The restaurant was founded in 1979 as part of a project to bring Japanese culture to San Francisco by Kintetsu Enterprises Company of Osaka, Japan. It is currently owned by former employee Isidore Tam. Over the 40 years it has been in business, Mums has remained committed to bridging Japanese and American culture through its dining space and cuisine, becoming a vital gathering place for the surrounding Japantown community. Kintetsu Enterprises Company of America was founded in San Francisco in 1961 by Kintetsu Group Holdings of Osaka, Japan. The company sought to bridge Japanese and American cultures. They began in San Francisco, which had been Osaka’s Sister City since 1957. At the time, Japantown had recently undergone redevelopment so Kintetsu brought new life to Japantown by encouraging the proliferation of Japanese businesses in the area. They opened the Kyoto Inn in 1975 and, realizing that guests needed a place to enjoy Japanese food, opened what was then called Café Mums just four years later.

40 TAIWANESE FOODS WE CAN'T LIVE WITHOUT DELL TW TA TEAM KINO TANG 1. BRAISED PORK RICE (滷肉飯) A Taiwanese saying goes, "Where there is a wisp of smoke from the kitchen chimney, there will be lurou fan" (braised pork with rice). The popularity of this humble dish cannot be overstated. "Lurou fan" is synonymous with Taiwan. The Taipei city government launched a "braised pork rice is ours" campaign last year after Michelin’s Green Guide Taiwan claimed that the dish is from Shandong Province in mainland China. A good bowl of lurou fan has finely chopped, not quite minced, pork belly, slow-cooked in aromatic soy sauce with five spices. There should be an ample amount of fattiness, in which lies the magic. The meat is spooned over hot rice. A little sweet, a little salty, the braised pork rice is comfort food perfected. Beef noodle soup is a dish that inspires competitiveness and innovation in chefs. Everyone wants to claim the title of beef noodle king. From visiting Niu Ba Ba for one of the most expensive bowls of beef noodle soup in the world (TW$10,000, or US$334) to a serendipitous duck into the first makeshift noodle shack that you spot, it's almost impossible to have a bad beef noodle experience in Taiwan. Lin Dong Fang's beef shanks with al dente noodles in a herbal soup are a perennial favorite.

Graduate Institute of Agricultural Chemistry, National Taiwan University, 1, Sec. 4, Roosevelt Rd., Taipei City 106, Taiwan, R.O.C. (Received: May 6, 2004; Accepted: December 15, 2004) ABSTRACT This work was conducted to investigate the quality of lipids in various commercial egg products. Lipids of egg yolk were extracted from fresh egg, Pidan (preserved egg), tea egg, simmered egg, iron egg (deeply simmered and dried egg) and salted egg by Folch reagent, a mixture of chloroform and methanol at 2:1 volume ratio. The extracts and commercial yolk oil were analyzed to determine lipid profile, fatty acid composition, thiobarbituric acid value (TBA value), acid value and peroxide value. Results showed that the quality of yolk lipids was quite different. The lipid content ranged from 27% for Pidan to 46% for iron egg. Phospholipid content was highest in fresh egg (about 351 mg/g oil), while lowest in Pidan (about 175 mg/g oil). Cholesterol content of fresh egg yolk oil was the highest, about 38 mg/g oil, while the Pidan yolk oil contained the least cholesterol (28.51 mg/g oil).

Eggs strongly resist bacterial infection due to an arsenal of defensive systems, many of which reside in the egg white. However, despite improved control of egg production and distribution, eggs remain a vehicle for foodborne transmission of Salmonella enterica serovar Enteritidis, which continues to represent a major public health challenge. It is generally accepted that iron deficiency, Citation: Legros, J.; Jan, S.; mediated by the iron-chelating properties of the egg-white protein ovotransferrin, has a key role Bonnassie, S.; Gautier, M.; in inhibiting infection of eggs by Salmonella. Ovotransferrin has an additional antibacterial activity Croguennec, T.; Pezennec, S.; Cochet, beyond iron-chelation, which appears to depend on direct interaction with the bacterial cell surface, M.-F.; Nau, F.; Andrews, S.C.; Baron, resulting in membrane perturbation.
