    LINGUINE AND CLAMS GEOFFREY ZAKARIAN SERVES 4 TO 6 1 pound dried linguine 1. Bring a large saucepan of water to boil. Add enough salt to taste. 2 tablespoons extra-virgin olive oil 2. Add linguine, and stir after 1 to 2 minutes to ensure the pasta does not stick. 1 tablespoon chopped garlic 1 teaspoon crushed red pepper flakes 3. In a large sauté pan over medium-high heat, sauté 2 tablespoons olive oil and 8 ounces manila clams garlic until golden brown. Add the red pepper flakes. cup white wine 4. Add the clams, and deglaze the pan with wine. Place a lid over the sauté pan to cup clam stock help the clams open. Once the clams are open, add clam stock and reduce the cup parsley, chopped sauce for 3 to 4 minutes. Salt 5. When the pasta is almost finished, add the pasta to the sauce. Add cup of the pasta water to ensure the pasta finishes cooking and to achieve a creamy sauce. 6. Add the chopped parsley. The sauce should be tight to the noodle. Taste for seasoning, and serve in bowls. WHITE NEGRONI GEOFFREY ZAKARIAN SERVES 2 1 ounce white rum Place rum, lemon juice, suze, Cocci Americano and simple syrup in a shaker. 1 ounce freshly squeezed lemon juice Shake well. Serve garnished with lemon twist. 1 tablespoon suze 1 tablespoon Cocci Americano 1 tablespoon plus 1 teaspoon simple syrup Lemon twists, for garnish BEURRE BLANC LUDO LEFEBVRE MAKES 1½ CUPS cup dry white wine 1. In a medium saucepan, bring the wine and vinegar to a boil.
