    Waddesdon Manor Pork Pie Ingredients Hot Water Pastry 200ml water 75g butter 75g lard 450g plain flour, sifted 1 pinch salt 1 egg, beaten 1 teaspoon vegetable oil (or rapeseed oil) Pork Filling ½ kg pork mince 1 large clove of garlic, crushed Pinch mixed herbs Pinch black pepper Pinch salt 1 small white onion, finely diced 100g bacon, chopped Jelly 3 gelatine leaves 250ml chicken stock Salt and pepper to taste Method For the filling Mix all the pork filling in a bowl and season. Use a frying pan to cook off a small amount and taste. Add more of any ingredients to season to your taste. Cook the rest. Put into the fridge. For the pastry Put the water, butter, and lard into a saucepan and gently heat to melt both the butter and the lard. Then bring to a gentle boil. Put the flour into a large heatproof bowl and add the salt and the egg. Mix together with a knife. Add the hot fat and water mixture and combine thoroughly. Tip the dough onto a lightly floured work surface and knead for 10 mins or until it becomes smooth and silky. Take a small jam jar and cover the outside with a light layer of oil. Cut 1/3 of the pastry off and wrap and put to the side. Roll the remaining 2/3 to ¼ inch thick. Cut a 6-inch circle and lay over the jam jar bottom and gently ease up the side of the jar. Be careful not to stretch the pastry too thin.

    RECORDS OF DOROTHY HARTLEY (1893-1985) Accession no : D69/81, D70/3, D70/4, D77/30, D78/31, DX365 Catalogue mark : D HART Introduction Dorothy Rosaman Hartley was born at Skipton, Yorkshire in 1893. Her father was headmaster of Skipton (Yorkshire) Boys’ School but failing eyesight caused him to give up this job and the family moved to Rempston, Nottinghamshire when Dorothy was 12. She went to Art School and during World War I worked in a munitions factory where she received a commendation. In 1919 she entered Regent Street Polytechnic to study art. In 1925 The Land and Peoples of England which she had co-written with Madge Elliot was published. During the 1930’s Dorothy Hartley published weekly articles in the Daily Sketch dealing with all kinds of rural matters and she continued producing books - The Countryman’s England (1935), Made in England (1939), Food in England (1954), Water in England (1964), The Land of England (1979). Between writing she painted, taught, lectured and was an acknowledged draughtsman and photographer. In 1985 she died at Fron House, Llangollen in North Wales where she had lived for over fifty years. Records deposited as a gift and subsequently as a bequest.     Washington's Steak (and Kidney) Pie By Chef Marti Mongiello, MBA, MA, MCFE If you say you enjoy chicken pot pie, then you'll most likely enjoy steak pot pie! Which is how I enjoy serving this recipe. You can substitute the chopped kidneys with all chopped beef (if you like) or keep the kidneys in there to be authentic, whichever you enjoy. Be sure to see the episode of our TV series featuring Lord Cornwallis talking about the surrender at Yorktown and the Washington Steak and Kidney Pie at Inside the Presidents' Cabinet http://www.InsidethePresidentsCabinet.com. As a traditional British and UK fave, the easiest way for me to explain this would be a thick beef stew in a beautiful pie shell. And I love a thick, strong- walled pie shell from Julia Child's recipe for Pate Brisee (her secret is the use of butter and shortening in her recipe - while my secret is salted butter, overall thickness by making a double recipe and therefore a large crust). I've always loved crust and still felt ripped off by thin crusts - or hardly any crust at all! Make Julia's and my new modified SUPER crust: Mix 3 cups of unbleached flour with 1 cup of cake flour. Then pulverize with your hands 12 ounces cold salted butter cut into small pieces (3 sticks) into the flour with 8 tablespoons vegetable shortening. Now barely soft dough mix 1 cup of ice water in for a very, very soft dough. The secret is the ice-cold water and NOT over-working or OVER-mixing it!!! Roll out and fill a French spring-form (or deep pie dish) pan with your thick-walled dough.
