PUB NUMBER (if applicable) COMMON QUESTIONS ABOUT EGGS By Jacquie Jacob and Tony Pescatore Question: Since eggs contain cholesterol, should I avoid eating eggs? No. Eggs are an excellent source of easy to digest, high quality protein that can play an important role in the diet of most Americans. It is true that high blood cholesterol levels have been shown to aggravate heart problems, but research has also shown that the presence or absence of eggs in the diet of most Americans is not likely to in- crease blood cholesterol levels. Only a small minority of people cannot regulate blood cholesterol levels. These people need to avoid high-cholesterol foods. One large egg contains about 213 milligrams (mg) of cholesterol—all of which is found in the yolk. The American Medical Association (AMA) recommends that, as long as you are healthy, you should limit your dietary cholesterol intake to less than 300 mg a day. If you have cardiovascular disease, diabetes or high LDL (or "bad") cholesterol, you should limit your dietary cholesterol intake to less than 200 mg a day. Therefore, if you eat an egg on a given day, it's important to limit or avoid other sources of cholesterol for the rest of that day. If you like eggs but do not want the cholesterol it contains, use egg whites which do not contain cholesterol. You can also use cholesterol-free egg substitutes, which are made with egg whites. If you want to reduce cholesterol in a recipe that calls for eggs, use two egg whites or 1/4 cup cholesterol-free egg substitute in place of one whole egg. -

Your kitchen could be a high risk environment. Bacteria can thrive in food that is improperly stored or handled. Reduce the risks by following these tips from Canada’s food safety experts. Play it “food safe” in your kitchen! Get off to a CLEAN start! • Handwashing is one of the best ways to prevent the spread of foodborne illness. Do you wash your hands for at least 20 seconds with soap and warm water before and after handling food? Wash again when you switch from one food to another. • Are your countertops and utensils clean and sanitized? Sanitizing reduces bacteria and can prevent foodborne illness. It’s important to thoroughly clean everything that comes in contact with your hands or your food! Don’t forget about kitchen cloths . faucet handles . sink drains . garbage disposals . can opener blades . refrigerator handles . small appliances . utensils, and so on. BLEACH SANITIZER • Combine 2 mL (1/2 tsp) of liquid chlorine for every 1 litre of H20 to make a disinfection solution of 100 mg/lor 100ppm. • After cleaning, spray sanitizer on the surface/utensil and let stand briefly. • Rinse with lots of clean water, and air dry (or use clean towels). A retail food facility permit holder shall inform consumers of the significantly increased risk of consuming such foods. CalCode requires the permit holder to provide a “Consumer Advisory” using a DISCLOSURE and REMINDER. 1. A DISCLOSURE is a clearly written statement that includes either: a. A description of the animal-derived foods, such as “oysters on the half shell (raw oysters)”, “raw-egg Caesar salad” and “hamburger (can be cooked to order).” or b. Identification of the animal derived foods marked by an asterisk (*) directing to a footnote that states that the items are served raw or undercooked, or contain or may contain raw or undercooked ingredients. 2. A REMINDER is a written statement that identifies the animal-derived foods by an asterisk that marks a footnote that includes either of the following disclosure statements: a. Written information regarding the safety of these food items is available upon request. b. Readers have long reveled in the amusing accounts of Genji’s romantic liaisons and in the dazzling descriptions of the courtly splendor of the Heian period (794–1185). The tale has been equally appreciated, however, as social and political commentary, aesthetic theory, Buddhist philosophy, a behavioral guide, and a source of insight into human nature. Offering much more than romance, The Tale of Genji proved meaningful not only for men and women of the aristocracy but also for Buddhist adherents and institutions, military leaders and their families, and merchants and townspeople. The galleries that follow present the full spectrum of Genji-related works of art created for diverse patrons by the most accomplished Japanese artists of the past millennium. BUTTERFLY TIP SHEET STARTING THE PROGRAM •It will take approximately 4 weeks to transform from larvae to butterfly. •Each larva is housed in its own little container. •Keep the lids on at all times (until chrysalis is formed). •Make sure that the containers are standing upright at all times. (DO NOT TURN UPSIDE DOWN) •Keep the containers out of the sunlight, and also out of the path of air vents. •The suggested room temperature is 68⁰ to 75⁰. •Each container has enough food and air for the larvae, until it forms its chrysalis. FORMING CHRYSALIDES •The larvae will grow to be about 1 inch long and look like a fuzzy black caterpillar. •In 7-10 days depending on the temperature, the larvae should form a chrysalis. (Faster in warm weather, slower in cool) •The larvae will attach itself to the lid of the container by its tail and hang upside down for about 24 hours. During this time the larvae will start to spin its chrysalis. AFTER CHRYSALIS FORMATION •Once the chrysalis has formed, it should take another 7-10 days for the Painted Lady Butterfly to emerge. (Again this depends on the weather) •After the chrysalides have been hanging in the container for 2-3 days, the teacher will GENTLY remove the lid with the chrysalis attached, and then tape it on one of the lower branches, or to the base of the branch. You can also attach the lid to the cage by using a binder clip or Velcro, attaching it on the outside of the cage. •Please do not cut the screen of the cage. -
