The journey to Marco Polo began in 1964, the year restaurateur Joseph Chirico immigrated to New York from San Martino, RC, Italy. His first restaurant venture, a luncheonette serving Italian sandwiches, opened in 1968 at 349 Court Street. He was also the owner and operator of the legendary Gage and Tollner on Fulton Street, in downtown Brooklyn. Then in 1983, he opened Marco Polo Ristorante, named after the Venetian explorer. Chirico broke new ground by introducing fine Italian dining to Brooklyn and Marco Polo quickly became the power center for Brooklyn politicians and judges. Joseph was one of the pioneers in Italian cuisine, offering previously undiscovered ingredients such as bufala mozzarella imported from Italy, porcini mushrooms, and truffles. In 2009, Joseph expanded the family business with his son Marco to include Enoteca on Court. Marco had an early start: He grew up in the restaurant at 345 Court Street and was bussing tables there by the time he was 12 years old. Marco could have followed any path, but he was passionate about wanting to follow in his father’s footsteps, so he decided to attend the prestigious Johnson & Wales University in Providence, Rhode Island.

Sardinia "Food is a gift from God, but cooks are surely the work of the devil", as Oscar Wilde put it with his customary sharp wit. He could well have been thinking about Italian food and wine. It is certainly true that Italy - with its varied landscape of alternating plains, hills, coasts and mountains, rivers, woods, countryside and rich seas, and its mild yet sometimes harsh climate - boasts a wealth of invaluable natural treasures. But it is equally true that what gives life to a culinary tradition, and what creates the history of food and wine, is the work, passion and imagination of man. If Italy is home to such an extraordinary variety of flavors, tastes and aromas, it is because Italians have known how to make the best of nature's gifts and to transform them by taking inspiration from nature itself. This is as it should be, for the art of gastronomy is mimetic, and imitates nature. The process relies on a shifting between different systems, and cookery is its ideal medium. We could produce an endless list of products which might seem unimportant, but which are actually vital elements of Italian cuisine. All over Italy, from the Alps to the Mediterranean, we find the products of a thousand years of tradition, and specialties which exist only here.

The Venetian Cooking Countess Published on iItaly.org (http://www.iitaly.org) The Venetian Cooking Countess A. L. (March 17, 2016) Digging up the secrets of Venetian cooking with Enrica Rocca. A look at the well-known and less well- known aspects of a very special region. The Financial Times dubbed her the “Cooking Countess.” And indeed, over the years, Enrica Rocca [2], a quintessentially Venetian and incredibly vivacious woman, has become an important authority on her native land’s cuisine. You understand why as soon as you meet her. Sure, she’s very passionate, but she’s also got a good nose for everything involved in running a family business. Not only will Enrica tell you her side of Veneto, she’ll serve you food in a unique ambience, teach you how to cook, and, if you’d like, put you up in one of her accommodations in the Venetian countryside. She restored her villa for that express purpose. Villa il Granaio is located in Mira, on the banks of the Brenta River, only about eight miles from Venice, in an area traditionally frequented by the Venetian elite. It’s a special place where you can also enroll in her world- renowned cooking school or simply relax. Of course, you might come across the Cooking Countess elsewhere in the world. For years she has taken her cooking around the globe, from Venice to London to Cape Town to the Big Apple. We recently got the chance to participate in one of her lessons being held at Eataly New York.

Italian-American Food. Is it That Bad? Published on iItaly.org (http://www.iitaly.org) Italian-American Food. Is it That Bad? Marina Melchionda (September 20, 2009) “I think that what we have to respect, is that Italian-American food is a separate reality from Italian food.(…) Everyone loves Chicken Parmigiana”. Well-known Italian cuisine expert Fred Plotkin shares his love for both culinary traditions Chicken Parmigiana, Fettuccine Alfredo, Chicken Vesuvio, Spaghetti with Meatballs….Most Americans believe that these are some of the most typical Italian dishes, and they actually love them. But, are they really Italian? Experts generally agree that Italian-American cuisine is damaging the image of the real Italian culinary tradition in the United States. After all, who in Italy has ever eaten Veal Parmigiana or Pizza with pineapple? If you aked an Italian, most likely he would think you are teasing him. We would tell him that, indeed, this is what is considered to be “typically Italian” in America. Page 1 of 4 Italian-American Food. Is it That Bad? Published on iItaly.org (http://www.iitaly.org) All of us know that this “deviation” was (generally speaking) first born from the need to substitute the ingredients required by the original recipe with those available locally, back when Italians first emigrated to the United States. If at first the “game” was played by Sicilian, Neapolitan, Calabrese massaie who maintained a strong sentimental and cultural connection with their hometowns (and thus knew pretty much what they were doing), it was then left to others, mainly people who had never been to Italy in their lives (including second and third generation Italians) and adapted Italian recipes to the “American taste”.

  • Costa Cruises Presents the New Vegetarian and Vegan Menus That Put Taste and Italy’S Finest on Centre Stage
Costa Cruises Presents the New Vegetarian and Vegan Menus That Put Taste and Italy’s Finest on Centre Stage October 2, 2015 Genoa, October 2, 2015 - Costa Cruises presents the new vegan and vegetarian menus, available for all guests cruising on board the Italian company’s ships. No matter whether they are chosen as a real lifestyle, to try new tastes or just to feel lighter, vegetarian and vegan diets are becoming more and more popular. That’s why Costa’s Corporate Chefs have created menus specifically for those who prefer a diet based mainly on foods derived from plants, and that for Vegans also excludes dairy products and eggs. Taking full advantage of their experience and creativity Costa Chefs have developed new combinations and innovative techniques that put taste in the spotlight: in fact, thanks to the use of ingredients from Vegan and vegetarian cuisine, our culinary experts have created dishes that are a real delicacy for the palate. But, above all, in line with the Italian company’s “Italy’s finest” onboard proposals, Costa Cruises has sought to give an Italian touch to these menus, starting with the vegetarian dishes. “In the Mediterranean diet vegetables are of fundamental importance”, points out Antonio Brizzi, Costa Corporate Travelling Chef, “and there are numerous vegetarian dishes in Italian cuisine that have always been part of our culinary tradition. The new regional menus just recently introduced on board Costa ships include many dishes that fully satisfy certain needs of many of our guests. For example, in the Venetian cuisine, there is a soup called “risi e bisi” (rice and peas), as well as Treviso radicchio strudel with Monte Veronese DOP cheese.
