This prevents the grouping of water molecules and the breakage of their cellular structure which causes the expansion that occurs when using more traditional methods, thereby preventing the deterioration in taste that usually follows freezing. SHELF-LIFE A product that has been frozen using the IQF technique can be stored for up to 12 months, eliminating the need to monitor expiry dates. SAVING TIME AND MONEY Europomella cheeses are ready for use in that each product is available pre-cut into different formats, from large blocks to fine slices. DEFROSTING PERIOD Due to the small dimensions of each individual product, the defrosting process is completed within 1-2 hours at room temperature. A highly advanced freezing technique allows fresh cheeses such as mozzarella and ricotta to be consumed at any moment in any place – as if it were made the same day! ZERO WASTE Due to the simple system of small portions, the exact amount required can be defrosted and consumed whilst conserving absolute freshness, ensuring minimal product loss. BETTER COST CONTROL Each product is individually frozen, meaning that costs can be contained down to each single serving. FRESHNESS Each Europomella cheese that has been frozen using the IQF method preserves its original quality in terms of taste, texture and appearance. The technique also eliminates the need of draining the water which is normally produced with more traditional processes.
