As a wine specialist, we are proud to have more than 700 wines on show. While we don’t expect you to taste everything, we have ensured there really is something for everyone: from the classic regions of the old and new world, to some exciting esoteric alternatives. Our tasting is designed to help you prepare an unbeatable wine list for the coming year and to establish a point of difference from your competitors. We have assembled our teams, producers and winemakers from across the globe to guide you through each table’s unique offering and to ensure you taste the wines that are best suited to your business. We look forward to sharing our passion and expertise with you today to help you shape your wine offering for the year ahead. If you have any questions please don’t hesitate to ask one of our team. Steve Daniel writes… We are always looking for interesting new wines and producers to enhance our extensive range and have been busy over the past year looking for even more awesome producers to work with. To complement our extensive Greek range and help fulfil the increasing demand for Greek wines, we have added three Cretan wines from Idaia Winery made from the island’s indigenous grape varieties. The wines are mineral, saline and intense and truly expressive of the terroir of Crete. Southern Italy, in particular Sicily, is an area we have been looking at developing to provide our customers with a greater choice at a wider range of price points. We have taken on the boutique winery on Etna, Santa Maria La Nave and leading organic producer, Colomba Bianca, which do just that. For some time we had been looking to extend our Australian offering to better showcase the regionality of the country and we have been lucky to find exactly what we were looking for in a group of premium Australian producers. Amelia Jukes (of the former Hallowed Ground) is here today showcasing the wines from clos Clare, Eden Road, Fox Gordon, Laissez Faire, Lake Breeze, Ocean Eight, Paringa Estate, Ravenswood Lane, Teusner and Ulithorne. With the continuing buzz surrounding Argentina, we are really excited to start working with the Michelini brothers. Zorzal Wines from Gualtallary in the Uco Valley, is one of Argentina's most outstanding vine growing valleys with the talented Michelini brothers at the helm. Boasting over 42 years’ experience, Olivier Ravier is one of the most iconic and respected winemakers in Beaujolais and we’re thrilled to be bringing his wines to the table today. Wine Trails: Navigating your way through a fine collection of wines is no mean feat and it can be very easy to lose your way. For this reason, we have compiled a selection of thought-provoking wine trails to help you find your way around the room and taste wines that excite you. 1. Natural Wines Natural, organic, biodynamic and sustainability are the current buzz words in the wine industry and are set to become front of mind for the consumer in 2017. This trail will open your eyes to the wines that are leading the way in natural wine production. 2. Family Estates There is nothing more important than family, not just in life, but also in wine. These wines are produced by whole families, siblings, children and sometimes winemakers who can date their estate back generations. 3. Mediterranean Wines Our wines take you from the old world, to the new world, and even to the ancient world. The Mediterranean comprises some of the world’s oldest vines, growing some of the most unforgettable (and hardest to pronounce) grape varieties. This trail will guide you through öküzgözü, to agiorgitiko, to zibibbo. 4. New Wines Since our last Annual Portfolio Tasting we have added 100 new wines to our portfolio, with producers joining our list from Gualtallary in the Uco Valley, the slopes of Mount Etna and every corner of Australia. This trail will show you a handful of those you shouldn’t miss out on. On the Mezzanine: Enjoy a coffee from Ristretto and take the weight off in the informal meeting space. The Tokaj Wine Region Development Council was established in 2014 to lead the wine region’s Tokaj-Hegyalja National Program. The development concept in this priority program is aimed at promoting complex developments in the ecological balance of the Tokaj Wine Region, which are both natural, social, economic and cultural. The purpose of the paper is to present the region marketing idea in a world heritage wine region. This can be supported by primary and secondary research. The organization of the examined wine region development council and the key actors were asked. There was an inquiry at the wineries, 41 companies answered the questions. There are excellent specialists and the natural endowments are also suitable. The newly established Hungarian Tourism Office is the only hope that Community wine marketing can be really effective, and wineries can also experience its positive effect. There are 27 settlements in the wine region, there is a national park, and the tourism sector is only one that can be complementary to wine-making opportunities. Directions of development: winery, viticulture, infrared structure, tourism extension, culture, traditions, value preservation, hotel, attraction development, uniform appearance and coordination.

    ROYAL TOKAJI OVERVIEW TOKAJI’S ROYAL CONNECTION AND RENAISSANCE The first Tokaji aszú wine was created in the 1600s perhaps by accident — a harvest delayed by threat of enemy invasion. In 1700, Tokaj became the first European region to have its vineyards classified — its uniquely varied terroirs and climates rated “primae classis, secundae classis, tertius classis,” or “first growth, second growth, third growth,” by Prince Rakoczi II of Transylvania. This classification system is still used in Hungary today. Quality production ended with the Communist Party takeover of Hungarian winemaking. Aszú grapes were used for mass production in factories, with vineyard distinctions lost in giant tanks. Tokaj’s renaissance began after the collapse of communism with the establishment of Royal Tokaji in 1990 by well- known author Hugh Johnson and a small group of investors, who were inspired to restore and preserve Hungary’s precious wine legacy. THE TOKAJ REGION Situated along the southern slopes of the Zemplén Mountains, Tokaj is characterized by late springs and short growing seasons. The average temperatures are generally cool, with long, sunny summers and dry autumns. Tokaj’s soil is largely clay or loess with a volcanic substratum. The meeting of the Tisza and Bodrog rivers in Tokaj creates a mist similar to that of the fog in Sauternes. The mist encourages “botrytis cinerea,” or “noble rot,” which dries and shrivels the grapes that comprise Tokaji wines, and concentrates the sugars. Grapes that are infected with botrytis are commonly referred to by the Hungarian term aszú. GRAPE VARIETIES By law, only white grape varieties are allowed to be planted in Tokaj.

TA: 4.06 g/L Provides a great example of the components each grape brings to the RS: 0.7 g/L blend. Touriga Nacional- floral, blue fruit; Touriga Franca- black fruit, tannins; Tinta Cao- red fruit, juiciness, alcohol; Tinta Roriz (Tempranillo)- Sulfur: total 107 free 29 red fruit, acidity. Overall the wine starts with rich blue fruit on the nose along with lavender, sage, and violet. The palate is still juicy, but quite a Soil: Schist bit drier than the nose lets on. Altitude: 325m (1066ft) Grape Growing: Joaquim farms without certification, but is essentially Vineyard Age: 20 years organic. Douro is extremely easy place to farm organically. Beef, Filet Mignon, Strip Steak, Venison, Lean cuts of beef More About the Wine: Joaquim Almeida at Quinta de Vale de Pios in the Cuisine: Portuguese, Brazilian, Douro, Portugal makes traditional wines and puts his own twist on some Argentine, American of them. In the Douro, when making dry red wine it is traditional to use native traditional grapes and most often a healthy dose of oak in the process. Joaquim decided to challenge status quo and make a red wine without de-stemming and without oak.The “Excomungado” bottling represents Joaquim’s youngest wines produced with no oak aging and stem inclusion to extract tannin and power in this young vine.

    Uncorked – The future of Tokaj? Koppány Nádassy May 2020 Abstract Motivation Tokaj Wine Region was once the place of production of the noblest wines of the world, but became a marginal wine region by the 20th century. There are many factors, which made this region faded away, but its uniqueness, the steadfast work of winemakers and market trends enable a brighter future for this wine region that has once enjoyed great acclaim. The fall of the Iron Curtain and the changes in consumer habits motivated the winemakers and the region to repositioning the variety Furmint on the local market and also on the export markets as well. Objectives The objective of this thesis is to demonstrate the alteration of the Tokaj Wine Region. This thesis aims to show this evolution in the context of the historical background, the overview of the viticulture and vinification and the market overview. At the end propose a possible product range, and cooperation which could make sense to wine-growers and producers to strenghten their market position. Methodology To accomplish this task I did research about the History of Tokaj Wine Region in the literatures available from the 19th century and also did a research over the internet. The majority of the texts were available in Hungarian language, but English texts were also accessible. Since I currently work for one of the most prestigious wineries in Tokaj Wine Region, this thesis will be based mostly on my personal research and discussions with vineyard workers, winemakers and CEOs from the region. I will use my experiences from the Export Markets to localize the possibilities of the Furmint variety and the Wines from Tokaj in general.

The addition of brandy or neutral grape spirit would kill off the yeasts, which are constantly in the process of converting sugars to alcohol. Once the alcohol by volume reaches 16-18%, yeasts die. The remaining sugars are never converted into alcohol, and the natural sugars of the wine persist. Wines can be fortified at various stages in their fermentation, sweetened or colored with a variety of techniques. Different grape varietals can be used. Grapes can be dried. Wines can be boiled and reduced, cooked, aged in a solera, or aged in a boat that travels halfway across the world and back. They can be enjoyed immediately or aged for over 200 years.     SWEET & APÉRITIF WINES STARBOARD VINTAGE 2006 History Andrew Quady started his winemaking career moonlighting and producing “port” style wines outside of his normal eight to five. Starboard Vintage 2006 is Quady’s latest vintage “port”, produced nearly three decades from that humble beginning. 2006 follows after a long line of renowned fortified wines produced at Quady Winery and showcases the qualities and craftmanship you’d expect to find from an experienced “port” wine producer. Why do we call our “port” Starboard? Port is a geographic term for fortified wines that come from the Douro River Valley in Portugal. Starboard, the nautical term for right, (as opposed to port – left) is unique to our place, the San Joaquin Valley, California, on the other side of the world from Portugal. Winemaking For Starboard, we use the same grape varieties and similar methods as in the Douro River Valley in Portugal, but our climate is warmer and the soils different. The vineyard is managed to give loose bunches and a small crop. Instead of 140 proof fortifying brandy, we use a neutral grape spirit of 190 proof. We use 60 gallon barrels instead of the 140 gallon pipes used in Portugal. Starboard matures earlier and has a riper more voluptuous flavor. Vintage 2006 spent the first two years of its life in a barrel and the remaining time maturing in its bottle. Taste Smells of cherries, vanilla bean and spices. Taste is smooth and velvety, but with brandy and grip, lingering tannins and exotic notes. Enjoy with chocolate, cheese, and nuts. Enjoy now or cellar it to enjoy sometime over the next 10+ years.
