www.greenstar.coop While Supplies Last Tofurky Roast w/wild rice stu ng Recipes for your Holiday Meal Cranberry Pecan Stung Makes 6 servings This delightful stung is delicious for any Thanksgiving meal. INGREDIENTS 4 to 5 cups sourdough or multi-grain 1 tsp. dried sage bread, cut in ½- to 1-inch cubes and 1 tsp. dried rosemary toasted 1 tsp. dried thyme 2 Tbsp. olive oil 1 ½ cups broth 2 garlic cloves, peeled and minced ½ cup dried cranberries 2 cups onion, diced ⅓ cup pecans or walnuts, chopped ½ cup carrots, diced ½ tsp. ¾ cup celery, diced ¼ tsp. ground black pepper 1 cup button mushrooms, sliced

PREPARATION 1. Preheat oven to 375°F. 2. Heat 2 tablespoons olive oil in a large iron skillet over medium-high heat and sauté the garlic, onion, carrots, and celery for 5 minutes. Add the mushrooms and dried herbs and continue to cook for a few more minutes until mushrooms are tender. Stir in the vegetable broth, cranberries, pecans or walnuts, salt, pepper, and toasted bread cubes. Cover with aluminum foil and bake for about 30 minutes, then uncover and bake another 5-10 minutes. Let the stung sit for 15 minutes before serving. Cranberry Sauce Makes 6 - 8 servings Cranberry sauce is a holiday staple for many. Tangy and sweet, this is the perfect "make ahead dish," as its flavor improves when allowed to sit (in the refrigerator) overnight. INGREDIENTS 1 - 12 oz. bag of fresh cranberries 1 cup water or orange juice 2 tsp. orange zest PREPARATION 1 cup 1. In a small saucepan over low heat, combine sugar and water until sugar dissolves. 2. Add cranberries and cook until they burst, about 10 minutes. Stir in orange zest. 3. Remove saucepan from heat and let cool completely, then transfer to a resealable container and refrigerate for several hours before serving.
