(Address: Isola delle Rose – Venice, inside the JW Marriott Resort & Spa) Guests will be received in the original structure of a building dated back to 1923. The name “Dopolavoro”, which means ‘after work’ in Italian, says it all. After a long trip or at the end of a day exploring the labyrinth of Venice’s treasures it is time to take a rest amid the flavours of the cooking of Chef Giancarlo Perbellini, from Verona (Chef Rôtisseur of Chaîne des Rôtisseurs). Today it is the realm of one of the most acclaimed chefs in Italy, ‘an artisan cook’ as he likes to describe himself, who combines a mastery of the tradition with virtuosity and measure to renew the country’s great cuisine. Federico is faithful to the flavors of the Perbellini kitchen, although he proposes a new kind of menu, that has been adapted to the new lagoon context, where priority must be given to the local ingredients; vegetables are produced in the orchards of this fertile island and cured personally by the restaurant's kitchen staff. The goal is to contextualize the kitchen as much as possible with the reinterpretation of traditional Venetian recipes. The Dopolavoro Dining Room has been awarded its first Michelin star by Michelin Guide 2016 in December 2015, after only 6 months from official opening. A great success for Chef Giancarlo Perbellini and Federico Belluco, who coordinates the brigade. In particular, in the Michelin Guide 2016 two stars have been assigned to "Casa Perbellini" - Chef Perbellini's own restaurant in Verona opened in 2014 - and the first star to the Dopolavoro. Nowadays Venice is obviously pre-eminent among the lagoon settlements and mudbanks. This wasn't always the case, however, and a couple of the quieter, nearly abandoned islands in the northern lagoon were once important towns themselves. Exploring the shallow miles of lagoon which stretch around Venice, dotted with islands, is an instructive as well as enjoyable experience. Both the history of these islands and the nature of the lagoon come to life as your boat chugs away from the distracting palaces and belltowers of Venice. Murano, Burano and Torcello are the traditional tourist destinations among the islands. They are all very different in character and worth visiting. The Venetian lagoon's smaller islands often had more specific functions, from gunpowder stores to lunatic asylums. Guests will visit, together with our guides, the following islands: Murano, Burano and Torcello. In Murano you will visit a historic and prestigious glassworks in Murano for a private visit. Participants will attend a beautiful demonstration of the technique of glass blowing art, according to old traditions, made by a genuine master glassmaker. During the walking tour in Burano you will discover the secret corners of the island and its small colourful streets. As you escape the crowds you will see how the people from Burano live, where they shop, hear about the islands fishing industry and why it is still important even today. Finally, you will see a live demonstration of how the lace is made and hear about the past and present and future of the lace making. Guests will visit the Torcello Cathedral, that was enlarged in 1008 and dedicated to Mary, Mother of God, epithet from which the name of Santa Maria Assunta is derived. Mosaics are not the only valuable Byzantine art that remain ... The whole structure of Torcello’s cathedral in Venice reveals an unbreakable bond with the Eastern Church, from the presence of a valuable iconostasis, which divides and separates the sanctuary from the rest of the church. 4 “PRE-CRUISE – VENICE” PROGRAM (JULY 12/15, 2017) STOP FOR LUNCH AT LOCANDA CIPRIANI IN TORCELLO An oasis of peace and great dishes, chosen by many celebrities, in the splendid setting of Venice and the island of Torcello. In 1934, Giuseppe Cipriani took over a small and modest resale of wine and olive oil, and turned it into a “inn”, with few but delightful guest rooms and a pleasant room for the restaurant, surrounded by a garden of flowers and vegetables, overlooking the unparalleled views of the churches of Torcello. In the early ’80s, Giuseppe’s daughter, Carla took over him, and was joined a few years later by his son, Bonifacio Brass, who is currently the director and sole owner of the Inn. The Inn was consecrated as a literary myth for having hosted Ernest Hemingway in the fall of 1948. Other distinguished names were already visiting their beloved Locanda long before Hemingway (Princess Maria Josè of Savoia, Queen Elizabeth II and the Duke of Edinburgh, Queen Elizabeth the Queen Mother of England, Arturo Toscanini, Maria Marc Chagall, Max Ernst,..). Created with the intent of being a countryside “maison d’hôte”, Locanda Cipriani, in contrast with the triumphant surroundings of the churches and of her garden blooms, welcomes guests in simple rooms.
