the average site located 600– 1,100 meters (2,000–3,600 ft) above sea level. Altitude is one of the most important characteristics of the Mendoza terroir.

  • Wine Club Fall Release OCTOBER 2019 Message from the Doffo Family
Wine Club Fall Release OCTOBER 2019 Message from the Doffo Family Dear Wine Club, I find it incredible how fast this year has come and gone! The 2019 Harvest has the potential to be one of those magical years. The heavy winter rains of 2018 and the mild summer heat is the perfect combination for a long ripening period. As I write this, we have almost 90% of the fruit still hanging on the vine! For comparison, last year at this time about 50% of the fruit was already vinified. This extended hang time really allows for even ripening and development of the noble tannins. I believe this harvest has the potential to be one of those sought after vintages that will be a talking point for decades. This year has been a year of great accomplishments for us as a family and a winery. Our father has taken on a new venture in his retirement and is taking wine club members to Argentina and Italy for wine and culinary experiences. Samantha is always innovating and creating our wine club events along with delivering world class private events. Brigitte is largely responsible for the design of all the MotoDoffo Apparel and the winery aesthetics. We are very proud as she is running lead on all of the improvement projects! If you haven’t been out to the winery lately, we invite you to come see all of Brigitte’s hard work and talent. Our focus is and has always been on producing quality wine and now more than ever, on delivering an experience to all of you that have helped us achieve all of these incredible feats.

  • Glutathione and Its Application in Winemaking
GLUTATHIONE AND ITS APPLICATION IN WINEMAKING What is glutathione? Glutathione (L-g-glutamyl-L-cysteinyl-glycine) is a tripeptide which contains three constitu- tive amino acids: glutamate, cysteine and glycine. In must, wine or even yeast, glutathione can be found under its reduced (GSH) or oxidized form (GSSG), the later being two molecules of glutathione linked by a sulfide bridge. It is present in plants and foods, and fruits like grapes. It is also the most abundant nonproteic sulphur compound found in most living organisms including the wine yeast Saccharomyces cerevisiae. Figure 1: Molecular structures of glutathione (GSH) and glutathione disulfide (GSSG) Why is it important Glutathione (GSH) is important in wine because it has the ability to scavenge ortho-quinones, in wine? main protagonists of color browning and aroma loss due to oxidation mechanisms. Because it has a very low oxydoreduction potential (E’o=-250 mV at pH 7.0 ; E’o=-40 mV at pH 3.0), it can act as a strong buffer in many cellular oxydoreduction reactions. It has been known for years that it is a more potent anti-oxidant than ascorbic acid (E’o=+60 mV at pH 7.0 ; E’o=+267 mV at pH 3.0). It then plays a critical role in preventing the oxidation of must phenols as it can react via its –SH group with caftaric acid – one of the most susceptible phenols to oxidation in musts and generate Grape Reaction Product (GRP) which is a stable and colorless compound (Moutounet et al, 2001). Notably, this mechanism has been shown for GSH and not for the other compounds present in must or in yeast, and possessing SH-group (such as cystein or glutamyl-cystein for instance).

  • International Herdade Das Barras November
GOLD MEDAL WINE CLUB Taste the Adventure! Portugal Vol. A • WITH A WINEMAKING HISTORY DATING OVER 4,000 YEARS OLD, PORTUGAL OFFERS THRILLINGLY DIFFERENT INDIGENOUS WINE GRAPE VARIETALS AND WONDERFULLY DIVERSE TERROIR . The fact that Portugal was named best wine region to visit by USA TODAY in 2014 came as no surprise to wine industry insiders. When you add the actuality that Portuguese wines have consistently placed extremely high among the world’s top wines for the past decade, you get the idea that the Portuguese are doing something right. Long a haven for dessert wines (Portuguese ports have been revered by practically everyone for the past two hundred years), modern Portuguese wineries have cropped up ever since Portugal joined the European Union in January of 1986 and international funding became available to the country’s mostly rural economy. Formerly bucolic areas suddenly became accessible and smart investors (generally Portuguese) jumped at the opportunity. No industry benefitted more than the enduring Portuguese Wine Industry. Smaller growers and wine producers received huge subsidies and grants that vastly improved winemaking facilities and vineyards. Small boutiques (quintas) revolutionized Portuguese winemaking and succeeded in establishing Portugal as an international market for more than port, madeira and Mateus. Wine growing regions suddenly sprung up in areas that had seldom seen vineyards and wineries, mostly state-of-the-art thanks to the huge influx of EU monies. Roads were widened and accompanying hotels and restaurants (as well as visitor facilities) became as fine as any in the country. Obscure regions such as this month’s featured Alentejo Region (see Region Section) benefited due to its closeness to Portugal’s main visitor stream in the Capitol of Lisbon.
