(Address: Isola delle Rose – Venice, inside the JW Marriott Resort & Spa) Guests will be received in the original structure of a building dated back to 1923. The name “Dopolavoro”, which means ‘after work’ in Italian, says it all. After a long trip or at the end of a day exploring the labyrinth of Venice’s treasures it is time to take a rest amid the flavours of the cooking of Chef Giancarlo Perbellini, from Verona (Chef Rôtisseur of Chaîne des Rôtisseurs). Today it is the realm of one of the most acclaimed chefs in Italy, ‘an artisan cook’ as he likes to describe himself, who combines a mastery of the tradition with virtuosity and measure to renew the country’s great cuisine. Federico is faithful to the flavors of the Perbellini kitchen, although he proposes a new kind of menu, that has been adapted to the new lagoon context, where priority must be given to the local ingredients; vegetables are produced in the orchards of this fertile island and cured personally by the restaurant's kitchen staff. The goal is to contextualize the kitchen as much as possible with the reinterpretation of traditional Venetian recipes. The Dopolavoro Dining Room has been awarded its first Michelin star by Michelin Guide 2016 in December 2015, after only 6 months from official opening. A great success for Chef Giancarlo Perbellini and Federico Belluco, who coordinates the brigade. In particular, in the Michelin Guide 2016 two stars have been assigned to "Casa Perbellini" - Chef Perbellini's own restaurant in Verona opened in 2014 - and the first star to the Dopolavoro. RATES: Dinner “degustazione” (1 Michelin Star, 05 courses including wine) = € 160,00 p.p. Transfers by Private boat to DOPOLAVORO and back = € 36,00 p.p. 3 “PRE-CRUISE – VENICE” PROGRAM (JULY 12/15, 2017) THURSDAY, 13 JULY 2017 TOUR OF THE LAGOON ISLANDS BY GT BOAT+ lunch at Locanda Cipriani The city of Venice itself is a kind of archipelago, made up of lots of tiny islets divided by canals, although it's a lot simpler to think of the city as one island. Nowadays Venice is obviously pre-eminent among the lagoon settlements and mudbanks. This wasn't always the case, however, and a couple of the quieter, nearly abandoned islands in the northern lagoon were once important towns themselves. Exploring the shallow miles of lagoon which stretch around Venice, dotted with islands, is an instructive as well as enjoyable experience. Both the history of these islands and the nature of the lagoon come to life as your boat chugs away from the distracting palaces and belltowers of Venice. Murano, Burano and Torcello are the traditional tourist destinations among the islands. They are all very different in character and worth visiting. The Venetian lagoon's smaller islands often had more specific functions, from gunpowder stores to lunatic asylums. Guests will visit, together with our guides, the following islands: Murano, Burano and Torcello. In Murano you will visit a historic and prestigious glassworks in Murano for a private visit. Participants will attend a beautiful demonstration of the technique of glass blowing art, according to old traditions, made by a genuine master glassmaker. During the walking tour in Burano you will discover the secret corners of the island and its small colourful streets. As you escape the crowds you will see how the people from Burano live, where they shop, hear about the islands fishing industry and why it is still important even today. Finally, you will see a live demonstration of how the lace is made and hear about the past and present and future of the lace making. Guests will visit the Torcello Cathedral, that was enlarged in 1008 and dedicated to Mary, Mother of God, epithet from which the name of Santa Maria Assunta is derived. Mosaics are not the only valuable Byzantine art that remain ... The whole structure of Torcello’s cathedral in Venice reveals an unbreakable bond with the Eastern Church, from the presence of a valuable iconostasis, which divides and separates the sanctuary from the rest of the church. 4 “PRE-CRUISE – VENICE” PROGRAM (JULY 12/15, 2017) STOP FOR LUNCH AT LOCANDA CIPRIANI IN TORCELLO An oasis of peace and great dishes, chosen by many celebrities, in the splendid setting of Venice and the island of Torcello. In 1934, Giuseppe Cipriani took over a small and modest resale of wine and olive oil, and turned it into a “inn”, with few but delightful guest rooms and a pleasant room for the restaurant, surrounded by a garden of flowers and vegetables, overlooking the unparalleled views of the churches of Torcello. In the early ’80s, Giuseppe’s daughter, Carla took over him, and was joined a few years later by his son, Bonifacio Brass, who is currently the director and sole owner of the Inn. The Inn was consecrated as a literary myth for having hosted Ernest Hemingway in the fall of 1948. Other distinguished names were already visiting their beloved Locanda long before Hemingway (Princess Maria Josè of Savoia, Queen Elizabeth II and the Duke of Edinburgh, Queen Elizabeth the Queen Mother of England, Arturo Toscanini, Maria Marc Chagall, Max Ernst,..). Created with the intent of being a countryside “maison d’hôte”, Locanda Cipriani, in contrast with the triumphant surroundings of the churches and of her garden blooms, welcomes guests in simple rooms.

The journey to Marco Polo began in 1964, the year restaurateur Joseph Chirico immigrated to New York from San Martino, RC, Italy. His first restaurant venture, a luncheonette serving Italian sandwiches, opened in 1968 at 349 Court Street. Sardinia "Food is a gift from God, but cooks are surely the work of the devil", as Oscar Wilde put it with his customary sharp wit. He could well have been thinking about Italian food and wine. It is certainly true that Italy - with its varied landscape of alternating plains, hills, coasts and mountains, rivers, woods, countryside and rich seas, and its mild yet sometimes harsh climate - boasts a wealth of invaluable natural treasures. But it is equally true that what gives life to a culinary tradition, and what creates the history of food and wine, is the work, passion and imagination of man. If Italy is home to such an extraordinary variety of flavors, tastes and aromas, it is because Italians have known how to make the best of nature's gifts and to transform them by taking inspiration from nature itself. This is as it should be, for the art of gastronomy is mimetic, and imitates nature. The process relies on a shifting between different systems, and cookery is its ideal medium. We could produce an endless list of products which might seem unimportant, but which are actually vital elements of Italian cuisine. All over Italy, from the Alps to the Mediterranean, we find the products of a thousand years of tradition, and specialties which exist only here.

6 ★ FINANCIAL TIMES MARCH 9/MARCH 10 2013 Travel Shortcuts Paris The Hôtel de Crillon, the grand Parisian hotel that opened in 1909 and occupies a palace commissioned by Louis XV in 1758, is to close at the end of the month for a twoyear refurbishment. As a result, some 3,500 lots of furniture, memorabilia and fine wines are to be sold at auction. Items being offered include art deco bar stools (guide price €200€300), the mahogany and silver dessert trolley (€3,000 €4,000), as well as numerous items of Louis XVstyle furniture, wines from the remarkable cellar that supplied its Michelinstarred restaurant, porcelain, silverware, light fittings and tapestries. The sale, being handled by auctioneers Artcurial, will be held at the hotel over five days from April 18 to 22 (viewing from April 12 to 16). www.artcurial.com Kashmir At the start of the 20th century, the houseboats on Srinagar’s Dal Lake offered the height of luxury to visitors seeking an escape from the plains’ summer heat. But the region’s political struggles led to dwindling tourist numbers, and an air of faded grandeur settled over many of the boats. Now though, with visitor numbers rising once more, a luxurious new houseboat is to open. MaryAnn DenisonPender, of the independent Indian hotel directory Mahout, says it “promises to raise the level of comfort and design on the lakes to an allnew high”. Marseille’s year in the sun Sukoon, due to open on March 20, is a traditional vessel built in the 1970s but entirely refurbished, with five spacious cabins, each with bathroom, wifi and purified water on tap.

The Venetian Cooking Countess Published on iItaly.org (http://www.iitaly.org) The Venetian Cooking Countess A. L. (March 17, 2016) Digging up the secrets of Venetian cooking with Enrica Rocca. A look at the well-known and less well- known aspects of a very special region. The Financial Times dubbed her the “Cooking Countess.” And indeed, over the years, Enrica Rocca [2], a quintessentially Venetian and incredibly vivacious woman, has become an important authority on her native land’s cuisine. You understand why as soon as you meet her. Sure, she’s very passionate, but she’s also got a good nose for everything involved in running a family business. Not only will Enrica tell you her side of Veneto, she’ll serve you food in a unique ambience, teach you how to cook, and, if you’d like, put you up in one of her accommodations in the Venetian countryside. She restored her villa for that express purpose. Villa il Granaio is located in Mira, on the banks of the Brenta River, only about eight miles from Venice, in an area traditionally frequented by the Venetian elite. It’s a special place where you can also enroll in her world- renowned cooking school or simply relax. Of course, you might come across the Cooking Countess elsewhere in the world. For years she has taken her cooking around the globe, from Venice to London to Cape Town to the Big Apple. We recently got the chance to participate in one of her lessons being held at Eataly New York.

Italian-American Food. Is it That Bad? Published on iItaly.org (http://www.iitaly.org) Italian-American Food. Is it That Bad? Marina Melchionda (September 20, 2009) “I think that what we have to respect, is that Italian-American food is a separate reality from Italian food.(…) Everyone loves Chicken Parmigiana”. Well-known Italian cuisine expert Fred Plotkin shares his love for both culinary traditions Chicken Parmigiana, Fettuccine Alfredo, Chicken Vesuvio, Spaghetti with Meatballs….Most Americans believe that these are some of the most typical Italian dishes, and they actually love them. But, are they really Italian? Experts generally agree that Italian-American cuisine is damaging the image of the real Italian culinary tradition in the United States. After all, who in Italy has ever eaten Veal Parmigiana or Pizza with pineapple? If you aked an Italian, most likely he would think you are teasing him. We would tell him that, indeed, this is what is considered to be “typically Italian” in America. Page 1 of 4 Italian-American Food. Is it That Bad? Published on iItaly.org (http://www.iitaly.org) All of us know that this “deviation” was (generally speaking) first born from the need to substitute the ingredients required by the original recipe with those available locally, back when Italians first emigrated to the United States. If at first the “game” was played by Sicilian, Neapolitan, Calabrese massaie who maintained a strong sentimental and cultural connection with their hometowns (and thus knew pretty much what they were doing), it was then left to others, mainly people who had never been to Italy in their lives (including second and third generation Italians) and adapted Italian recipes to the “American taste”.
